GRILLED POTATO BUNDLES

6 russet potatoes, scrubbed clean and diced (not peeled)
1/2 yellow onion, diced
1 1/2 sticks (12 tablespoons) butter
1/2 cup heavy cream
Paprika, to taste
Kosher salt and freshly ground black pepper
2 tablespoons minced fresh parsley

Steps:

  • Preheat a grill to medium-high heat.
  • Pile the potatoes and onions evenly on 6 squares of foil. Add 2 tablespoons butter to each and splash on some cream. Sprinkle on some paprika, salt and black pepper, then finish with a sprinkle of minced parsley on top. Fold the foil pieces to wrap into bundles.
  • Place the potato bundles on the hottest spot on the grill for 30 minutes. Serve the bundles right on the dinner plates.

Great side dish for the grill. The mustard taste is very understated. My dh and I don't like mustard, but we love this recipe. In response to Engrossed's review, she is right that you don't need all the oil--I always have oil left in the bowl after I transfer the potato mixture to the foil, and I've just always tossed it.

2/3 cup olive oil
1 tablespoon Dijon mustard
2 tablespoons chopped fresh thyme (or 1 T dried)
1 teaspoon salt
1 teaspoon ground black pepper
2 lbs white potatoes, peeled, sliced 1/4 inch thick (about 4 large)
2 large red onions, peeled and sliced 1/2 inch thick
nonstick cooking spray

Steps:

  • Whisk together oil, mustard, thyme, salt, and pepper in a large bowl.
  • Add potatoes and onions to mustard oil. Toss to coat.
  • Set six 18x9 inch sheets of heavy duty aluminum foil on work surface. Spray foil with nonstick cooking spray. Divide potatoes and onions between the sheets, placing in the center of the left half of each sheet. Fold right half of foil over veggies and fold edges of packages together to seal well.
  • Grill about 25 minutes over medium high heat.
  • Open packages very carefully to avoid being burned by the steam.

1 large onion, peeled, halved and thinly sliced
2 tablespoons butter
1 tablespoon olive oil
4 medium potatoes, baked (or boiled)
salt and pepper

Steps:

  • Heat the oil and butter in a skillet.
  • Add the onions and cook until soft and lightly browned.
  • Remove the onions from the pan with a slotted spoon.
  • Reserve.
  • Slice the potatoes into 1/4 inch slices. Add to the hot pan and brown on both sides. Return the onion to the pan, toss and season.
  • Serve warm.

3 1/3 ounces instant mashed potatoes, sour cream and cheddar
1 3/4 cups hot water
3 ounces cream cheese, softened
3/4 cup cooked ham, finely chopped
2 medium green onions, chopped
1/4 cup bacon bits
1/4 cup shredded cheddar cheese
8 ounces Pillsbury Refrigerated Crescent Dinner Rolls
1 tablespoon butter, melted
1 teaspoon red pepper sauce

Steps:

  • 1. In large bowl, mix the mashed potatoes and hot water. Add cream cheese; beat until blended. Stir in the ham, onions, bacon and Cheddar cheese.
  • 2. Separate crescent dough into 8 triangles. Slightly stretch corners of short side of each triangle to make longer. Place on ungreased cookie sheet. Spoon 1/3 cup potato mixture on center of each triangle. Bring corners to center over filling, overlapping ends; press gently to seal.
  • 3. Mix butter and pepper sauce; brush over tops. Bake at 375°F 10 to 12 minutes or until golden brown.

4 medium potatoes, julienned
3 carrots, julienned
1/3 cup chopped red onion
2 tablespoons butter
1/2 teaspoon salt, optional
1/8 teaspoon pepper
1/2 cup shredded Parmesan or cheddar cheese

Steps:

  • Divide the potatoes, carrots and onion equally among four pieces of heavy-duty aluminum foil (about 18 in. x 12 in.). Top with butter; sprinkle with salt if desired and pepper. Bring opposite short ends of foil together over vegetables and fold down several times.
