PENNE PASTA WITH SUN-DRIED TOMATOES AND PESTO
A perfect dish to make when you only have a few minutes to prepare a healthy and delicious meal. Sun-dried tomatoes and pesto are a perfect combination.

Steps:
- Re-hydrate the sun-dried tomatoes by placing them in a small bowl, then pour 1 cup of water over the tomatoes. Cover and microwave for one minute, then allow them to sit for about 5 minutes until they soften.
- Cook the penne pasta according to the package instructions.
- In a small skillet heat the pesto sauce, then stir in the nutmeg.
- Next, add the cooked pasta to the pesto mixture, then stir to coat evenly. Top with sun-dried tomatoes
- Finally, sprinkle with grated Parmesan cheese, and parsley.

- PREPARE pasta according to package directions, adding sun-dried tomatoes to boiling pasta water for last two minutes of cooking time; drain.
- MEANWHILE, COMBINE evaporated milk, cheese, basil, garlic powder, salt and pepper in medium saucepan. Cook over medium low heat, stirring occasionally, until cheese is melted. Remove from heat.
- ADD pasta and sun-dried tomatoes to cheese sauce; stir until combined.
BACON AND MUSHROOM PENNE WITH SUN-DRIED TOMATO PESTO
This is a recipe that I found online. I have modified this recipe slightly by adding bacon, mushroom and sunflower seed. It works equaly well with chorizo instead of bacon. Sunflower seed is optional, it gives a bit of texture to the dish.

- Cook pancetta in oil in a 12-inch heavy skillet over medium-low heat, stirring occasionally, until browned and crisp, 6 to 10 minutes. Transfer pancetta with a slotted spoon to paper towels to drain. Pour off all but 2 tablespoons fat from skillet. Add onion, garlic, and 1/4 teaspoon each of salt and pepper and cook, stirring occasionally, until onion is softened and lightly browned, about 8 minutes. Stir in cream, sun-dried tomatoes, and pancetta and simmer until slightly thickened, 2 to 3 minutes. Remove from heat, then add arugula and stir until just wilted, about 1 minute.

PENNE WITH PESTO CREAM SAUCE AND SUN-DRIED TOMATOES
easy to make, and tastes like you put a lot of effort into it. I found the recipe in the Chicago Sun-Times, and modified it a little. You can easily substitute some other kind of pasta for the penne, and add or subtract other ingredients. Adding meat would make it a more complete meal, but it's pretty filling without.

- Fill a large pot with water and place over medium-high heat on the stove. Bring the water to a boil. Add salt generously. Add pasta and cook for 1 minute less than the package directions. Reserve 1 cup of pasta water in case you want to add it to the dish later. Set that aside.
- While the pasta noodles are cooking you can toss your sun-dried tomatoes, the oil from the sun-dried tomatoes, the garlic, salt, white pepper, sweet basil, half of the parmesan cheese, and walnuts in a food processor. Pulse until smooth. If the mixture is still too thick add a touch of olive oil to start and pulse while adding the oil until you get the desired consistency you like. It's always best to start with a little, you can always add more but you can't take away. So go easy initially and add oil to taste if needed.
- Transfer pesto to a large skillet or non-stick pan and heat on medium heat just before adding the cooked noodles. Then use a slotted spoon to lift out the noodles and transfer them to the large skillet or non-stick pan. Do not rinse the noodles.
- Toss the pasta together in the skillet or non-stick pan. Start by adding about 1/4 cup of the reserved pasta water and then toss the pasta again. If you need more pasta water to thicken the pasta you can add until you get the desired thickness you like. I added almost all of it to mine to thicken it.

- To roast the vegetables: Preheat oven to 425 degrees Fahrenheit. Whisk together the olive oil and balsamic vinegar. On a half-sheet pan or other large, rimmed baking sheet, combine the diced zucchini, yellow squash, bell pepper and onion. Drizzle the olive oil mixture over the vegetables, sprinkle with salt and pepper and toss with your hands until the vegetables are evenly coated. Arrange the vegetables in a single layer. Bake for about 30 to 40 minutes, tossing halfway, until they are cooked through and golden.
- To cook the pasta: Bring a large post of salted water to boil. Cook pasta until al dente, according to package directions. Before draining, reserve about 1 cup pasta cooking water. Transfer the cooked pasta to a large serving bowl.
- To make the pesto: First, toast the almonds in a small skillet over medium-low heat, stirring frequently, until fragrant and starting to turn golden on the edges, about 4 minutes. In the bowl of your food processor (a blender might work, too), combine the sun-dried tomatoes and their oil, the basil, toasted almonds, garlic, lemon juice, 1/4 teaspoon salt and a pinch of red pepper flakes.
- Blend, scraping down the sides as necessary, until the contents are mixed together and roughly uniform. Drizzle in the olive oil while running the machine and blend until you’ve reached a relatively smooth, pesto-like consistency. If you’d like to add Parmesan, stir it into the pesto now. Taste and stir in additional salt and pepper, if necessary. The pesto will be thick, but we’ll thin it out with cooking water soon.
