Steps:
- Cook pasta per package directions.
- Cook pork in heated pan, w/olive oil. Season. Cook until pork is about halfway done, still pink inside.
- Add in asparagus, cooking until pork is done.
- Stir together soup and water, add to pan.
- Cover and simmer on low until asparagus is tender.
- Add pasta, stir and serve.

PASTA WITH ASPARAGUS
Steps:
- Boil water for the pasta. Cook as you are preparing the garlic/asparagus sauce. In a skillet, cook garlic, red pepper flakes and hot pepper sauce in heated oil and butter for 2 to 3 minutes. Add asparagus, salt and pepper; saute until asparagus is crisp-tender, about 8 minutes. Add Parmesan cheese, mix well. Pour over hot pasta and toss to coat. Serve immediately.

Steps:
- To prepare the asparagus, cut off and discard the woody ends, then neatly cut the tips away from the stalks. Keep the tips and stalks separate. In a small saucepan bring the cream and garlic to the boil. Take off the heat, remove the garlic, then set the pan aside.
- Cook the stalks in boiling salted water for about 4-5 mins until tender, drain, then tip into the cream with the grated parmesan. Blitz with a hand blender until smooth.
- Cook the pasta according to pack instructions, then throw in the tips 2 mins before the end of cooking time. Gently reheat the cream, drain pasta, then tip into a bowl with the cream. Toss, divide into pasta bowls, top with parmesan shavings and serve.

- Heat oven to 180C/160C fan/gas 4. Put the meatballs on a tray lined with foil, season and cook for 20 mins until cooked through. Meanwhile, bring a pan of salted water to the boil, add the orzo and cook for 4 mins, then add the asparagus and simmer for 4 mins more. Drain, then tip back into the pan along with the meatballs and crème fraîche, mix and season well.

BOW TIE PASTA WITH SAUSAGE AND ASPARAGUS
I'm typically not a lover of asparagus mixed with pasta but in this dish, IT ROCKS! My family appreciates a drier pasta so if yours likes things a bit saucier you may want to double the EVOO/butter to get it to your consistency. I usually love broccoli mixed in a pasta like this but the asparagus is by far the better choice!

Steps:
- Heat pan with olive oil and butter. Once butter melts, add garlic and cook until fragrant. Add sausage, and cayenne pepper. Cook 2 minutes.
- Add bell pepper, asparagus and black pepper, and cook for 8-10 minutes or until asparagus is tender, but crispy.
- Sprinkle cheese over sausage mixture and mix well.
- Pour over hot farfalle pasta. Toss to coat. Add salt if needed.

- Clean the asparagus by snapping off the tough base of each spear, this is usually around the bottom third of the spear, where the stem starts to turn tender. Keep only the tender part. Chop into 1/4 inch (3/4 cm) size pieces (separate the heads from the stems).
- In a small to medium pot, cook the heads in boiling water for approximately 5 minutes, remove with a slotted spoon and set aside.
- Boil in the same water the cut up stems for 10-15 minutes or until tender. With a slotted spoon remove the stems, DO NOT THROW AWAY THE WATER, and place in a blender with a 1 cup of the boiled asparagus water. Blend until smooth.
- In a large frying pan add the olive oil, butter, garlic, shallot and cut up sausage cook for approximately 10 minutes until sausage is no longer pink, then add the tomato puree, pepper or hot pepper flakes, blended asparagus and asparagus heads,(add salt if desired) cook on low to medium for approximately 10-15 minutes, stirring often. Add cooked pasta al dente, and 1/2 ladle of pasta water, toss gently to combine while heating on medium high heat until thickened (approximately 1 minute). Serve immediately topped with freshly grated parmesan cheese if desired. Enjoy!
