Super easy to bring together, this pesto chicken and cheese dip recipe is the perfect meal to serve up when you aren't in the mood for cooking. - Preheat the oven to 350 degrees and spray a 2.5 quart casserole dish with nonstick cooking spray.
- Combine all ingredients in a bowl, except one cup of mozzarella and the tomatoes. Mix well.
- Gently fold in the tomatoes.
- Place the chicken mixture in the prepared casserole dish, spread it even, top with the leftover mozzarella cheese, and bake for 25-30 minutes or until the cheese has melted and is bubbling.
- Top with extra peppers, tomatoes, and Italian seasoning if desired and enjoy!

- Prepare pesto sauce according to package direction.
- Heat oven to 350 degrees.
- Spray rectangular dish (9 by 12 inch) with no-stick spray.

- Pound out chicken breasts with meat mallet or rolling pin.
- Take unseasoned breadcrumbs and add salt, pepper, garlic salt, parmesan cheese, thyme, and any other herbs you desire to the crumbs. (You may decide amounts to your taste, I use about a teaspoon of the spices and a tablespoon or 2 of the parmesan depending on how many breadcrumbs you use).
- Combine homemade or store bought pesto (I prefer my homeade pesto) with shredded mozzarella cheese in a cup making sure to coat all of the cheese evenly with the pesto.
- Spread a generous amount of the cheese mixture on the pounded out chicken breast.
- Roll the chicken breast up and secure with toothpicks.
- Dip the chicken breast in milk and then into the seasoned bread crumbs.
- Place chicken onto a greased pan and place into a 400°F oven for approximately 20 minutes or until the chicken juices run clear.

- Heat oven to 450 degrees.
- In small bowl of a food processor, combine first 6 ingredients, except only use 1/4 cup of the Parmesan.
- Set aside.
- Butterfly the chicken breasts.
- Divide the cheese mixture on the chicken.
- Fold as with a book.
- Place on a non stick baking sheet.
- Bake for 15 minutes.
