Gluten-free crepes are so quick and easy to make, with just a few basic ingredients from your pantry! Great for either sweet or savory recipes.

2 cups gluten-free all-purpose flour
½ teaspoon salt
½ teaspoon xanthan gum
4 eggs
1 ½ cups milk
¼ cup butter, melted

Steps:

  • Combine flour, salt, and xanthan gum in a bowl. Whisk eggs and milk together in a separate bowl. Make a well in the flour mixture and pour egg mixture in the center; mix until slightly combined. Add melted butter and mix until a soft batter is formed, 1 to 2 minutes. Cover and let stand for 45 minutes.
  • Melt butter in an 8-inch skillet over medium heat. Pour 2 tablespoons of batter into the skillet and immediately rotate the skillet to spread batter out in a thin layer. Cook until the top of the crepe is no longer wet and the bottom has turned light brown, 1 to 2 minutes. Run a spatula around the edge of the skillet to loosen crepe; flip crepe and cook until the other side has turned light brown, about 1 minute more.

This is a crepe recipe that I modified to be gluten free. I made this recently for my family and they couldn't tell that it was gluten free. I fill mine with sliced strawberries and top with whip cream, but you can add just about anything you like to the filling. We started cooking gluten free when we determind that my wife and I are allergic to gluten.

2 cups gluten-free flour
1 teaspoon xanthan gum
1/2 teaspoon salt
2 eggs
3 cups milk
1 tablespoon vanilla extract
2 tablespoons oil

Steps:

  • Combine flour, xantham gum and salt. Add eggs one at a time, beating well after each addition. Add Vanilla Extract. Add milk to make a thin batter. Beat until smooth. Stir in oil.

If you haven't tried chestnut flour as a substitute for wheat flour, this is the perfect recipe for you. Chestnut flour is rich in carbohydrates, low in fat, and its tender texture and sweet nutty flavor is perfect for crepes and pancakes alike. This is Wild Oats recipe, soon to be part of Whole Foods I believe.

1 1/2 cups chestnut flour, sifted
1/8 teaspoon salt
1 tablespoon sugar
1 1/4 cups whole milk
1 teaspoon vanilla extract
3 large eggs
6 tablespoons unsalted butter, melted

Steps:

  • Mix flour with salt and sugar in a bowl.
  • Whisk together milk, vanilla and eggs in separate bowl.
  • Pour into flour mixture. Whisk to incorporate.
  • Drizzle in two tablespoons butter, and mix well.
  • Heat a nonstick 8-inch pan over medium heat.
  • Swirl in a teaspoon of melted butter.
  • Add about 1/4-cup batter and swirl until the batter covers the bottom of the pan.
  • Cook until batter is dry, set and begins to brown around the edges.
  • Loosen the crepe from the pan with a spatula, and flip.
  • Cook for about 30 seconds. Remove from pan. Repeat until batter is gone.
  • TIP: To keep crepes warm, keep in a 200°F on a baking sheet or plate until ready to serve. Also, when choosing a savory filling, omit the sugar and vanilla from the recipe.
