1 1/4 lbs turkey breast tenderloins (2)
1 tablespoon vegetable oil
1/3 cup orange marmalade
1/2 teaspoon ground ginger
1 teaspoon Worcestershire sauce

Steps:

  • Cook turkey breast tenderloins in oil in skillet over medium heat about 5 minutes or until brown on one side; turn turkey.
  • Stir in remaining ingredients; reduce heat.
  • Cover and simmer 15-20 minutes, stirring occasionally, until turkey is done & sauce is thickened.
  • Cut turkey into thin slices. Spoon sauce over turkey.

Turkey tenderloin can sometimes be a bit more challenging to find in the meat case at a supermarket. So plan ahead and check with the butcher to see if it needs to be ordered. After tracking it down, you can turn this tenderloin into a complete meal by serving it with a side of black beans sprinkled with diced red bell pepper and chopped fresh cilantro. After browning the turkey, the sweet, savory sauce, made with chicken broth, apricot jam, Dijon mustard, and fresh thyme, gets reduced and is cooked alongside the turkey for even more convenience (only one skillet needed!). After all the ingredients get a chance to know each other, slice up the turkey, arrange on a platter, and spoon that gorgeous-looking pan sauce over for a showstopper of an entrée.

0.25 cup(s) Apricot jam or peach all fruit spread
2 Tbsp Dijon mustard
1.5 tsp Fresh thyme chopped, or 1/2-tsp dried
1 Tbsp Canola oil
1 pound(s) Uncooked boneless skinless turkey breast (1 piece)
0.5 tsp Table salt
0.25 tsp Black pepper

Steps:

  • Stir together broth, fruit spread, mustard, and thyme in small bowl.
  • Heat oil in large skillet over medium-high heat. Sprinkle turkey with salt and pepper; add to skillet and cook, turning occasionally, until browned, about 5 minutes. Add apricot mixture and bring to boil. Reduce heat and simmer, covered, until instant-read thermometer inserted into center of turkey registers 165°F, about 12 minutes longer.
  • Transfer turkey to cutting board and let stand 5 minutes. Cut into 8 slices and serve with pan sauce.
  • Per serving: 2 slices turkey and 2 tablespoons sauce.

1 turkey (14 to 16 pounds)
GLAZE:
1/2 cup honey
1/2 cup Dijon mustard
1-1/2 teaspoons dried rosemary, crushed
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
STUFFING:
1/2 cup butter, cubed
2 cups chopped onion
1-1/2 cups chopped celery
12 cups unseasoned stuffing cubes or dry bread cubes
1 tablespoon poultry seasoning
2 teaspoons chicken bouillon granules
1 teaspoon pepper
1 teaspoon dried rosemary, crushed
1 teaspoon lemon-pepper seasoning
3/4 teaspoon salt
3-1/4 to 3-3/4 cups boiling water

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. Bake for 2 hours., In a small bowl, mix glaze ingredients; brush over turkey. Bake 1-3/4 to 2-1/4 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.), For stuffing, in a Dutch oven, heat butter over medium-high heat. Add onion and celery; cook and stir until tender. Add stuffing cubes and seasonings; toss to combine. Stir in enough boiling water to reach desired moistness; transfer to a greased 13x9-in. baking dish. Bake, covered, for 1 hour. Uncover and bake until lightly browned, 10-15 minutes longer., Remove turkey from oven; cover loosely with foil and let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with turkey and stuffing.

1 teaspoon cornstarch
1/4 cup cranberry-raspberry juice
2 tablespoons Heinz 57 steak sauce
2 tablespoons red raspberry preserves
1/2 teaspoon lemon juice

Steps:

  • Sprinkle turkey with salt and pepper. In a large nonstick skillet over medium heat, brown turkey in oil on all sides. Cover and cook until a thermometer reads 165°, 10-12 minutes. Remove and keep warm., Combine cornstarch and juice until smooth; add to the pan. Stir in the steak sauce, preserves and lemon juice. Bring to a boil; cook and stir until thickened, about 1 minute. Slice turkey; serve with sauce.
