These are the perfect steak fries....soft and creamy in the middle and crispy on the outside. Potato perfection!

3-4 Tablespoons oil (I used coconut)
6 potatoes cut into 8 wedges each
salt and pepper to taste.

Steps:

  • Preheat oven to 450 degrees F.
  • Add coconut oil to a large cookie sheet and put into the oven while it preheats.
  • Cut your potatoes into 8 long steak fries each.
  • Microwave for 5 minutes.
  • When oven is ready, swirly the melted coconut oil in the pan and then add fries to cookie sheet. Be careful because the coconut oil will be very hot as will the cookie sheet.
  • Make sure the fries are well distributed and sprinkle with salt and pepper.
  • Cook for 30 minutes.
  • Flip and then raise the heat to 525 degrees and cook for 10 more minutes or less.
  • Check to make sure your fries do not burn and are your desired crispiness.
  • Oven temperatures may vary so check your fries towards the end.

2 tablespoons olive oil
1 tablespoon grill seasoning
4 medium russet potatoes, scrubbed and cut into eighths
2 sheets aluminum foil
cooking spray

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
  • Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
  • Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

4 Idaho potatoes, scrubbed clean and sliced into 1/2-inch thick slices
3 tablespoons vegetable oil
2 tablespoons butter
Salt and pepper

Steps:

  • In a large skillet heat oil over medium high heat. Add butter and stir until melted. Add potatoes and toss to coat. Cook the potatoes for 10 minutes, occasionally tossing and stirring them. Transfer potatoes to a baking sheet and roast in oven at 400 degrees for another 20 minutes. Bake until potatoes are golden brown and crispy. Season with salt and pepper.

THE PERFECT STEAK WITH JOJO FRIES

Two 14-ounce rib eye steaks (1 inch thick)
Kosher salt and freshly ground black pepper
4 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
6 sprigs fresh thyme
Canola oil, for deep frying
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 cup all-purpose flour
2 russet potatoes, cut into wedges (about 8 wedges each)
4 tablespoons unsalted butter, melted, plus 2 tablespoons unsalted butter
Olive oil, for cooking

Steps:

  • Preheat the oven to 225 degrees F. Allow the chill to come off the steaks for 30 minutes prior to cooking, then pat them dry with paper towels.
  • Sprinkle the steaks on both sides with salt and pepper. Place on a sheet tray, then scatter the garlic cloves and herbs evenly on top of the two steaks. Roast until the steaks are rare and the internal temperature reaches 120 degrees F, about 15 minutes.
  • Meanwhile, heat a pot of several inches of canola oil to 375 degrees F over medium heat. Set up a sheet tray with a roasting rack. Whisk the garlic powder and paprika into the flour in a bowl and season with salt and pepper. Pour the flour mixture into a gallon-sized bag.
  • Melt 4 tablespoons butter in a small saucepan.
  • Dip each potato wedge in the melted butter, then drop into the bag of flour. Shake the potatoes in the flour mixture, evenly coating, then place on the roasting rack. Let sit until ready to fry.
  • Preheat a cast-iron skillet over medium-high heat until hot, then add a film of olive oil followed by the steaks. Sear the steaks on one side until deep golden brown and crusty, 3 to 5 minutes. Flip and sear on the other side until golden brown, another 2 to 3 minutes. During the final minute of cooking, add the remaining 2 tablespoons butter to the pan along with the herbs and garlic. When the butter has melted, baste the steaks. Remove to a cutting board to rest for at least 5 minutes or up to 10 minutes.
  • Meanwhile, finish making the JoJo fries: Drop the coated potatoes in the hot oil in small batches and fry until golden brown and crispy, 3 to 5 minutes, bringing the oil back to 375 degrees F in between batches. Remove to the roasting rack and season with salt.
  • Slice the rib eyes and place on a plate. Serve with a pile of JoJo fries.

1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 -6 potatoes, cut into wedges

Steps:

  • Preheat oven to 400 degrees.
  • Combine oil, paprika, cumin, salt, and pepper in a large bowl.
  • Place potato wedges in the bowl and coat with spices.
  • Transfer potato wedges to a large ungreased baking sheet (do not overcrowd).
  • Bake until the potato wedges are golden and crisp (about 40 minutes). Serve immediately!

  • To prepare the potatoes: wash and peel the potatoes. Cut them into thick wedges. (See Note 1 for cutting instructions). In a large bowl, soak the potatoes in cold water for at least 1 hour, or up to overnight! (Refrigerate, if soaking for more than 4 hours.)
  • To make the secret mixture: combine water and cornstarch in 1-cup measuring cup. Microwave for 1 minute or so, then mix it well until smooth, thick, opaque and gelatinous. Then stir in paprika and garlic powder. (I know, this sounds SO weird, but this's what really make these steak fries the best! I learned this trick from this America's Test Kitchen video and it was a game-changer!!!)
  • To cook the potato wedges: preheat the oven to 425°F. Spray 2 baking sheets with non-stick cooking spray and divide the oil between 2 baking sheets. Spread the oil evenly all over. (I use this pastry brush for this step.)
  • Drain the potato wedges and dry them well with paper towels. Coat the potatoes with the cornstarch mixture.
