Ingredients

4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

2/3 cup sugar
1/3 cup cider vinegar
1/3 cup canola oil
1 small onion, finely chopped
4 teaspoons prepared mustard
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
Fresh spinach leaves

Steps:

Combine the first seven ingredients in a blender or food processor; cover and process until smooth. Serve over fresh spinach. Store leftover dressing in the refrigerator. ,

Ingredients

1 small head iceberg lettuce rinsed and coarsely chopped
2 medium ripe firm tomatoes chopped
4 anchovy fillets drained from oil, chopped
1/2 cup pimiento peppers chopped
salt and freshly ground black pepper to taste
DRESSING
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1 clove garlic minced
1 tablespoon chopped fresh Italian parsley
salt and freshly ground pepper to taste
pinch dried oregano

Steps:

In a salad bowl, gently toss the lettuce, tomatoes, anchovies, and pimiento peppers. Sprinkle with salt and pepper. In a screw-top jar or cruet, combine the dressing ingredients. Cover tightly and shake until thoroughly blended. Gradually spoon dressing over salad and toss to combine.

I like this salad because it isn't fruity like many spinach salads out there. My cousin always brings this to family dinners and everybody loves it, even the ones that don't like spinach! Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

1 1/2 teaspoons salt
3/4 cup white vinegar
1 1/2 cups oil
1/2 cup sugar
1 tablespoon poppy seed
1 teaspoon dry mustard
1/2 red onion, sliced thinly
1/2 lb fresh mushrooms, sliced
1/2-1 lb swiss cheese, grated
1 lb bacon, cooked and crumbled
2 bunches spinach (I use a 10oz bag)

Steps:

Note for Dressing: This makes a lot, I usually only use about half.
Mix the dressing ingredients together and refrigerate overnight. Very important!
Toss salad ingredients together and mix in dressing just before serving.

1 lb fresh spinach leaves
1 cup fresh mushrooms, sliced
4 slices cooked and crumbled bacon
1/2 cup mayonnaise
1/2 cup sour cream or 1/2 cup plain yogurt
1 tablespoon white wine vinegar
2 tablespoons lemon juice
1 tablespoon green onion, chopped
1 tablespoon fresh parsley, minced
1 -2 garlic clove, crushed
1/2 teaspoon Dijon mustard (optional)

Steps:

Combine washed and torn spinach leaves, mushrooms and bacon in a large bowl.
In a blender, combine the dressing ingredients.
Toss salad with the dressing and serve.
