CINNAMON PEACHES WITH SUGAR BISCUITS AND WHIPPED CREAM



Cinnamon Peaches with Sugar Biscuits and Whipped Cream image

1 tube or package store bought bake off biscuits
1/4 cup granulated white sugar
1 can sliced peaches in heavy syrup
1/2 teaspoon ground cinnamon
2 pinches ground nutmeg
1 pint heavy cream

Steps:

  • Place biscuits on a cookie sheet and sprinkle with 2 tablespoons sugar. Bake at 425 degrees F for 10 minutes or until golden at edges.
  • Heat peaches seasoned with cinnamon and nutmeg over low heat in a small saucepan.
  • Beat cream and remaining 2 tablespoons sugar with hand mixer until soft peaks form.
  • Split warm biscuits and fill with spoonfuls of warm peaches. Top with sugared biscuit top and serve with lots of fresh whipped cream.

This is a side dish my kids like a lot. You can use canned peaches from the store but I prefer the canned peaches my mother in law sends.

1 (28 ounce) can peaches in light syrup, drained
1 teaspoon cinnamon

Steps:

  • Open can of peaches.
  • Drain can of peaches.
  • Dump can of peaches into bowl.
  • Dump cinnamon onto peaches.
  • Stir peaches until cinnamon is all over 'em.
  • Eat peaches.
  • Goooood peaches.
  • If you want to look more fancy, put the peaches into individual little dessert bowls and sprinkle the cinnamon over the top like a garnish, or garnish with orange zest. You can also sub Chinese 5 spice powder for the cinnamon.
  • Best served at room temp, but can be made in advance and chilled.

4 large ripe freestone peaches
Eight 3-inch cinnamon sticks
8 fresh mint leaves
4 tablespoons unsalted butter
1/4 cup firmly packed brown sugar
1/4 cup dark rum
1/2 teaspoon ground cinnamon
Pinch salt
Peach or vanilla ice cream, for serving

Steps:

  • Rinse the peaches and blot them dry with paper towels. Cut each peach in half and discard the pit. Then, cut each peach into quarters. Using a pointed chopstick or metal skewer, make a starter hole in the center of each peach quarter, working from the pit side to the skin side. Skewer 2 peach quarters on each cinnamon stick, placing a mint leaf between the 2 quarters.
  • Combine the butter, brown sugar, rum, cinnamon, and salt in a saucepan and bring to a boil over high heat. Let the glaze boil until thick and syrupy, about 5 minutes.
  • Prepare and preheat the grill to high. Brush and oil the grate. Next, place the skewered peaches on the hot grate and grill until nicely browned, 3 to 4 minutes per side, basting with the rum and butter glaze. Spoon any remaining glaze over the grilled peaches and serve at once. Peach or vanilla ice cream makes a great accompaniment.

Steps:

  • Place enough peaches that have been peeled, pitted and sliced to cover bottom of 8 x 11 baking pan.
  • Mix together sugar, flour and salt.
  • Stir in egg.
  • Place mixture on top of peaches.
  • Drizzle with melted butter.
  • Bake at 350 degrees for approximately 30 minutes or until done.

There are many foods that define summer: corn on cob, root beer floats, watermelon, berries, heirloom tomatoes, fresh basil...! However I was surprised there were no recipes posted on this site for simple peaches and cream! Here's a quick dessert/snack/breakfast item sure to please young and old alike. No extra sugar was added in order to take advantage of and to appreciate the natural sweetness of the peaches. I like to use doughnut peaches (also known as 'saucer' and 'UFO' peaches) but any variety will work. If the skin really bothers you, go ahead and peel the peach-I understand. Nectarines are really delicious prepared this way, too!

2 small doughnut peaches, unpeeled and sliced (*NO* canned peaches!)
3 tablespoons heavy cream (approximately-don't drown the peaches) or 3 tablespoons half-and-half (approximately-don't drown the peaches)
ground cinnamon, to garnish (or cardamom or freshly grated nutmeg)

Steps:

  • Slice up the peaches (I don't bother with peeling them.).
  • Arrange in a bowl and pour heavy cream on the top and around the edges.
  • If desired, sprinkle lightly with ground cinnamon (or freshly grated nutmeg or ground cardamom).
  • Take a whiff then enjoy and savor summer and its bounty!
