PEACH AND BASIL FROZEN DAIQUIRI

Steps:
- For the syrup: Boil 1 cup water, sugar and basil over medium heat in a small saucepan. Reduce the heat and simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the mixture to cool, about 15 minutes. Strain before using.
- Place the syrup, peaches, rum, liqueur and lime juice in a blender. Blend until smooth. Pour into ice-filled glasses and garnish with lime wedges and basil sprigs.
DAIQUIRI
Steps:
- If your glass is not chilled, do so by placing some crushed ice in it and set it aside while you prepare the cocktail.
- Place the 2 cups of crushed ice into a cocktail shaker. Pour the rum, lime juice, and simple syrup over the ice, cover, and shake well. Remove the ice from your serving glass and strain the drink into it. Serve immediately.
- Simple Syrup:
- 2 cups sugar
- 1 cup water
- Place the sugar and water into a small saucepan over high heat. Bring to a boil. Decrease the heat to medium and cook, stirring occasionally, until the sugar is completely dissolved, approximately 3 to 5 minutes. Remove from the saucepan and allow to cool completely. Syrup can be stored in an airtight container in the refrigerator for up to a month.

- Drain mango slices, reserving 1/2 cup liquid. Process mango slices and peaches in blender until smooth. Pour peach mixture into a large container.

- Making a frozen peach daiquiri is quite simple. The first step is to crush the ice in a blender, so the cocktail will look like a slushy when finished.
- Once you have crushed the ice, add the peaches, cut into small pieces, to the blender and start processing. Then add the sugar and, when a paste is created, it's time to add the white rum. This can be whatever brand you like. Pour a small amount in first, try it and add some more if needed.
- Now add a little lemon juice for a light acidic touch and once you have all the ingredients in a blender, process until you have the desired texture for your frozen cocktail.
- Now your frozen peach daiquiri is ready.
