BLUEBERRY-WHITE CHOCOLATE CHIP - PECAN MUFFINS



Blueberry-White Chocolate Chip - Pecan Muffins image

The cooking time is actually 23 - 28 min depending on the size of the muffins. Dried blueberries can be used in place of fresh by soaking 1 cup of dried blueberries for 1 hour in enough water to cover them.

4 c flour
6 tsp baking powder
1 c sugar
1/2 tsp salt
1 c butter
2 large eggs (slightly beaten)
1 c +2 tablespoons milk
2 tsp vanilla extract
1 tsp almond extract
1+1/14 c white chocolate chips
1/2 c chopped pecans
2 c blueberries

Steps:

  • 1. Preheat oven to 375F. Grease cups of muffin tin or line with baking cups.
  • 2. Combine flour, baking powder, sugar and salt in a large bowl. Cut in butter using two knives or a pastry blender until mixture resembles coarse crumbs. Make a well in the dry ingredients and add eggs, milk and extracts, stirring just until the liquid is absorbed. Gently fold in orange rind, if using, berries, pecans and white chocolate chips, then fill muffin cups with the mixture.
  • 3. Bake 23 to 30 minutes, until the center springs back to the touch. Yield 24 medium or 12 large muffins.
  • 4. f desired a streusel topping can be added using the following: ¼ cup sugar 4 Tablespoons all-purpose flour 1 teaspoon ground cinnamon 2 tablespoons cold butter To prepare blend sugar, flour, cinnamon and butter together and sprinkle evenly over top of muffins before baking.

1 cup whole wheat flour
½ cup white sugar
½ cup brown sugar
1 (3.5 ounce) package instant vanilla pudding mix
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
⅓ cup vegetable oil
1 egg
¾ cup semisweet chocolate chips
1 tablespoon all-purpose flour
4 ounces chopped pecans

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin.
  • Combine 1 cup all-purpose flour, whole wheat flour, white sugar, brown sugar, pudding mix, baking powder, and salt in a large bowl. Beat milk, oil, and egg together in a separate bowl. Stir into flour mixture until combined.
  • Coat chocolate chips with 1 tablespoon flour and fold into the batter. Fold in pecans. Fill muffin cups 3/4 full of batter.
  • Bake in the preheated oven until a toothpick inserted into a muffin comes out clean, 18 to 20 minutes. Cool in the tin briefly before removing to a wire rack to cool completely.

1 cup pecans, chopped
1 cup brown sugar, firmly packed
1/2 cup flour
2 large eggs
1/2 cup butter, melted
1/2 cup chocolate chips
3 tablespoons sugar
2 tablespoons brown sugar

Steps:

  • Combine pecans, brown sugar, flour and chocolate chips.
  • Make a well in center of mixture.
  • Beat eggs until foamy.
  • Stir together eggs and butter.
  • Add to dry ingredients.
  • Stir until moistened.
  • Spoon batter into cups, makes 4 large muffins, or 6 smaller muffins.
  • Mix topping ingredients together.
  • Sprinkle on top of each muffin.
  • Bake at 350°F 20-25 minutes.
  • Remove from pan immediately.
  • Serve warm.

1 ¼ cups white sugar
½ cup butter, softened
¼ cup milk
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda

1 cup semisweet chocolate chips
½ cup milk
½ teaspoon vanilla extract
18 candied pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease or line 18 muffin cups with paper liners.
  • Combine flour, sugar, butter, milk, eggs, vanilla extract, baking soda, and salt in a large mixing bowl. Mix using a rubber spatula until combined; set aside.
  • Place chocolate chips, milk, and vanilla extract in a microwave-safe bowl. Stir. Microwave until melted, about 30 seconds. Mix together until it is a thick, dark chocolate sauce. Stir into flour mixture until completely combined and light brown in color.
  • Spoon batter into the prepared muffin cups, filling each 1/2 to 3/4 full. Place a candied pecan onto the top of each muffin.
  • Bake in the preheated oven until tops spring back when lightly pressed, 25 to 30 minutes.

1/3 cup packed light brown sugar

1 egg
1/3 cup unsalted butter, melted
2 teaspoons vanilla extract
1 cup half-and-half
1 cup white chocolate chunks (or chips)
1/2 cup chopped pecans, toasted

Steps:

  • Preheat oven to 400 degrees; line a 12-cup muffin pan with paper liners.
  • In a large bowl, whisk together oats, flour, baking powder and salt.
  • In a medium bowl, whisk together brown sugar, sugar, egg, butter and vanilla until well blended.
  • Whisk in half-and-half until blended.
  • Add the egg mixture to the flour mixture and stir until just blended.

1 lb white chocolate, finely chopped
1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 cup pecans, toasted and coarsely chopped (can also use pistachios)

Steps:

  • Line a cookie sheet with aluminum foil. In a double boiler melt the chocolate with the butter and oil over hot (not simmering) water, stirring constantly until the chocolate is melted and smooth.
  • Remove the top part of the double boiler and stir the nuts into the melted chocolate . Pour the chocolate mixture out onto the prepared cookie sheet. Spread randomly to the desired thickness. Refrigerate 20-30 minutes, or until set.
  • Slide a metal spatula under the chocolate to loosen from the foil. Break into uneven pieces . Store in an airtight container or in the refrigerator. Prep time includes refrigeration time.

1 teaspoon kosher salt
1 teaspoon baking soda
1 stick plus 6 tablespoons unsalted butter, room temperature
1 1/4 cups packed dark-brown sugar
1/4 cup plus 2 tablespoons granulated sugar
1 large egg, plus 1 large egg yolk, room temperature
1 1/2 teaspoons pure vanilla extract
8 ounces white chocolate, chopped into 1/2- to 3/4-inch pieces
8 ounces pecans, toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk together flour, salt, and baking soda.
  • In a large bowl, beat butter with both sugars on medium speed until pale and fluffy, about 4 minutes. Beat in egg, then yolk, until thoroughly incorporated. Beat in vanilla. Reduce speed to low and gradually add flour mixture, beating until just combined. Beat in white chocolate and pecans until just combined.
  • Using a 4-ounce (2-inch) ice cream scoop, drop scoops of dough onto parchment-lined baking sheets, spaced 3 inches apart (2 scoops per sheet). Gently press each to flatten.
  • Bake cookies, rotating sheets halfway through, until golden but still soft in centers, about 14 minutes. Let cool slightly on sheets. Serve warm, or transfer to wire racks and let cool completely. (Cookies can be stored in an airtight container at room temperature up to 3 days.)

½ cup pecan halves

Steps:

  • Preheat oven to 300 degrees F (150 degrees C) Grease cookie sheets.
  • In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs and vanilla, then stir in the pumpkin puree until well blended. Combine the flour, baking soda, and pumpkin pie spice; stir into the pumpkin mixture. Fold in the white chocolate and pecans. Drop by heaping spoonfuls onto the prepared cookie sheets.
