1 (8 ounce) can unsweetened pineapple chunks
5 cups cooked turkey breast, cubed
1 stalk celery, thinly sliced
1/3 cup raisins
1 green onion, chopped
1/2 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
6 lettuce leaves
1 cup red grapes, seedless chopped in half
1/3 cup slivered almonds

Steps:

  • Drain pineapple, reserving 2 tablespoons juice. In a large bowl, combine the pineapple, turkey, celery, raisins and onion. In a small bowl, combine the mayonnaise, mustard, curry, salt, pepper and reserved pineapple juice. Stir into turkey mixture.
  • Cover and refrigerate until serving. Spoon onto lettuce leaves and top with grapes and almonds.

A quick and easy stir-fry provides the base for this sweet-and-sour salad.

1 tablespoon vegetable oil
3 cups cauliflowerets
6 to 9 medium green onions, sliced diagonally (3/4 cup)
1 large red bell pepper, cut into strips
1 1/2 pounds uncooked turkey breast slices, cut into 1/2-inch pieces
6 cups bite-size pieces leaf lettuce
2 cans (20 ounces each) pineapple chunks in juice, drained and 6 tablespoons juice reserved
3 tablespoons white wine vinegar or white vinegar
1/2 teaspoon freshly ground pepper

Steps:

  • Heat wok or 12-inch skillet over high heat until 1 or 2 drops of water bubble and skitter when sprinkled in wok. Add oil; rotate wok to coat side. Add cauliflowerets; stir-fry about 3 minutes or until crisp-tender. Add onions and bell pepper; stir-fry 1 minute. Remove vegetable mixture from wok.
  • Add turkey to wok; stir-fry about 4 minutes or until no longer pink in center. Remove turkey from wok.
  • Toss lettuce, pineapple chunks, vegetable mixture and turkey in large salad bowl. Shake reserved pineapple juice, the vinegar and pepper in tightly covered container. Pour over turkey mixture; toss to coat.

2 tablespoons curry powder
4 tablespoons butter
1 1/2 cups chopped onions
2 tablespoons flour
1/2 teaspoon ground ginger
2 cups chicken broth
1 (8 -9 ounce) can crushed pineapple, undrained
3 cups diced cooked turkey
2 tablespoons lemon juice
4 cups hot cooked rice

Steps:

  • In a large skillet, heat curry powder in butter, stirring, for 2 minutes.
  • Stir in onions; continue cooking, stirring frequently, until onions are softened.
  • Blend in flour and ginger; add chicken broth and pineapple.
  • Heat to boiling; simmer, uncovered, 5 minutes.
  • Stir in turkey.
  • Cover and simmer for 10 minutes longer, or until heated through.
  • Stir in lemon juice.
  • Serve with hot cooked rice.

1 turkey (8 to 12 lb.)
1 pineapple
1 cup dry white wine
1/4 cup honey
1/4 cup soy sauce
1 teaspoon ginger, ground
1 teaspoon paprika
2 cloves large garlic, finely chopped
1 tablespoon cornstarch
1/4 cup water

Steps:

  • Wash turkey and pat dry.
  • If desired, rub cavity lightly with salt. Fasten neck skin to back and skewer.
  • Fold wings across back with tips touching.
  • Tuck drumsticks under band of skin at tail or tie together with heavy string, then tie to tail.
  • Place turkey breast side up on rack in open shallow roasting pan.
  • Brush with vegetable oil.
  • Insert meat thermome- ter so tip is in thickest part of inside thigh muscle or thickest part of breast meat and does not touch bone. Roast uncovered in 325 degrees oven for 3 hours.
  • Pare pineapple; cut lengthwise into halves.
  • Remove core; cut each half crosswise int o 8 slices.
  • Mix wine, honey, soy, ginger, paprika and garlic. Arrange pineapple on rack around turkey.
  • Brush turkey and pineapple with wine mixture. Continue roasting uncovered, brushing turkey and pineapple frequently with wine mixture, until thermometer registers 185 degrees, about 1 hour longer, or move drumstick up and down (when done the joint should give readily or break). Remove turkey and pineapple, keep warm.
  • Pour d rippings into 2 cup measuring cup; skim off any excess fat. Add enough water to drippings to measure 2 cups.
  • Heat dripping to boiling in saucepan.
  • Mix cornstarch and cold water; stir into drippings.
  • Boil and stir 1 minute. Serve with turkey.
  • Yields about 16 servings.

  • Drain pineapple, reserving juice. Cut slices in half; set aside. In a jar with a tight-fitting lid, combine the oil, honey, vinegar, soy sauce and reserved pineapple juice; shake well. , Refrigerate for at least 30 minutes. Combine the romaine, onion slices and pineapple slices in a serving dish. Drizzle with dressing; toss to coat.

1 red onion , finely chopped
1 tbsp sunflower oil
1 red pepper , deseeded and diced
200g basmati rice
450ml chicken stock
400g can kidney bean , rinsed and drained
4 turkey steaks
2 tsp Cajun seasoning
5 140g fresh pineapple (or 220g can pineapple rings, drained)
½ green chilli , finely chopped
juice 1 lime

Steps:

  • Reserve 2 tbsp of the onion for the salsa. Heat the oil in a saucepan and cook the remaining onion and half the pepper for 4 mins or until softened and coloured. Stir in the rice, then pour in the stock. Add the kidney beans and a pinch of salt. Bring to the boil, stir once, cover the pan, then reduce the heat to a gentle simmer. Cook for 15 mins until the rice is tender and the liquid absorbed.
  • Dust the turkey steaks with the Cajun spice and griddle or fry in a non-stick pan for about 4-6 mins on each side until cooked through. Cut the pineapple into small pieces and mix together with the reserved red onion, pepper, green chilli and lime juice. Spoon some salsa over each steak and serve with the rice.
