SWEET POTATO COBBLER
My grandmother used to make the best sweet potato cobbler, but, like many cooks, she didn't follow a recipe. I tried many cobbler recipes before I discovered this one. It's a favorite for church dinners and is a special treat at home.

- In a saucepan, cook sweet potatoes in water until crisp-tender, about 10 minutes. Drain, reserving 1-1/2 cups cooking liquid. Layer potatoes in a greased 13-in. x 9-in. baking dish; add reserved liquid. Combine sugar, flour, cinnamon, nutmeg and salt; sprinkle over potatoes. Dot with butter. , Preheat oven to 400°. For pastry, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. On a floured surface, roll pastry into a 13-in. x 9-in. rectangle. Place over filling; cut slits in top. Brush with butter; sprinkle with sugar. Bake until top is golden brown, 30-35 minutes. Spoon into dishes; if desired, top with whipped cream.

Steps:
- In a large saucepan cover sliced sweet potatoes with lightly salted water.
- Bring to a boil, reducing to a simmer.
- Cook for 7 minutes or until tender but still firm.
- Drain reserving 2 cups of the cooking liquid.
- In a medium saucepan over medium heat stir together the 2 cups reserved liquid, sugar, flour, cinnamon, nutmeg and cloves.
- Keep stirring until the sugar is disolved.
- Add butter and melt.
- Pour the syrup over the sweet potatoes and cook over medium high heat until syrup bubbles up and over the potatoes.
- Remove from heat.
- Layer the sweet potato slices in a 8x10 inch glass dish.
- Pour syrup over the potatoes.
- Cut pastry lattice style and top cobbler.
- Brush with milk, sprinkle with sugar, nuts and bake in a 400 degree oven for 20-25 minutes.

SWEET POTATO BAKE
Everyone will love this creamy baked sweet potato casserole. Beat together cooked sweet potatoes, sugar, vanilla, butter, eggs, cinnamon and nutmeg. The crumbly topping gets sprinkled over the bake before it goes into the oven.

- Preheat oven to 325 °F. Mix sweet potatoes, sugar, spices, 1/3 cup butter, eggs and vanilla. Beat with an electric mixer until smooth. Add cream, mix well. Pour into greased casserole dish (1 1/2 quarts). Add topping. Bake for 25 to 30 minutes.
- Mix together 3 tablespoons butter, brown sugar, flour and nuts with fork; sprinkle over top of casserole.

- Cover the sliced or chopped sweet potatoes with water and boil just long enough to soften. This takes about 10 minutes. They should be soft enough that you can stick a fork through them. Drain and save 1 1/2 cups of the water from boiling the sweet potatoes. In a bowl whisk together the sugar, salt, cinnamon, nutmeg and flour.
- Spray a 10 inch iron skillet with cooking spray or you could use a 9 x 13 baking dish. Dump in the cooked sweet potatoes, pour the 1 1/2 cups water over the potatoes. Mix in vanilla extract. Sprinkle on the sugar and spices. Cut up the 5 tablespoons butter in pieces on top. Then make your crust or you could use a bought pie crust on top.
- Mix salt into flour. Cut butter into flour until resembles course crumbs. Add water until you can work with dough. Roll out on a floured surface and place over cobbler in skillet or baking dish.

- Fill a medium sized saucepan 1/2 way with cool water and begin to heat over medium heat on the stove top. Add 1 tsp salt to the water. Add the sweet potato disks.
