THAI GREEN CURRY CHICKEN
Steps:
- To make the Green Curry Paste: In a food processor, combine the peppers, shallot, lemon grass and fresh ginger, and pulse to roughly chop. Add in anchovy paste, spices and oil and puree to form a paste.
- In a large heavy pan over medium-high heat, add the oil and 3 tablespoons of the green curry paste. Stir rapidly for 1 minute, then slowly add the coconut milk. Stir for 2 minutes and bring to a boil. Add in the peppers and onions, then reduce heat and simmer for 3 minutes.
- In a large measuring cup, combine lime juice, fish sauce, brown sugar, and cornstarch. Slowly pour into simmering coconut mixture. Add in the chicken pieces and bring to a low boil. Simmer for 25 minutes, adjusting with additional curry powder, curry paste, and salt, if needed.
- To serve: Serve rice in individual bowls, top with curry, then garnish with your choice of toppings.
- Preheat oven to 400 degrees F.
- Add the pears and garlic cloves to a large bowl and drizzle with olive oil. Combine brown sugar, cinnamon, cloves, 1 teaspoon of the red pepper flakes, salt and lemon juice in a small bowl. Sprinkle over the pears and toss to evenly coat. Arrange pears cut side down on a baking sheet lined with parchment paper, and bake for 15 minutes in the preheated oven. Flip pears over and pour a little bit of the maple syrup into each divot where the core was removed. Bake for 15 to 20 minutes more, then remove to a cutting board and let cool. When cool enough to handle, peel and dice.
- While the pears are cooling, combine the remaining ingredients in a small nonreactive saucepan, and bring to a simmer over low heat. Remove from heat and cool slightly. Combine the pears and the sauce and refrigerate in a covered container for 24 hours, and up to 1 week.
PAPAYA CHICKEN
Steps:
- Place a large skillet over medium-high heat and add the oil. When the oil is hot, add the onion, garlic and ginger and saute until the onion is softened, about 4 minutes. Add the cumin seeds, coriander, fenugreek seeds, and paprika and toast for 10 seconds and then add the chicken pieces and cook until it is nearly done, about 8 minutes. Add the yogurt and finish cooking the chicken, about 2 more minutes and then stir in the papaya chunks. Serve the chicken with rice or rotis.

A refreshing vegetarian fruit curry, medium hot, to be served over rice. "Barely ripe" bananas means newly ripe, or not so ripe that they're losing their firmness. I did not include salt, which many people will miss; if you want, you can add salt in an amount to suit your taste.

Steps:
- Combine fruits in a bowl and sprinkle with lime juice.
- Heat oil in a saucepan over medium heat and saute onions, stirring often, until they soften and start to turn golden brown.
- Add next 5 ingredients (sweet potato through cayenne) and stir-fry 2 minutes.
- Add coconut milk and continue cooking and stirring, 5 minutes.
- Add fruit and raisins, turn heat to low and simmer 20 minutes, stirring occasionally.
- Serve over steamed white or brown rice, sprinkled with cashews.

Steps:
- Heat the oil over medium heat in a large pot.
- Add the onions and saute until transparent, about 3-4 minutes.
- Add the garlic and ginger and saute another 2-3 minutes.
- Add the chicken pieces and saute another 5 minutes to partially cook and lightly brown.
- Add the fish sauce and stir well.
- Add water to cover the chicken and bring to a boil.
- Reduce heat and simmer 25-30 minutes, stirring and skimming off fat and scum occasionally.
- Add cubed papaya and simmer another 5-10 minutes until papaya is tender.
- Remove from heat, salt and pepper to taste and stir in the chopped spinach.
- This dish will be soupy when done.

Using a slotted spoon, transfer the chicken to a plate.
- Add the orange juice to the wok and boil until slightly thickened, about 3 minutes. Return the chicken to the wok, add the papaya and stir-fry until hot, about 1 minute. Add the lemon juice, season with salt and pepper and transfer to a platter. Garnish with the scallion and serve.
