1 ripe pineapple, for serving rice (optional)
4 cups cooked longgrain rice, such as jasmine, chilled
3 tablespoons vegetable oil
1 small onion, finely diced
5 cloves garlic, chopped
1 tablespoon grated fresh ginger
1 cup blanched, sliced Chinese long beans
1/2 cup seeded, diced tomatoes
1 cup finely chopped fresh pineapple
3 tablespoons Thai fish sauce
1 teaspoon sugar
3 green onions, thinly sliced diagonally

Steps:

  • If serving rice in fresh pineapple, halve the pineapple lengthwise, leaving the leafy top intact and cutting through it. Hollow out each half, reserving 1 cup of the fruit for the rice and extra for garnishing. Save remaining pineapple for another use. Make a small slice on the outside of each half to create a flat base to hold the pineapple steady. Set aside.
  • Crumble the cold rice between your fingers to separate the grains, and set aside.
  • Heat 2 tablespoons of the oil in a wok or large skillet, swirling to coat the pan. Add the onion and toss until soft, 3 to 5 minutes. Add the garlic and toss until fragrant and soft, about 1 to 2 minutes. Add the ginger and toss for another minute.
  • Add the remaining tablespoon of oil, then add the rice. Fry for 2 to 3 minutes over high heat, then add the beans, tomatoes, and pineapple, and fry 2 to 3 minutes more. Add the fish sauce and sugar, and toss until ingredients are well combined and rice is heated thoroughly, about 5 minutes. Add the green onions and toss to combine. Remove from the heat and transfer to a serving platter, or if using fresh pineapple, fill each half of prepared pineapple with warm rice and garnish with extra chunks of pineapple.

2 tablespoons roasted peanuts or 2 tablespoons peanut oil, divided
1/4 teaspoon salt

1/4 lb snow peas, trimmed and cut lengthwise into thin strips

Steps:

  • Place tofu between paper towels until barely moist.
  • Heat 1 tablespoon oil in a large nonstick skillet or stir-fry pan over medium-high heat.
  • Add tofu, and cook 8 minutes or until golden.
  • Sprinkle with salt.
  • Remove tofu from pan.
  • Heat 1 tablespoon oil in pan over medium-high heat.
  • Add bell pepper and onions, and sauté 2 minutes.
  • Add peas, and sauté 30 seconds.
  • Stir in rice, and cook 2 minutes.
  • Add tofu, 2 tablespoons cilantro, and pineapple; cook 1 minute, stirring gently.
  • Remove from heat.
  • Stir in soy sauce and peanuts.
  • Sprinkle with 2 tablespoons cilantro.

3 cup Steamed Brown or White Rice
1 Thai Green Chili (chopped or thinly sliced)
1 tbsp Ginger Garlic Paste
½ cup Chopped Yellow Onions
½ cup Chopped Peppers
½ cup Chopped Cabbage
½ cup Chopped Carrots
½ cup Frozen Veggies
½ cup Frozen Edamame Beans
1 cup Cubed Pineapple
¼ cup Chopped Cilantro
¼ cup Chopped Scallions
2 tbsp Dark Soy Sauce
1 tbsp Sriracha Sauce
2 tbsp Hoisin Sauce
1 tsp Salt
1 tsp While Pepper Powder (or black pepper if not having any while peppers)
3 tbsp Oil
2 tbsp Oil
12 oz Soft Tofu
1 tbsp Dark Soy Sauce
1 tbsp Hoisin Sauce
1 tsp Sriracha Sauce
1 cup Cashews
¼ tsp Salt
¼ tsp Red Chili Powder
¼ tsp Curry Powder
1 tsp Oil

Steps:

  • Take tofu out of the box and wrap it in couple of paper towels for anywhere from 30-40 minutes. Place a Weight on the wrapped tofu. Your weight should be heavy enough to press down evenly across the top of the tofu, but not so heavy so as to cause the tofu block to crumble.
  • Once the extra water if gone from the tofu, cut them in cubes and saute them in 2 tbsp of oil on medium heat until they get golden brown and somewhat crispy, tossing and turning them every few minutes. Be careful while tossing and turning so it does not crumble.
  • Once tofu cubes are golden brown on each side, add dark soy sauce, hoisin sauce and sriracha sauce.
  • Mix it very well to coat each cube evenly without crumbling them. Take them off the heat and keep them aside.
  • Combine all ingredients listed under carried cashew and roast them on 350°F for 5-6 minutes. Once done, keep it aside.
  • Heat 3 tbsp of oil in a wide pan.
  • Once hot, add 2 tbsp of ginger garlic paste and 1 chopped thai green chili. Saute for 2-3 minutes, or until the raw smell of garlic disappears.
  • Add chopped onions and saute on high heat for couple of minutes.
  • Add chopped peppers and saute on high heat for couple of minutes.
  • Add chopped cabbage and saute on high heat for couple of minutes.
  • Add chopped carrots and saute on high heat for couple of minutes.
  • Add dark soy sauce, hoisin sauce, sriracha saute, salt and pepper. Mix it very well.
  • Add boiled mixed veggies and boiled edamame beans. Mix well.
  • Add cubed pineapple. Mix well.
  • Add chopped cilantro and chopped scallions. Mix it well
  • Add cooked rice and mix it well. Taste for seasoning and sauces, add more if needed.
  • Add prepared tofu to fried rice and mix well.
  • Garnish it with curried cashews, and some extra cilantro and scallions. Serve it hot with a wedge of lemon!

250g egg noodles
396g pack firm tofu
4 tbsp sweet chilli sauce
4 tbsp soy sauce
540g can pineapple pieces in juice, drained but keep the juice
1 tbsp vegetable oil
8 spring onions , finely sliced (keep the green parts separate)
250g frozen sliced mixed peppers

Steps:

  • Pour boiling water over the noodles and set aside to soften for 15 mins. Cut the tofu in half through the centre to make 2 thinner pieces, then in half the other way to make 4 rectangles, and in half on the diagonal to make 8 triangles. In a frying pan, mix the chilli sauce, 2 tbsp soy and 3 tbsp pineapple juice. Add the tofu and cook until the sauce is thick and sticky, turning the tofu halfway through cooking. Tip into a serving dish with any sauce and keep warm.
  • Drain the noodles. Heat the oil in the pan, add the peppers and the white parts of the spring onions and and fry for 8-10 mins until the peppers have defrosted and softened. Add the pineapple, noodles and remaining soy sauce, then toss together and heat through. Serve with the tofu, scattered with the green parts of the spring onions.

4 cups of cooked rice (day old rice is ideal)*
2 ½ tablespoons of coconut oil (any other oil will work well!)
5 cloves of garlic, finely minced
1 inch of ginger, peeled and finely minced (about 1 tablespoon)
1 ½ cups of yellow onion, chopped
1 cup of carrot, diced
1 medium bell pepper, finely diced
1 ½ cups of fresh or frozen pineapple
1/2 cup of peas (I used frozen peas, thawed)
4 tablespoons of soy sauce
2 tablespoons of sesame oil

Steps:

  • Over medium heat, heat your coconut oil until hot. Add in the garlic, ginger, onion, and carrots. Saute for 5 minutes and then add in the pineapple and bell pepper. Saute for 5 additional minutes, stirring frequently.
  • Stir in the cold rice, peas, soy sauce, and sesame oil. Once full combined, let the rice cook, untouched for a couple of minutes. To help get a tiny bit of crispiness on the bottom of the rice, let it cook, unstirred, for a few minutes at a time. Then stir to toss it and then let it sit for another couple of minutes.
  • Remove from heat and season with a bit of salt and pepper and ENJOY!!

1 onion, chopped
3 cloves of garlic, chopped

1 tablespoon soy sauce
1 tablespoon curry powder

Steps:

  • I like the Thai pineapple fried rice best with left-over rice from the day before. So cook the rice according to the instructions on the package and store it in an air-tight container in the fridge until you use it. Cook the frozen peas for about 7 minutes.
  • In a large pan, heat the oil and sauté the onion for about 3 minutes. Then add the garlic, the carrots, and the bell pepper. Cook for 3 minutes.
  • Then stir in the cooked rice and season with the curry powder and the soy sauce. Next, add the pineapple, the peas, the green onion, and the cashews. Season with salt, black pepper, and if using red pepper flakes. Stir until well combined. Serve with fresh cilantro. Enjoy!

3 to 4 tablespoons canola or vegetable oil (olive oil may be substituted)
1 to 2 tablespoons sesame oil
1 pound medium-large fresh shrimp*, cleaned (approximately 15-20 count shrimp)
1 medium red bell pepper, diced small
1 cup peas and diced carrots blend (frozen and thawed; or canned and drained)
1/2 cup corn (frozen and thawed; or canned and drained)
2 to 3 garlic cloves, finely minced or pressed
1 teaspoon ground ginger, or to taste
3 large eggs, lightly beaten
4 cups cooked rice (I use white; long-grain, or brown may be substituted. To save time use two 8.8-ounce pouches cooked and ready-to-serve rice)
1 to 1 1/2 cups fresh diced pineapple (one 8-ounce can drained pineapple tidbits may be substituted)
2 to 3 green onions, trimmed and sliced into thin rounds
1/4 cup reduced-sodium soy sauce*, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
red chili flakes, optional and to taste for a bit of heat

Steps:

  • To a large non-stick skillet or wok, add the oils, shrimp, and cook over medium-high heat for about 3 minutes, flipping halfway through. Cooking time will vary based on size of shrimp; don't overcook.
  • Remove shrimp with a slotted spoon (allow oils and cooking juices to remain in skillet) and place shrimp on a plate; set aside.
  • Add the red bell pepper, peas, carrots, corn, and cook for about 2 minutes, or until vegetables begin to soften, stir intermittently.
  • Add the garlic, ginger, and cook for 1 minute, stir intermittently.
  • Push vegetables to one side of the skillet, add the eggs to the other side, and cook to scramble, stirring as necessary.
  • Turn the heat to low, add the cooked rice, stir to combine, and allow it to warm through for a minute or two. Tip - If mixture seems at all dry, add additional oil to taste.
  • Add the shrimp back in, the pineapple, green onions, evenly drizzle with soy sauce (use less at first if you're very sensitive to salt or soy sauce), evenly season with pepper, and optional red pepper flakes, and stir to combine.
  • Taste and check for seasoning balance. If desired, add additional soy sauce to taste (I find it necessary to use about 1/3 cup in total for this recipe).

  • The very best thing you can do to elevate homemade fried rice is use day old rice. This will help to ensure your dish doesn’t turn our soggy or clumpy. Just cook the cup of rice in two cups of water the day before you plan to use it and store in an air tight container in the refrigerator.
