POLENTA TART WITH TOMATOES AND SMOKED MOZZARELLA



Polenta Tart with Tomatoes and Smoked Mozzarella image

An elegant appetizer from Better Homes and Gardens. If you don't have a tart pan with a removeable bottom, you could probably use a springform pan. Make sure to offer a good quality olive oil for drizzeling over the slices. Cook time includes time for roasting tomatoes.

12 roma tomatoes (plum)
1 cup stone-ground yellow cornmeal or 1 cup white cornmeal
4 ounces shredded smoked mozzarella cheese (1 cup)

Steps:

  • Preheat oven to 300.
  • Cut 10 of the tomatoes in half lengthwise.
  • Sprinkle cut sides lightly with 1/2 teaspoon fine sea salt or salt.
  • Place tomatoes, cut side down, in a shallow baking pan lined with parchment paper.
  • Roast for 1 hour.
  • Turn the tomatoes cut side up; roast 30 minutes more.
  • Cool slightly.
  • Increase oven temperature to 375.
  • Meanwhile, bring 3 1/2 cups water and 1 teaspoon fine sea salt or salt just to boiling in a medium saucepan.
  • Slowly stir in cornmeal with a whisk until combined.
  • Using a wooden spoon, stir in half the cheese.
  • Continue cooking over low heat for 10 minutes, stirring constantly, until thick but still creamy.
  • Spray a 9-inch, removable bottom tart pan with nonstick cooking spray.
  • Pour polenta into pan, smoothing the top.
  • Thinly slice remaining 2 tomatoes crosswise into thin slices.
  • Place around perimeter of tart, overlapping slightly.
  • Place roasted tomatoes, cut side down, on polenta in a circular pattern.
  • (Use any remaining roasted tomatoes as a garnish.) Sprinkle with remaining cheese.
  • Bake for 6 to 8 minutes until polenta is set and cheese is melted.
  • Broil 4 to 5 inches from the heat for 1 to 2 minutes or until top is golden.
  • Carefully remove sides of tart pan before serving.
  • Cut into wedges, and serve warm.

1 package (17.3 ounces/2 sheets) puff pastry, defrosted
Good olive oil
4 cups thinly sliced yellow onions (2 large onions)
3 large garlic cloves, cut into thin slivers
Kosher salt and freshly ground black pepper
3 tablespoons dry white wine
2 teaspoons minced fresh thyme leaves
4 tablespoons freshly grated Parmesan, plus 2 ounces shaved with a vegetable peeler
4 ounces garlic-and-herb goat cheese (recommended: Montrachet)
1 large tomato, cut into four 1/4-inch-thick slices
3 tablespoons julienned basil leaves

Steps:

  • Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.
  • Preheat the oven to 425 degrees F.
  • Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.
  • Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.
  • Place 1/4 of the onion mixture on each circle, again staying within the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.
  • Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.

This was a last minute fix when I remembered one of my dinner guests was gluten free and couldnt eat the pasta I was preparing. Came out so elegant! Homemade polenta is surprisingly easy and 100x better than store bought. If you haven't tried it before, you are in for a treat.

1 1/2 lbs cherry tomatoes, cut in half lengthwise
3 tablespoons olive oil
salt & freshly ground black pepper
2 cups milk
1 1/2 cups water
3 cups cornmeal
1 1/2 teaspoons salt
3 tablespoons butter or 3 tablespoons olive oil
1/2 cup grated parmesan cheese
1 cup soft fresh goat cheese
1/2 cup fresh basil, chopped
1/2 cup toasted pine nuts

Steps:

  • Preheat the oven to 375. Grease a large baking sheet with a little of the olive oil.
  • Place tomatoes in pan cut side down and drizzle with olive oil and sprinkle with salt and pepper. Roast until they start to char and shrivel (no need to turn over), 40-50min. Let cool on the pan a bit.
  • For the Polenta: Boil the milk and water together.
  • Whisk in the cornmeal and salt. Turn down the heat and stir constantly until the polenta is suspended in the water and no longer settles to the bottom of the pot. It's done in about 15 minutes (still stirring often), but is supposedly even better if you cook it for about an hour - I wouldn't know, I'm always too impatient :).
  • Take of the stove and stir in the butter or olive oil and 1/2 cup parmesan cheese.
  • Place a mound of polenta in the center of each plate. Top with goat cheese, roasted tomato, basil and pine nuts.

For butter pastry dough for a single-crust 9-inch tart:
1 1/2 cups all-purpose flour
1 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into bits
3 to 4 tablespoons ice water
1/2 pound mushrooms, sliced
1 stick (1/2 cup) unsalted butter, softened
For 1 cup cooled prepared polenta:
4 cups water
1 teaspoon salt
1 cup cornmeal or instant polenta
1/2 cup sour cream
1/4 pound soft mild goat cheese from a log or disk
2 large eggs, beaten lightly
1/2 teaspoon salt
1 tablespoon fresh small thyme sprigs

Steps:

  • Preheat oven to 375°F.
  • On a floured surface with a floured rolling pin roll out dough into a 15-inch round (about 1/8 inch thick) and fit it into a 9-inch quiche dish. Trim overhang to 1/2 inch and fold toward center, pressing against side of dish. Chill shell until ready to use.
  • In a skillet cook mushrooms with salt to taste in 2 tablespoons butter over moderately high heat until golden and any liquid is evaporated. Spread mushrooms in shell and bake in middle of oven 20 minutes.
  • While tart is baking, with back of a spoon force polenta through a coarse sieve into a bowl to break up lumps. Stir in sour cream and remaining 6 tablespoons butter until combined well. Force goat cheese through small teardrop-shaped holes of a grater and stir into polenta mixture with eggs and salt.
  • Spread polenta mixture over mushrooms and sprinkle with thyme. Bake tart 35 minutes, or until puffed and golden. Cool tart on a rack until just warm.
  • To make butter pastry dough:
  • In a large bowl whisk together flour and salt and with a pastry blender or your fingertips blend in butter until mixture resembles coarse meal. Add ice water, 1 tablespoon at a time, tossing with a fork to incorporate, until mixture begins to form a dough. On a floured work surface smear dough in 3 or 4 forward motions with heel of hand to slightly develop gluten in flour and make dough easier to work with. Form dough into a ball and flatten to form a disk. Wrap dough in plastic wrap and chill in 1 hour. Dough may be made 1 week ahead and chilled. Makes enough dough for a single-crust 9-inch tart.
  • To make basic polenta:
  • In a heavy saucepan bring water and salt to a boil and gradually whisk in cornmeal in a thin stream. Cook polenta over moderately low heat (it should be barely boiling), stirring constantly, until very thick and pulls away from side of pan, about 40 minutes for cornmeal and about 15 minutes for instant polenta. Remove pan from heat and cover to keep warm. Stir polenta just before using. Polenta will keep warm, covered, about 20 minutes. Makes about 3 cups.
  • Note: In the traditional method of cooking polenta, forty minutes of constant stirring is required to achieve a lumpless texture and fragrant flavor. However, Italian-food expert Marcella Hazan has developed a method that involves very little stirring during this time. We believe it produces a very good polenta, one nearly as flavorful and smooth as the traditional procedure. To make satisfactory polenta in a real hurry, an imported instant polenta (precooked cornmeal) is available. This cooks in a mere fifteen minutes.

  • Preheat the oven to 425 degrees. Wash the tomatoes, place on a baking sheet, and pat dry. Drizzle with 1 tablespoon of the oil. Roast for 10 minutes, gently turn the tomatoes, and repeat until the tomatoes are browned, about 30 minutes. I turned the heat up to 450 at the end to get more browning action.
  • Heat the remaining 2 tablespoons oil in a large heavy pan. Add the garlic and saute gently until fragrant, but do not brown – browned garlic tastes bitter and gross. When the garlic is smelling awesome, add the spinach and turn off the heat. You should be able to just keep stirring the spinach around for a minute and it will wilt and reduce in size. Transfer to a bowl and set aside. Wipe out the pan with a paper towel.
  • In the same pan, bring the water to a boil. Add the polenta and whisk until smooth. Simmer for 15 minutes or so until the polenta has thickened. Add the goat cheese and the salt and stir until smooth. Taste and adjust as necessary. Serve the polenta immediately with the tomatoes and the spinach.
