PAT'S CHERRY DELIGHT

Pat's Cherry Delight image

This is a recipe that I made up of different parts of several other recipe's and it has been a hit everywhere I take it. It has become a holiday staple in my family since the first Christmas I made it.

Provided by Pat Spencer

Categories     Other Desserts

Number Of Ingredients 10

CRUST
1/2 c butter
1 c flour
1/2 c pecans, in pieces
1/4 c sugar
FILLING
4 pkg cream cheese (8 0z, room temperature)
2 c powdered sugar
1 pkg cool whip (16 0z)
2 can(s) cherry pie filling (15 0z)

Steps:

  • 1. To make crust: Melt the butter in microwave, then add the flour, sugar and pecans. Mix with a fork. Mixture will be thick. Spread mixture onto ungreased 13 x 9 pan and bake in 425 degree oven for 5 to 10 minutes or until just starting to turn brown around the edges. Watch closely because this burns very easily, and if you cook it until entire crust is brown it will stick to the pan. Set aside and allow to cool completely.
  • 2. To make filling: Mix the cream cheese with electric mixer until smooth. Add powdered sugar and beat until blended well. Beat in the cool whip until smooth and creamy. Pour mixture onto the cooled crust. Top with the two cans of Cherry pie fullling. Cover and chill over night.

Cherry Delight image

Provided by Jasmine Smith

Categories     Cakes

Time 3h5m

Number Of Ingredients 10

2 cups graham cracker crumbs (from about 15 [2 1/4- x 5-in.] crackers)
6 tablespoons (3 oz.) unsalted butter, melted
¼ cup granulated sugar
½ teaspoon kosher salt
½ cup heavy whipping cream
2 (8-oz.) pkg. cream cheese, softened
½ cup sour cream
1 cup (about 4 oz.) powdered sugar
1 teaspoon vanilla extract
1 (21-oz.) can cherry pie filling

Steps:

  • Preheat oven to 350°F. Stir together graham cracker crumbs, melted butter, granulated sugar, and salt in a large bowl until combined. Press mixture evenly into bottom of an 11- x 7-inch baking dish. Bake in preheated oven until crust is toasty and edges are golden, 12 to 14 minutes. Transfer baking dish to a wire rack; let crust cool completely, about 45 minutes.
  • Beat heavy whipping cream in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, about 1 minute. Set whipped cream aside. Beat cream cheese and sour cream in a large bowl with an electric mixer on medium speed until smooth, about 1 minute. Add powdered sugar and vanilla; beat until light and fluffy, about 2 minutes.
  • Fold half of whipped cream into cream cheese mixture using a rubber spatula until just combined; repeat with remaining whipped cream. Spoon cream cheese mixture into cooled crust; smooth top using a small offset spatula. Pour cherry pie filling over cream cheese layer, spreading to edges of cream cheese mixture. Cover and chill until filling is firm, about 2 hours. Cut into 10 bars, and serve immediately.
