A simple and satisfying lunch or dinner. This pan fried Mahi Mahi is served with a rich and smooth tomato & dill sauce.

2 fillets mahi mahi
4 oz mascarpone
2 tablespoons dill, fresh (chopped)
2 tablespoons tomato paste (sugar free)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons olive oil

Steps:

  • Heat the olive oil in a frying pan on a medium heat.
  • Season the fish with salt and pepper, then add to the frying pan.
  • Sautee for 5 minutes on each side, turning only once.
  • Whilst the fish is cooking make the sauce by placing the mascarpone, tomato paste, lemon juice & dill in a small saucepan and gently heat. Stir until all ingredients are blended. Season to taste.
  • Pour the sauce over the fish in the pan and cook for a further 2 minutes.
  • Serve with green vegetables or a salad.

1 medium onion, chopped
1 medium green pepper, chopped
4-1/2 teaspoons olive oil, divided
1 garlic clove, minced
3/4 cup salsa
1/2 cup white wine or chicken broth
1/4 cup halved Greek olives
1/2 teaspoon Greek seasoning
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled tomato and basil feta cheese

Steps:

  • In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.

An easy to make sauce that is delicious over pasta or meat. We use it instead of ketchup for meatloaf and mixed with various types of pasta.

1/4 lb bacon
olive oil
1/4 cup balsamic vinegar
28 ounces diced tomatoes
salt
pepper
1/2 teaspoon garlic powder
1/4 cup basil
8 ounces mascarpone cheese

Steps:

  • Chop the bacon up and brown/crisp it in a saucepan with olive oil. Once crisp, deglaze pan with balsamic vinegar and stir all together and salt and pepper to taste. Add tomatoes and garlic powder and cover pot, simmering over low heat and stirring occasionally for 30 minutes.
  • Add basil and mascarpone cheese and fold everything together gently, allowing the cheese to melt thoroughly. Keep on low heat, stirring occasionally, for another 10 minutes.
  • Serve over pasta or meat. We have even mixed this with diced cooked potatoes.

  • Cover the beans by about 3 inches of water and bring to a boil. Add the smashed garlic and the half onion. Simmer until tender, then add salt to taste. Remove the garlic and onion and discard. Strain the liquid off the beans, but save both the beans and the liquid.
  • Dice everything small and toss everything together except the cilantro. You'll mix that in right when you serve. Hold this at room temperature.
  • Salt the fish well and set it on a cutting board or plate at room temperature while you make the rice. I do this once the beans are cooked.
