Steps:
- In a stockpot, combine the first eight ingredients; cover with water. Bring to a boil. Reduce heat; simmer, covered, 3 to 4 hours or until meat and beans are tender., Remove pork; cool slightly. Stir carrots, celery and tomatoes into bean mixture; return to a boil. Reduce heat; simmer, covered, until vegetables are crisp-tender. Add zucchini; cook 8-10 minutes longer or until crisp-tender., Meanwhile, remove pork from bone; discard bone. Cut pork into bite-size pieces; return to pot and heat through. Serve with tortillas., Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth or water if necessary. Serve with tortillas.

Steps:
- Sort through the beans and remove any stones. To soak the beans, put them in a large bowl, cover them with cold water and allow them to soak, covered, overnight. Or use the quick-soak method below.
- Quick-soak method: Put the beans in a colander and rinse under water. Put the beans in a large pot and add enough water to cover the beans by at least 3 inches. Bring to a boil over high heat. Reduce the heat and simmer for 4 minutes. Turn off the heat and let the beans stand for 1 hour.
- Drain and rinse the soaked beans and transfer them to a large pot. Add enough water to cover the beans by at least 3 inches. Add the salt, pepper, chili powder, cumin, cayenne, smoked paprika, garlic, jalapeno, bay leaf and onion to the pot. Bring to a boil, then reduce the heat to bring it to a simmer. Cover and cook until the beans are tender, 2 to 3 1/2 hours.

- Sort beans and rinse with cold water. Soak beans according to the package directions., Drain and rinse beans, discarding liquid. Place roast in a 5-qt. slow cooker. In a bowl, combine the beans, tomatoes, carrots, celery, water, chiles, chili powder, garlic, cumin, oregano and pepper. Pour over roast. Cover and cook on high 3 hours. Reduce heat to low; cook until beans are tender, 5 hours longer., Remove meat, shred with 2 forks and return to slow cooker. With a slotted spoon, serve meat mixture over corn chips or in tortillas with toppings as desired.

My family loves this recipe after trying many different ones. When I'm short on time I use canned beans and just add the rest of the ingredients, I cook the bacon up when using canned beans. ENJOY!

- Clean beans and wash well with water.
- Put beans in large pot, add water.
- Bring beans to boil and let boil for 1 hour.
- Check closely, as beans cook, you will probably need to add more water.
- Run tap water until very hot before adding to beans.
- Add bacon pieces and cook another 45 minutes.
- Add spices and reduce heat to low and cook another 20 to 25 minutes.
DOWN SOUTH PINTO BEANS
My grandmother always brought these wonderful pinto beans with pork jowl to the table at mealtimes, along with cornbread and onions. Yummy. A true Southern tradition.

- Wash pinto beans thoroughly and place in a large stockpot. Add 4 quarts water, pork jowl, sugar, salt, and pepper. Bring to a rolling boil over high heat. - Rinse beans and cover with water. Soak overnight OR bring to a boil and boil for two minutes, remove from heat. Cover and let stand for 1 hour.
- Drain beans.
- Cut roast in half and place in bottom of crock pot.
- Combine beans and remaining ingredients. Pour over roast.
- Cook on high for 3 hours then to low for 5.
- Remove meat, shred and return to the crock pot.

- First look through beans and remove any debris sometimes found in them. Then rinse well. Put in a pot and cover with water and soak overnight-Or you can do a quick soak by bringing them to a boil and immediately turning off and let sit for 2 hours.
- Rinse side meat and slice into chunks.
- Now there are two ways to go from here- You can cook them on stove top or in a crock pot- I prefer the crock pot because they have a better flavor.
- Stove Top Method - Pour water off beans after soaking and add fresh water - enough to cover them completely. Add side meat, salt, and pepper.
- Bring to boil and then lower heat to simmer for app 2-3 hours stirring occasionally -Until the beans are as soft as you want them.
- Crock Pot Method- Pour water off beans after soaking and add beans to crock pot. Cover with fresh water and add salt, pepper and side meat. Cook on high about 1 hour then lower to low and cook about 6 hours - until beans are as soft as you want them.
- Serve with cornbread and chopped onions-MMMM MMMM Good!
