1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
1 cup mashed ripe bananas (2 to 3 medium)
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup 2% milk
FROSTING:
1/3 cup creamy peanut butter
1/3 cup 2% milk
1-1/2 teaspoons vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine flour, baking powder and baking soda; add to creamed mixture alternately with milk, beating well after each addition. , Transfer to a greased 13x9-in. baking pan. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack., For frosting, in a small bowl, beat peanut butter, milk and vanilla until blended; gradually beat in confectioners' sugar until smooth. Spread over cake.

Ohh peanut butter and banana...in a CAKE! YUMMY! Another one of those grocery store recipe cookbook finds!

Number Of Ingredients 8

1 butter recipe yellow cake mix
1 (3 1/2 ounce) package instant vanilla pudding
1/4 cup water
1/3 cup oil
1 cup mashed ripe banana
3 eggs
3/4 cup creamy vanilla frosting (from can)
1/4 cup creamy peanut butter

Steps:

  • Heat oven to 350 degrees F.
  • Grease and flour a bundt pan.
  • In large bowl, combine all cake ingredients, beat on low speed until moistened, then beat 2 minutes at medium speed.
  • Pour batter into greased/floured pan.
  • Bake cake at 350 degrees F for 45-55 minutes, or until toothpick comes out clean.
  • (Cake will be moist on top.) Cool in pan 10 minutes.
  • Remove from pan and cool for 45 minutes, or until completely cooled.
  • Microwave frosting on high for 25-35 seconds, or until thin consistency.
  • Immediately stir in peanut butter.
  • Drizzle warm frosting over cake.

This snack cake is sweet enough on its own so I often enjoy it without the frosting. The frosting takes it over the top. Enjoy with tea or coffee!

⅔ cup sugar
½ cup sour cream
1 egg
2 Tbsp. unsalted butter, softened (almost melted)
2 ripe bananas, mashed well
1 tsp. vanilla
1 cup flour
¼ tsp. salt
½ tsp. baking soda
⅓ cup walnuts, chopped finely; reserve 2 Tbsp. for garnish (optional)

Steps:

  • Preheat oven to 350 degrees. Spray a square 8x8-in. pan with Baker's Joy. In the bowl of a stand mixer (or use a hand mixer) cream together the sugar, sour cream, egg, and butter until smooth. Add bananas and vanilla. Mix well. Add remaining ingredients and mix slowly until incorporated. Pour batter into prepared pan. Bake about 30 minutes or until a toothpick inserted in the center comes out clean. If frosting, cool completely before doing so. Garnish with reserved chopped walnuts.
  • Creamy Peanut Butter Frosting: Whisk together 1.5 cups powdered sugar, ½ cup peanut butter, 3 Tbsp. butter (room temperature), 3 Tbsp. milk, and ¼ tsp. vanilla until smooth. Frost cake or each serving. This makes more than you'll need for the cake--enjoy the leftovers on another baked treat. ????

I always seem to have "over-ripe" bananas that I try to use before they become way too mushy. I found this recipe in Good Housekeeping and tried it. All the other ingredients are staples in my pantry and it's a great way to use up those extra bananas -- my family thinks it is really delicious as well.

1 1/3 cups mashed fully ripe bananas (4 medium)
1 tablespoon fresh lemon juice
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1/2 cup butter, softened (or margarine)
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
6 tablespoons butter (no substitutions)
3 cups confectioners' sugar
5 tablespoons milk
2 teaspoons vanilla extract

Steps:

  • To prepare Banana Snack Cake:.
  • Preheat oven to 350°F Grease and flour 13" by 9" metal baking pan.
  • In small bowl, mix bananas, lemon juice, and vanilla. In a separate bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
  • In a large bowl, with mixer at medium speed, beat butter with granulated and brown sugars 5 minutes or until light and creamy, scraping bowl often with rubber spatula.
  • Add eggs, 1 at a time, beating well after each addition. At low speed, alternately add flour mixture and banana mixture, beginning and ending with flour mixture; beat just until smooth.
  • Spoon batter into pan and spread evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Coo cake in pan on wire rack.
  • To prepare Brown-Butter Frosting:.
  • In 1-quart saucepan, heat butter on medium heat 6-8 minutes or until melted and dark nutty-brown in color but not burned, stirring occasionally. Immediately transfer butter to pie plate; refrigerate 30 minutes or until firm.
  • In large bowl, with mixer at medium speed, beat butter, sugar, milk, and vanilla until creamy and smooth. Spread frosting evenly over cooled cake.
