PIZZA ROLL-UPS (OAMC)
A once a month recipe that is great for picnics or nights when the family has to eat in shifts. They can be eaten warm or cold.

Steps:
- Thaw dough; roll it into 14 x 24-inch rectangle about 1/4 inch thick.
- Brown ground beef or turkey; stir in remaining ingredients except Italian tomato xauce.
- Spoon filling evenly onto dough, slightly pressing filling into dough.
- Roll dough lengthwise like a jelly roll, and cut into 24 1-inch slices.
- Treat 2 rimmed cookie sheets with nonstick spray; lay slices on sheets about 1 inch apart.
- Preheat oven to 400°F.
- Let roll-ups sit for 10 minutes.
- Bake for 20-25 minutes or until golden.
- Cool roll-ups and freeze in 4 1 gallon bags, 6 per bag.
- Slip a 1 quart bag with 1 cup sauce into each bag of pizza roll ups.
- To prepare, thaw roll-ups and warm them in a preheated 400°F oven for 10 minutes or put them frozen in the microwave; heat on high for about 2 minutes.
- Serve with warmed Italian tomato sauce.

Easy Pizza Treat! My boyfriend thinks this is a recipe; i think its more of a serving suggestion. He thinks its a meal; I say this is a snack. However you view it, its a great treat to eat.

Steps:
- Preheat oven to 450 degrees.
- Generously coat a rimmed baking sheet with cooking spray.
- Roll dough into a 10 inch square on a floured surface.
- Spread pizza or pasta sauce over dough.
- Sprinkle all but 2 tbsp mozzarella over the sauce.
- Top with pepperoni.
- Roll up dough jelly-roll style to enclose filling.
- Cut roll crosswise into 10 slices.
- Place slices, cut side down on baking sheet.
- Brush tops with oil.
- Sprinkle with parmesan and remaining mozzarella cheese.
- Bake until golden brown, about 15 minutes.
- Serve immediately.
GRILLED PIZZA ROLL-UPS
Steps:
- Cut the crusts off the bread. Using a rolling pin, roll out the pieces of bread until flat.
- Place a cheese stick or 2 tablespoons of cheese on the edge of the bread closest to you. Place 3 slices of pepperoni, if using, on the bread above the cheese. Tightly roll up the bread, pressing the seam end to adhere.
- Melt the butter in a sauté pan over medium heat. Cook the roll-ups seam-side down until golden, 1 to 2 minutes. Flip and cook until golden all over, 1 to 2 more minutes.
- Cut each roll-up into pieces and serve with the sauce for dipping.
PIZZA ROLLS

- Roll out the Pizza Dough on a floured surface until it's a large rectangle about 8 inches by 12 inches. Smear with a little olive oil and sprinkle with salt. Spread the surface with about 1/2 cup of the Marinara Sauce, then sprinkle with the Parmesan. Lay the mozzarella slices over the sauce. Smear the pesto over the cheese. Lay on the pepperoni, olives and bell peppers.
- Unwrap the string cheese and lay it in a line at the top of the dough. Roll it towards you so that the string cheese ends up in the middle of the roll of dough; pinch the seam closed. Slice into 1-inch pieces and place them in a 10-inch cast-iron skillet. Allow the rolls to rise for 20 minutes.
- Preheat the oven to 400 degrees F.
- Bake until the bread is golden and the fillings are bubbly, about 15 minutes. Serve immediately with warm Marinara Sauce.
- Sprinkle the yeast over 3/4 cup warm (not lukewarm) water in a bowl and leave to sit for a bit.
- In a mixer, add the flour and salt and, with the mixer running on low speed (with the paddle attachment), slowly pour in the olive oil and keep going until it's mixed through. Next, pour in the yeast/water mixture and mix until just combined.
- Coat a separate mixing bowl with a light drizzle of olive oil, tip the dough in and form it into a ball. Toss to coat the dough ball in the olive oil, then cover the bowl tightly with plastic wrap and allow the dough to rise for at least 1 hour.
- Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the garlic and onion and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
- Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
- Toward the end of the cooking process, chop up fresh parsley and basil and add it to the sauce to taste, stirring to combine.

- Make the dough: Combine the yeast, sugar and 1 cup warm water (100 degrees F to 105 degrees F) in a food processor and pulse once. Let sit until foamy, 5 to 10 minutes. Add the olive oil and pulse to combine. Combine the flour and salt in a medium bowl, then add to the food processor and pulse until the dough comes together. Transfer to a lightly floured surface and form into a ball. Place in a lightly oiled bowl, cover with plastic wrap and let rise in a warm place until doubled in size, 2 to 4 hours.
- Make the rolls: Stretch the dough into an 8-by-12-inch rectangle on a lightly floured surface. Spread the marinara sauce on the dough all the way to the edge; top with the pepperoni and 1 3/4 cups mozzarella. Starting from a long side, tightly roll up the dough, slightly stretching as you go, to form a 14-inch-long log.
- Coat the bottom and sides of a 9-inch square baking dish (preferably glass or light metal) with cooking spray, then line the bottom and sides with parchment paper, leaving a 1-inch overhang. Cut the log crosswise into 9 rounds. Arrange cut-side up in the prepared pan in 3 rows of 3, slightly touching. Cover with foil and set aside, 20 to 30 minutes.
- Preheat the oven to 375 degrees F. Bake the rolls, covered, until the cheese begins to melt and the rolls are puffy, about 20 minutes. Uncover and continue baking until golden brown, about 20 more minutes. Sprinkle with the remaining 1/4 cup mozzarella and the parmesan; continue baking until the cheese melts, about 7 more minutes. Let cool slightly in the pan. Top with basil.
PIZZA ROLLUPS

- Spread the pizza sauce evenly over the tortillas. Roughly tear the basil leaves over the sauce. Sprinkle black olives over sauce. Divide the cheese and red pepper flakes, if using, evenly over top. Roll tortillas up and then heat in a toaster oven until cheese has melted.
CRESCENT PIZZA ROLL-UPS

- Remove from the heat.
- Add tomato sauce, mozzarella cheese and oregano; mix well.
- Separate crescent dough into eight rectangles, pinching seams together.
- Place about 3 tablespoons of meat mixture along one long side of each rectangle.
- Roll up, jelly-roll style, starting with a long side.

- Preheat the oven to 400 degrees F. Lightly dust a baking sheet and work surface with flour.
- Roll the dough into a rectangle about the size of the baking sheet (13 by 18 inches).
- In a large bowl, combine the spinach, mozzarella and garlic. Toss to combine. Evenly sprinkle over the dough, leaving about a 1-inch border all the way around. Dot the mixture with the ricotta cheese and sprinkle with salt and pepper.

- Place 3 slices of pepperoni and 1 slice of cheese on each.
- Roll up tightly and secure with toothpicks.
