My mother made this all through my childhood. It's lighter and crunchier than a cobbler. She made her own bread crumbs by drying the bread in a low oven until crispy and running it through the food processor. They could also be broken into small pieces and cut up smaller with a knife. More simply, store-bought unseasoned bread crumbs are a fine substitution.

6 apples, Granny Smith or Braeburn, peeled and cored
3 lemons, zested and juiced
1 1/2 cups unseasoned bread crumbs
1/2 teaspoon kosher salt
1 1/4 cups dark brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmet
1/8 teaspoon ground allspice
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F with a rack in the center of the oven.
  • Place the apples on a flat surface, cut them in half, and then into thin slices. Put them in a medium bowl and coat them with a light layer of zest from 1 of the lemons and all of the lemon juice.
  • In a separate bowl, mix together the butter and bread crumbs. Season with salt. Set aside.
  • In a third bowl, combine the brown sugar, cinnamon, nutmeg, allspice and cloves. Mix to blend and add the apple slices.
  • Grease each baking dish with the remaining butter. Layer the bottom with the apples and cover with the bread crumb mixture.
  • Cover the dishes tightly with aluminum foil and place in the center of the oven. Bake until the apples are tender when pierced with the tip of a knife, 30 to 45 minutes. Remove the foil, raise the oven temperature to 425 degrees F and bake until the top browns. Serve immediately.

5 large Golden Delicious apples (about 2 pounds), peeled and thinly sliced
1 cup apple cider
3 tablespoons brown sugar, divided
1 teaspoon vanilla extract
1 teaspoon ground cinnamon, divided
2 tablespoons butter, divided
3 slices whole-wheat bread (1-ounce each) crusts included (to make about 2 1/4 cups crumbs)
3 tablespoons chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine apples, apple cider, 1 tablespoon brown sugar, vanilla, 1/2 teaspoon cinnamon in a large saucepan over medium-high heat. Cook, stirring occasionally, until apples are tender but not mushy, about 10 minutes. Stir in 1 tablespoon butter until melted, remove from heat and transfer apple mixture to a 9-inch glass pie plate.
  • Place bread in food processor and process until crumbs are formed, about 15 seconds. Melt remaining 1 tablespoon butter in microwave for 20 seconds. Toss crumbs with melted butter, walnuts, remaining 2 tablespoons brown sugar and remaining 1/2 teaspoon cinnamon. Scatter crumb mixture on top of apples and bake for 30 minutes, until topping is crisped and lightly browned.

4 cups soft white bread crumbs (about 6 slices bread)
1/3 cup butter, melted
1 cup packed brown sugar
1 tablespoon ground cinnamon
4 large apples, peeled, cut into 1/4-inch slices
1 cup apple cider

Steps:

  • Heat oven to 350°F. Lightly spray 2-quart casserole with cooking spray.
  • In medium bowl, stir together bread crumbs and melted butter. In small bowl, mix brown sugar and cinnamon.
  • Place half of the apple slices in casserole; sprinkle with half of the brown sugar mixture and half of the bread crumb mixture. Repeat layers. Pour cider over top.
  • Bake 45 to 55 minutes or until apples are tender and topping is browned. Serve warm.

3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

1 1/4 cups flour
3/4 cup brown sugar

1/4 cup hot water
1/2 lemon, juice of

Steps:

  • Pre-heat oven to 350 degrees.
  • Arrange slices in the bottom of a lightly greased 12x9 pan.
  • Sprinkle with cinnamon.
  • Mix flour and brown sugar.
  • Cut in butter until crumbly and set aside.
  • Syrup: Combine ingredients and stir well.
  • Drizzle half of mixture over apples.
  • Cover with flour mix.
  • Pour remaining syrup over top.

  • Peel, core and slice apples. Place the bread slices in a food processor and blend to make fresh crumbs or finely chop it up. 1 stick unsalted butter, melted, plus more for baking dish
4 tablespoons sugar
6 Granny Smith apples, peeled, cored and cut into small wedges
1 lemon, juiced
3/4 cup packed light brown sugar
1 tablespoon ground cinnamon
Pinch ground nutmeg
Pinch salt
1/4 cup apple brandy (recommended: Calvados)
1 loaf brioche bread, crusts discarded and bread cubed
1 quart vanilla bean ice cream, for serving
Powdered sugar, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Butter and sugar a baking dish and reserve the remaining sugar.
  • In a large mixing bowl combine apple wedges, lemon juice, brown sugar, spices, salt and apple brandy. Toss to combine evenly. In a separate mixing bowl add bread cubes, pour in the melted butter and toss to coat evenly. Layer bread cubes in the bottom of the baking dish followed by apples and repeat this so you have 2 layers of each. Press gently on top of the fillings to compact slightly. Pour any remaining liquid over the apples and bread cubes. Sprinkle with the remaining sugar and bake in the oven for 35 to 40 minutes, or until the top is golden. Remove from the oven and allow to cool. Serve topped with a scoop of ice cream and powdered sugar.

1 teaspoon ground cinnamon, plus more for sprinkling
1/2 cup brown sugar, packed
1/2 cup crushed shortbread cookie
1/4 cup chopped pecans
2 tablespoons butter, cut into pieces
5 sheets phyllo dough, from 1 pound package of frozen dough
2 tablespoons butter, melted, for brushing phyllo sheets, plus more if needed
1 tablespoon granulated sugar
confectioners' sugar
caramel sauce, purchased
2 cups confectioners' sugar
3 1/2 tablespoons milk

Steps:

  • For the Strudel:
  • Preheat the oven to 350 degrees F.
  • Line a baking sheet with parchment paper.

3 cups soft bread cubes (remove crusts)
7 tablespoons melted butter
3 cups sliced peeled tart apples (I used Granny Smith)
1 cup caster sugar
1 teaspoon ground cinnamon
1/2 teaspoon fresh ground nutmeg
1/2 cup water
1 grated lemon, rind of
3 tablespoons lemon juice
light cream or vanilla ice cream, for serving

Steps:

  • Pre-heat oven to 180*C/375*F. Butter a shallow 1 ½ litre baking dish.
  • Place half the bread cubes in the prepared baking dish. Mix the remaining cubes with 2 TBS of melted butter and set aside.
  • Spread the apple slices over the bread cubes in the baking dish. Stir together the sugar, cinnamon, nutmeg, water, lemon juice, lemon rind and the remaining 5 TBS of butter. Stir until sugar is dissolved. Pour evenly over the apples, then top with the reserved bread cubes.
