This beautiful golden Pineapple Cake is full of pineapple flavor right down to the glaze. Quick and easy to make using a cake mix as the base, you'll love this perfect bundt cake for any occasion.

1 box 15.25 ounce yellow cake mix (unprepared)
1/2 cup butter (melted)
3/4 cup pineapple juice
3 eggs
1 cup canned crushed pineapple (no need to drain)
3/4 cup pineapple juice
2 cups powdered sugar (divided)
1/4 cup butter

Steps:

  • Preheat the oven to 350F degrees. Prepare a bundt pan by greasing it well with non-stick baking spray (or easy release baking spray which contains flour).
  • In a large mixing bowl, use an electric mixer on low speed to combine cake mix, ½ cup melted butter, and pineapple juice, mixing just until smooth.
  • Add the eggs and crushed pineapple (with the juice) and mix with the electric mixer on medium to high speed until well combined.
  • Pour the cake batter into the prepared bundt pan.
  • Bake the cake at 350F for 35-40 minutes until a toothpick placed into the cake comes out clean.
  • While the cake is baking, combine ¾ cup pineapple juice, ½ cup of the powdered sugar, and the ¼ cup butter in a medium saucepan and heat over medium heat, stirring often, until the glaze begins to simmer. Remove the glaze from the heat.
  • When the cake is fully baked, remove it from the oven and poke holes all over the cake in the pan to allow the glaze to soak into the cake. Pour 1/3 of the glaze over the cake in the pan. Set the cake aside to cool in the pan for 15 minutes.
  • Invert the pan onto a large plate or cake pedestal. Lift the pan away from the cake.
  • Whisk the remaining 1 ½ cups of powdered sugar into the glaze, then brush it over the whole cake.
  • Slice the cake and serve at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan with vegetable oil spray.
  • In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended.
  • Pour batter into prepared 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown. Let cool.
  • Serve with whipped topping

2 cups flour
2 cups sugar
1 (20 ounce) can crushed pineapple, undrained
1 teaspoon vanilla
1 teaspoon baking soda
1 cup powdered sugar
1/2 teaspoon vanilla
1 tablespoon milk
2 tablespoons pineapple juice

Steps:

  • Combine flour, sugar, vanilla, baking soda.
  • Gently mix in undrained can of crushed pineapple. Reserve 2 tablespoons of the pineapple juice to use in the glaze.
  • Pour into greased and floured 9x13 pan.
  • Bake at 350 for 35-40 minutes, until center is set. Let cool for 5 minutes.
  • Frosting: In a separate bowl, combine powdered sugar, vanilla, pineapple juice, and milk. Add more milk if the mixture is too thick. It should be a little runny.
  • Pour glaze over hot cake.

1/3 cup oil
1 cup crushed pineapple, with a little juice
1/2 cup sour cream
1 tablespoon crushed pineapple (a little juice and a little fruit)
1/2 cup sifted powdered sugar

Steps:

  • FOR THE CAKE: Beat together all the ingredients, for 4 minutes, at medium speed. Spread batter evenly into a greased 10 inch tube pan and bake in a 350°F oven for 45 to 50 minutes, or until a cake tester, inserted in center, comes out clean. Allow to cool in pan.
  • When cook, remove from pan and brush top with Pineapple glaze, and allow a little to drip down the sides. Serves 10.
  • FOR THE GLAZE: Stir together pineapple and sugar until blended.
  • NOTE: This cake is a good choice for a ladies luncheon, for it is very light and very delicious.

9 maraschino cherries
3/4 cup brown sugar
1/2 cup soft margarine
3/4 cup white sugar

2/3 cup milk

Steps:

  • Preheat oven to 350°F.
  • Melt first amount of margarine in a 9x9-inch pan.
  • Arrange rings over melted butter.

1 cup butter

1 1/2 cups powdered sugar
1 cup crushed pineapple, drained

Steps:

  • For the Cake:.
  • Grease and flour a 10-inch tube pan.
  • Cream shortening, butter and sugar in a mixer until light and fluffy (at least 3 minutes).
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour and baking powder, then add to creamed mixture alternately with milk and vanilla, beginning and ending with the dry ingredients.

GLAZE
1/3 cup butter
1 cup crushed pineapple
1-1/2 cups powder sugar

Steps:

  • 1. Preheat oven to 350°F. Grease and flour Bundt pan. Set aside 1 cup of crushed pineapple for glaze. In a large mix bowl combine cake mix, pudding mix, eggs, oil and remaining pineapple. Mix on medium speed for 3 minutes. Pour into prepared pan. Bake for 50 to 60 minutes or until a toothpick inserted in center comes out clean.
  • 2. For glaze; in small saucepan melt butter add the 1 cup crushed pineapple and powder sugar, stir until sugar is dissolved. Spoon glaze over cooled cake.
