Steps:
- Preheat the oven to 200 degrees F.
- Mix the mayonnaise and 1/4 cup of the teriyaki cooking sauce in a small bowl until combined. Slice four 1/4-inch-thick rounds from the pineapple (reserve the remaining pineapple for another use). Form the beef into 4 patties and sprinkle with salt and pepper.
- Heat a grill pan over medium-high heat, alternatively prepare an outdoor grill for medium-high direct and indirect heat. Add the bacon and pineapple in a single layer in a grill pan; if using an outdoor grill place the pineapple over direct heat and the bacon over indirect heat and cover. Cook until golden on one side, about 5 minutes for the pineapple and 7 minutes for the bacon. Flip both with tongs and continue cooking until the bacon is crisp and the pineapple is golden and soft, about 6 minutes more for each. Transfer to a baking sheet along with the rolls and keep warm in the oven.
- Add the burgers to the grill pan or outdoor grill over direct heat and cook until well browned on one side, about 4 minutes. Flip the burgers and cook for 2 minutes. Brush the burgers with half the remaining teriyaki cooking sauce, top with the mozzarella and brush with more sauce. Cover the burgers with a heatproof metal bowl or grill lid and cook until the cheese is melted and the burger is cooked to desired doneness, 1 to 2 minutes for medium.
- Put a burger on the bottom half of each roll and top with 2 slices bacon and 1 pineapple round. Divide the teriyaki mayonnaise among the burgers, spooning it into the hole of each pineapple round. Top with the roll tops.

Steps:
- Preheat an outdoor grill or a grill pan rubbed with a little oil.
- In a large mixing bowl, combine ground beef, panko, teriyaki sauce, and a pinch of salt and pepper until thoroughly mixed. Divide meat into four, large and round equal portions to make the patties. Flatten to the approximate size of your burger buns. Press your thumb into the center of each patty, forming an indent, to allow for even cooking.
- Place burger patties on the grill surface. Cook one side for about 4-5 minutes. Flip and cook the other side for about 3-4 minutes for a medium rare patty. For a medium patty, cook 5-6 minutes one side, and 4-5 minutes on the other. Add provolone cheese on top and cook for another minute, until melted. Remove from heat and rest the patties for about 5 minutes.
- While burgers are resting, place pineapple slices and red onion rounds on the grill. Cook 2-3 minutes per side until charred. Remove from heat.
- Optional: toast the buns on the grill for 2 minutes, face down, until slightly golden. Remove from heat and spread a little teriyaki sauce on each bun.
- Assemble the burgers, layering as follows: Bottom bun, butter lettuce, provolone burger patties, red onion rounds, pineapple slices, drizzle of teriyaki sauce, and top bun. Serve immediately.

HAWAIIAN HAMBURGERS WITH GRILLED PINEAPPLE
Plan ahead the shaped uncooked burger patties need to marinate for a minimum of 6 hours to blend the flavors before grilling. If possible use fresh pineapple rings for this about 1/2-inch thick or a little larger. If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

- Sausage and gravy – Samoa. The first thing we tried was sausage and gravy, similar to bangers and mash, but with rice instead of mashed potatoes. Due to the strong British influence throughout the history of Samoa, there are many similarities and influences in the local modern cuisine.
- Panipopo – Samoa. Next up was panipopo, something I had never seen or tried before. As soon as I ordered it, she added a fresh and still warm roll to a paper plate, then topped it with a few spoons of thick coconut creamy gravy.
- Half-Moon pineapple pie – Samoa. Our last Polynesian snack at the Samoan village at Polynesian Cultural Center was a Half-Moon pineapple pie, which came shaped like an empanada.
- Otai – Tonga. Made with seasonal fresh fruit, ‘otai is a milky fruity beverage found throughout parts of western Polynesia, especially in Tonga. During the season we went, they were offering it with lychee, peach, and green apple, but they change the fruits throughout the year, so it will depend on when you visit.
- Koelepalau – Hawaii. Though I’ve been to Hawaii many times, this was my first time to try koelepalau, a purple sweet potato coconut pudding. Price – $2.
- Po’e – Tahiti. Next up was a Tahitian po’e, this version prepared with bananas, and made into something like a fruit cake or pudding, then baked, and covered in coconut cream.
- Fijian curry – Fiji. Any type of curry, from India to Thailand, has always been one of my favorite genres of foods in the world, so I was happy to see Fijian curry on the menu.
- Meat pie – Aotearoa. I’ve never been to New Zealand (although I would love to visit), but under the influence of Britain again, meat pies are extremely common and loved.
- Egg, bacon & cheese quiche – Aotearoa. The egg, bacon & cheese quiche was pretty tasty as well, a little puff of pasty dough, filled with egg, cheese, and bacon stuffed into the middle.

- Place the ground beef in a shallow bowl. Add the salt, a few grinds of black pepper, mayonnaise and panko. The mayonnaise and panko help to hold the juices in the burger during cooking without changing the flavor or texture of the beef. The coarse texture of the panko is important because unlike dry breadcrumbs, they don't add density to ground beef.
- Use a wooden spatula to combine the meat ingredients as best you can before doing a final, gentle mix with your hands. Gently form the patties into quarter-pound portions and make a slight depression in the center of each with your thumb. This helps the burgers maintain an even thickness rather than developing a thicker "dome" in the center. Transfer to a plate and chill for at least 15 minutes before grilling.
