6 large portobello mushrooms (4 to 4-1/2 inches), stems removed
1 tablespoon olive oil
1 pound bulk Italian sausage
1 can (15 ounces) pizza sauce
1 medium green pepper, chopped
1 medium onion, chopped
1/2 cup chopped fresh mushrooms
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 cup shredded part-skim mozzarella cheese
Thinly sliced fresh basil leaves, optional

Steps:

  • Place mushrooms, stem side down, on a greased baking sheet; drizzle with oil. Bake at 350° for 20-25 minutes or until tender, turning once., Meanwhile, cook sausage over medium heat until no longer pink; drain. Stir in the pizza sauce, pepper, onion, mushrooms, Parmesan cheese and garlic. Divide among mushrooms; sprinkle with mozzarella cheese. Broil 2-3 in. from the heat for 1-2 minutes or until cheese is melted. Sprinkle with basil if desired.

2 cloves garlic, minced
¼ cup olive oil
6 portobello mushrooms
1 ½ cups diced tomato
4 ounces blue cheese, crumbled

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a small bowl stir together the minced garlic and olive oil. Clean portobello mushrooms by brushing them with a paper towel. Remove the stem and discard. Brush the mushroom caps with the garlic and olive oil mixture. Place them on a baking sheet with gills facing upward Sprinkle 1/4 cup of diced tomatoes on each mushroom cap.
  • Bake for 13 minutes in the preheated oven. Remove from the oven and spread blue cheese on top of the tomatoes. Return the mushrooms to the oven and bake until the cheese is melted and bubbly. Allow the mushrooms to cool for a few minutes before serving.

6 cloves garlic
1/3 cup olive oil, divided
3 tomatoes, chopped
1/2 cup basil, chopped

Steps:

  • Mix 2 cloves of garlic (pressed), with 2 Tbs of olive oil in small bowl. Use this as a marinade for the portobello mushrooms and coat them using a pastry brush. Season with salt and pepper, then heat a large grilling pan and cook them for 6 minutes, so each side for 3 minutes.
  • While the portobellos cooking, mix the chopped tomatoes, remaining olive oil, garlic, basil in small bowl. Divide the portobello mushrooms on small plates top them with the tomato filling, enjoy.

¾ lb. Portobello mushrooms
1 clove garlic (minced)
2 Tbsp. olive oil
salt and pepper (to taste)
½ tsp. dried thyme
½ Tbsp. butter
1 Tbsp. Parmesan (grated)
3 Tbsp. mozzarella (shredded)

Steps:

  • Preheat oven to 400°F. Wipe ¾ lb. Portobello mushrooms clean and remove the stems. Finely mince 1 clove garlic.Lightly oil a baking sheet and place the mushrooms on top in a single layer, open side facing up.
  • In a small bowl, mix together 2 Tbsp. olive oil, garlic, ½ tsp. dried thyme, and a little salt and pepper to taste.
  • Drizzle over the inside of each mushroom evenly. Top each with a thin slice of butter from ½ a Tbsp. Bake the mushrooms for around 15 minutes until tender. While they are cooking, mix together the 1 Tbsp. grated Parmesan and 3 Tbsp. shredded Mozzarella.
  • After the 15 min, top the mushrooms with the cheese and return to the oven for around 5 minutes. Once the cheese is golden and bubbly, remove the mushrooms from the oven, serve, and enjoy!

5 portobello mushrooms ((see notes))
1 tbsp oil
1 small/medium onion (diced)
1 medium pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin
Salt, ground pepper, and chili powder (to taste)
2 cloves of garlic
1 cup canned chickpeas (drained and rinsed)
1/3 cup walnuts (finely chopped)
1 heaped tbsp tomato paste
1 tbsp tamari (or soy sauce)
1/2 tbsp balsamic vinegar
4 tbsp dairy-free milk
vegan cheese (to taste)
Fresh herbs (to garnish)

Steps:

  • You can watch the video in the post for visual instructions.Preheat the oven to 360 F (180 C) and line a baking sheet with parchment paper.
  • Remove the stems of the mushrooms and chop them into pieces. Set aside.
  • Add the chickpeas to a bowl and mash them with a fork.
  • Heat oil in a large skillet, add onion, pepper, and all spices. Stir to combine and cook for 3-4 minutes.
  • Also, stir in garlic, mashed chickpeas, and walnuts.
  • Next add the tomato paste, tamari, balsamic vinegar, and dairy-free milk. Stir to combine.
  • Finally, add the chopped mushroom stems and stir. Cook for a few more minutes, then set aside.
  • Place the portobello mushrooms on the lined baking sheet and fill each mushroom with the filling until there is no filling left.
  • Bake in the oven for about 10 minutes, then add vegan cheese of choice (I used my vegan cheese sauce) and bake for a further 10 minutes. Garnish with fresh herbs and enjoy!
