Kids of all ages approve of our yummy Polka Dot Sandwich: whole wheat bread spread with strawberry cream cheese and filled with bananas and raisins.

- Spread bread with cream cheese spread.
- Top 1 bread slice with bananas in 3 rows of 3 slices each. Sprinkle remaining bread slice with raisins; press gently into cream cheese to secure.
- Close sandwich to serve.

POLKA DOT CHERRY BANANAS
Quick, tastes great and makes the kids, even the teen, very happy! You can add some sliced strawberries in with the bananas if you want and top with a sprinkle of coconut for some variety.

Steps:
- Slice bananas and put desired amount in individual serving bowls. If using strawberries, add them in with the bananas.
- Sprinkle generously with mini chocolate chips.
- Microwave a few seconds, just enough to slighly soften (not melt) chips. You are not trying to cook the bananas. It should not be hot. In my microwave, I put 3 serving bowls of bananas and mini chips in for about 25 seconds. The chocolate chips had just started to soften and bananas were not hot. Other microwaves may take less or longer.
- Remove from microwave and and pour a couple of tablespoons of the juice from the jar of maraschino cherries over the bananas and chips. Top with as many cherries and you like and serve.

BLUEBERRY OR CHERRY/BANANA "BEST FOR YOU" SMOOTHIE
I eat these every morning for breakfast. Sounds like a weird combo but it's REALLY tasty! Wild organic blueberries are jam packed with Vitamin K, Manganese, Antioxidants and anthocyanins. They have been shown to lower Cholesterol and are good for anti-aging. - Layer sugar in a one-quart, wide-mouth jar; set aside.
- Mix together the next 4 ingredients; add to the jar, packing down gently.
- Layer the remaining ingredients in the order given.
- Secure lid and attach instructions.
- Instructions: In a large mixing bowl, cream 1/2 cup butter; add in 1 egg.
- Blend in cookie mix; mix well.
- Drop dough by teaspoonfuls onto a greased cookie sheet.
- Bake in a 375° oven for 10-12 minutes.
- Cool cookies on a wire rack.

POLKA DOT PANCAKES
This is a breakfast I make a few times a week for my husband and our 5 kids. When you have as many to feed in the morning as I do (and some are very picky), it's nice to find a recipe that makes a lot, is good for you and tastes great! These fluffy pancakes are very versatile. The "polka dot" part is simple to make by adding chocolate chips, blackberries, blueberries, raspberries, or anything else that looks like "polka dots". We even have these for dinner sometimes with bacon and eggs. Using the whole wheat flour adds an excellent flavor and extra nutrition too. Enjoy!

- In a large mixing bowl stir together flour, sugar, baking powder, and salt.
- In another mixing bowl combine eggs, milk, melted butter and vanilla.
- Add to flour mixture all at once.
- Stir mixture just till blended but still slightly lumpy.
- Pour 1/4 cup batter onto a hot, lightly greased griddle.
- Sprinkle top with desired amount of chocolate chips or berries to make"polka dots".
- Cook till pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and egg white. Add the buttermilk, bananas and vanilla. Combine flour, baking soda and salt; stir into the creamed mixture. Stir in walnuts., Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 35 minutes or until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes before removing to a wire rack. , For filling, in a small saucepan, melt butter and brown sugar over medium heat. In a small bowl, combine flour and salt with a small amount of milk until smooth. Gradually add the remaining milk. Stir in egg yolk. Add to brown sugar mixture. Cook and stir over medium heat for about 10 minutes or until thickened. , Remove from the heat; add vanilla and nuts. Cool. Spread between cake layers. Dust with confectioners' sugar. Chill. Store in refrigerator.
