Watergate Cake is a family favorite and thankfully, it's so easy to make with a cake mix. Each cake slice is moist, the perfect sweetness, and topped with a light and fluffy frosting.

1 box white cake mix
2 boxes instant pistachio pudding mix
1 cup vegetable oil
3 eggs
1 cup ginger ale or 7 Up
1 1/4 cups cold milk
8 oz. whipped topping
nuts (optional)

Steps:

  • Combine the cake mix, 1 box of pistachio pudding, oil, eggs, and ginger ale in a medium bowl.
  • Mix well and pour into a greased 9x13-inch baking pan.
  • Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted into the middle of the cake comes out clean. Cool completely.
  • Add the cold milk to the remaining box of pistachio pudding mix in a medium bowl.
  • Stir until well combined and the pudding begins to thicken. Then fold in the whipped topping.
  • Frost the cooled cake and garnish it with chopped pecan pieces (optional).
  • Store in the refrigerator.

1 3.4 ounce box instant pudding mix (pistachio flavored )
1 box white cake mix
1 cup 7-Up
3 egg whites
1 cup oil
1 3.4 ounce box instant pudding mix (pistachio flavored)
1½ cups milk
2 envelopes whipped topping (Dream Whip)

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 9 x 13 inch cake pan.
  • Blend 1 box of pistachio pudding, cake mix, 7-Up, egg whites and oil in mixer for 5 minutes. Pour into prepared pan.
  • Bake for 30 - 35 minutes. Cool completely.
  • Beat 1 box of pistachio pudding mix, milk and whipped topping. Beat until thick and peaks form. Ice/frost cake. Keep cake chilled.

Classic Watergate cake is made with a cake mix, pistachio pudding, 7UP, coconut, and chopped pecans for a unique and sweet treat.

1 white cake mix (2 layer size)
3 large eggs
2 packages (3 ounces each) instant pistachio pudding (divided)
1 cup vegetable oil
1 cup 7-up
1 cup chopped pecans (divided)
1 cup flaked coconut (divided)
2 envelopes Dream Whip dry whipped topping mix
1 1/4 cups cold milk

Steps:

  • Heat the oven to 350 F.
  • Grease and flour a 9 x 13-inch baking pan.
  • Empty the white cake mix into a large mixing bowl with the eggs, 1 package of the pudding mix, 1 cup of vegetable oil, and the 7UP. With an electric mixer on low, combine the ingredients. Increase the speed to medium and beat for 1 to 2 minutes. Fold in 1/2 cup of chopped pecans and 1/2 cup of coconut until well blended.
  • Spoon the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for about 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cake completely in the pan on a rack.
  • When the cake has cooled completely, prepare the frosting.
  • Combine the 2 envelopes of Dream Whip with the milk; beat with an electric mixer until soft peaks form. Add the remaining package of dry pistachio pudding mix and continue beating until well blended. Fold in the remaining 1/2 cup of chopped pecans.
  • Spread the frosting over the cooled cake.
  • Put the coconut in a dry skillet over medium heat. Cook, stirring constantly until the coconut is well-browned. Remove the coconut to a plate to cool and then sprinkle it over the frosting.
  • Store leftover cake in the refrigerator for four to six days. According to the Kraft foodservice website, it can be stored in the refrigerator without spoilage for "several days."

1 box white cake mix
1 c crushed pineapples (drained)
1/2 c pistachio nuts, chopped
1 box pistachio pudding, 3.4 oz
3 eggs
1 c water
1/3 c oil
FROSTING
12 oz tub of Cool Whip
1 box pistachio pudding, 3.4 oz.
1 c milk
1/4 c pistachio nuts, chopped for garnish

Steps:

  • 1. Preheat oven to 350 degrees. In a large mixing bowl, mix all cake ingredients for two minutes on medium speed.
  • 2. Fold in the nuts.
  • 3. Pour into 2 round cake pans or a 9x13 baking pan.
  • 4. Bake according to cake mix directions.
  • 5. Cool cakes completely.
  • 6. While cake is cooking, in a medium bowl mix pudding and milk. Chill for 5 minutes. Fold in Cool Whip and chill until cake is ready for frosting.
  • 7. After cakes are cooled completely frost.
  • 8. Refrigerate until time to serve. Keep any leftover cake refrigerated.

1 cup club soda
1/2 cup canola oil

FROSTING:

2 cups heavy whipping cream
1 cup 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, pudding mix, club soda, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in pistachios. Transfer to a greased 13x9-in. baking pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Steps:

  • Combine first 4 ingredients in large bowl. Gently stir in 1-1/2 cups COOL WHIP.
  • Cut cake horizontally into 3 layers. Place bottom cake layer, cut side up, on serving plate; top with 1-3/4 cups pudding mixture. Cover with middle cake layer and remaining pudding mixture. Top with remaining cake layer.
  • Frost sides and top of cake with remaining COOL WHIP. Refrigerate 1 hour or until ready to serve. Sprinkle with coconut just before serving.
