PEANUT BUTTER AND PEPPERONI PIZZA

Yes, you read that right! Peanut butter is the ingredient you didn't know you needed on pepperoni pizza. Inspired by a pie from Zorbaz on the Lake, one of my family's favorite spots in Minnesota, my version gets baked in a cast-iron skillet and topped with fresh jalapenos and "hot" (chile-spiked) honey.

1 tablespoon olive oil or neutral oil
1 pound refrigerated pizza dough, at room temperature
1/3 cup creamy peanut butter
1/2 cup marinara sauce
2 cups shredded whole-milk mozzarella
1 cup mini pepperoni slices (or regular pepperoni slices)
1 large jalapeno, seeded and thinly sliced (about 1/3 cup)
Hot honey, such as Mike's (see Cook's Note), for serving, or honey mixed with hot sauce
2 tablespoons red wine vinegar, white wine vinegar or apple cider vinegar
1 clove garlic, lightly crushed
1 teaspoon Dijon mustard, or grainy or yellow mustard
1 teaspoon regular honey
Kosher salt and freshly ground black pepper
1/4 cup olive oil or neutral oil
1 head romaine lettuce, roughly chopped (about 3 cups), or 3 cups mixed lettuce
1 head radicchio, roughly chopped (about 2 cups), optional
1/2 cup cherry or grape tomatoes, halved
1/4 cup pepperoncini, drained and sliced, or pickled banana pepper rings
1/4 cup thinly sliced red or yellow onion

Steps:

  • For the pizza: Preheat the oven to 450 degrees F.
  • Grease a 12-inch cast-iron skillet with the oil. Place the pizza dough in the center and spread evenly to cover the bottom and 1 inch up the sides. Spread the peanut butter evenly over the dough followed by the marinara sauce. Sprinkle with the mozzarella followed by the pepperoni and then the jalapeno.
  • Bake until the cheese melts and browns and the edges are crisp, about 20 minutes. (This is a good time to start the salad.) Remove from the oven and let sit for 5 minutes, then drizzle with hot honey before serving.
  • For the salad: Whisk together the vinegar, garlic, mustard, honey, 1/2 teaspoon salt, pinch of black pepper and the oil in a medium bowl until combined. Set aside and let the garlic infuse the dressing, about 5 minutes. Remove the garlic and add the lettuce, radicchio if using, tomatoes, pepperoncini and onion; lightly toss to coat in the dressing. Serve with the pizza.

Fudge, peanut butter and toasted marshmallows all in one place -- what's not to love? Fun for the kids, sinful for adults! I prefer to use my own peanut butter cookie dough and just measure out the right amount. Cook time includes cookie cooling time.

1 (15 ounce) package peanut butter cookie dough
1/2 cup creamy peanut butter
3 cups mini marshmallows (more or less)
1/2 cup hot fudge, warmed
1/3 cup dry roasted peanuts, roughly chopped

Steps:

  • Cut cookie dough into half inch slices and arrange on greased 12-inch pizza pan.
  • Press together with fingers to make one big cookie, leaving a 1-1/2-inch border all around.
  • Bake at 350°F for 10-12 minutes.
  • Carefully spread peanut butter on hot cookie and leave to cool.
  • Just before serving preheat oven to 400°F.
  • Cover cookie with marshmallows and pop into the oven for 5-8 minutes so the marshmallows toast.
  • Remove and drizzle with hot fudge sauce, then sprinkle with peanuts.
  • Cut into wedges and serve.

1 pkg. (4 oz.) BAKER'S Unsweetened Chocolate
1-3/4 cups sugar, divided
2 eggs
1/4 cup milk
1 tsp. vanilla
1 cup flour
1/2 tsp. salt
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup creamy peanut butter
3 large bananas, peeled, sliced
1/4 cup coarsely chopped PLANTERS COCKTAIL Peanuts
2 oz. BAKER'S Semi-Sweet Chocolate
2 tsp. butter or margarine

Steps:

  • Preheat oven to 350°F. Line 12-inch pizza pan with aluminum foil; spray with cooking spray. Place 1/2 cup butter and the unsweetened chocolate in heavy 3-qt. saucepan; cook on very low heat just until chocolate is melted, stirring constantly. Cool. Stir in 1-1/2 cups of the sugar. Add eggs, 1 at a time, stirring until well blended after each addition. Stir in milk and vanilla. Add flour and salt; mix well. Spread evenly into prepared pan.
  • Bake 25 to 30 min. or until toothpick inserted in center comes out clean; cool completely.
  • Beat cream cheese, peanut butter and the remaining 1/4 cup sugar with electric mixer on medium speed until well blended. Spread onto crust. Arrange banana slices over cream cheese mixture; sprinkle with peanuts. Place semi-sweet chocolate and the 2 tsp. butter in heavy saucepan; cook on very low heat just until chocolate is melted and mixture is well blended, stirring constantly. Drizzle over pizza.

1 cup warm water
1 teaspoon honey
2 1/4 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
1 cup creamy peanut butter
1 cup chocolate chips
2 cups miniature marshmallows
5 graham crackers, broken up

Steps:

  • In a small bowl, combine the warm water, honey and yeast. Allow to sit for 10 minutes to proof the yeast. It should be foamy.
  • In a large bowl, combine the flour, salt, olive oil and the yeast mixture. Stir with a wooden spoon until the dough begins to come together. Transfer to a lightly floured work surface and knead by hand until a soft smooth dough forms, about 5 to 8 minutes. Form the dough into a ball and place inside a lightly greased large bowl. Cover loosely with plastic wrap and a damp kitchen towel and allow to rest until doubled in size, for 2 hours.
  • Once done, gently punch the dough down and then transfer to a lightly floured work surface. Cut into three even pieces and form into balls. Keep them covered with a kitchen towel.
  • Working with one at a time, roll out into a rectangle or a circle. Brush the surface evenly with olive oil.
  • Preheat a large stovetop grill pan or an outdoor grill over medium heat. Once hot, carefully place the pizza dough onto the grill, oil side down. Then brush the top side with oil as well. Cook until the dough begins to puff up slightly and grill marks form, about 5 to 8 minutes. Carefully flip over and continue to grill on the second side for about 3 to 5 minutes. Transfer to a baking sheet and then continue grilling the rest of the pizza dough.
  • Spread the grilled pizza dough with peanut butter and then top with chocolate chips and marshmallows. Return to the grill and cook over low heat with the lid on until the chocolate has melted slightly and the marshmallows have browned somewhat. Keep an eye on it at this stage so that it doesn't burn. If you use a stovetop grill pan, you can do this stage in a preheated 350°F oven for 5 minutes.
  • Transfer the pizza to a serving platter or large wooden cutting board and then top with the crumbled graham crackers. Slice and serve warm.

1 ¾ cups whole milk
1 (3.9 ounce) package instant chocolate pudding mix

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-inch pizza pan.
  • Stir cookie mix, egg, oil, and water together in a bowl until a soft dough forms. Place dough on the pan; spread out to look like a pizza crust.
  • Bake in the preheated oven until edges are light golden brown, about 15 minutes. Let cool.
