2 ounces mezcal
1 ounce fresh lime juice
1 ounce simple syrup
3 pineapple wedges
Chile powder, for garnish

Steps:

  • Fill a cocktail shaker with ice and add the mezcal, lime juice and simple syrup. Shake vigorously for 10 seconds, then strain into a rocks glass over ice. Dip the pineapple wedges in chile powder and garnish the glass.

Yield Makes 2 drinks

Number Of Ingredients 7

8 (3/4- to 1-inch) chunks peeled pineapple
4 slices red jalapeño chile with seeds
1/2 cup 100% blue agave silver tequila
3 tablespoons fresh lime juice
3 tablespoons Simple Syrup
2 tablespoons Cointreau or other orange liqueur
2 cups ice cubes, divided

Steps:

  • Place pineapple chunks and red jalapeño slices in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix in tequila, lime juice, Simple Syrup , and Cointreau, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Divide remaining ice between 2 tall glasses. Pour Margarita mixture over.

1 cup pineapple, cubed
1 cup pineapple juice
2 limes lime
½ tablespoon chili powder

chili powder, for rimming the glass
1 slice pineapple, sliced

Steps:

  • Rim the top of a tall glass by dipping it first in pineapple juice, then in chili powder.
  • In the blender, add the ice, tequila, sour mix, orange liqueur, pineapple, pineapple juice, lime juic,e and chili powder.
  • Serve and garnish with a pineapple slice.
  • Enjoy!

  • Wet the rim of 4 short glasses and dip in a mixture of 2 tablespoons coarse salt and 1 1/2 teaspoons chili powder. Fill a cocktail shaker two-thirds of the way with ice. Add 1 cup tequila, 1 cup pineapple juice, 1/2 cup fresh lime juice and 11/2 tablespoons agave nectar. Shake well, then strain into the glasses.

1/2 cup chopped fresh pineapple
1 Fresno chile, chopped
3 ounces tequila (recommended: Hornitos Reposada)
Ice cubes
Pineapple, for garnish

Steps:

  • Combine the pineapple juice, pineapple, chile and tequila in a blender and blend until smooth. Serve over ice in a tall glass. Garnish with a pineapple wedge and serve.

The chef who introduced me to this idea, Lindsey Bareham, recommends serving this recipe with drinks before dinner. To really make the dish shine you need to have a chilli with a bit of kick in it, although it doesn't have be one of the really firey ones like a habanero or bird's eye.

  • Core and peel the pineapple and cut into bite-sized chunks.
  • Trim and split the chilli, scrape away the seeds and slice into small strips.

  • Serve on a plate with toothpicks.
  • Every bite should have a bit of chilli.

1/4 cup lemon juice
