ROASTED POTATO WEDGES

Roasted Potato Wedges image

Provided by Patrick and Gina Neely : Food Network

Time 35m

Yield 2 servings

Number Of Ingredients 6

2 russet potatoes, scrubbed well
3 tablespoons olive oil
1 teaspoon Neely's BBQ seasoning
Kosher salt and freshly ground black pepper
2 tablespoons finely chopped fresh parsley
1 tablespoon sliced green onions

Steps:

  • Place a rimmed sheet tray into the oven and preheat oven to 450 degrees F.
  • Slice each potato into 6 wedges. Add the potato wedges to a pot of cold salted water. Bring to a boil, reduce heat, and simmer until the potatoes are barely tender, but a knife can be pushed through with just a slight resistance, about 6 minutes. Drain potatoes and add to a large mixing bowl. Drizzle potatoes with olive oil and toss with BBQ seasoning, salt, and pepper.
  • Carefully remove the hot sheet tray from the oven and quickly add the seasoned potatoes to them. You want the pan to stay as hot as possible. This will help to crisp up the potatoes while they roast. Place the sheet pan back into the oven and roast until golden and crisp, 20 to 25 minutes, flipping 1/2 way through the cooking time.
  • Remove from the oven and toss with fresh herbs.

CRISPY FRIED POTATOES

Crispy Fried Potatoes image

Southern fried potatoes, slightly charred with a crispy golden crust on the outside and meltingly tender and buttery on the inside are delicious as breakfast potatoes or an easy side dish anytime!

Provided by Marye Audet-White

Categories     Side Dish

Time 40m

Number Of Ingredients 8

6 - 8 large potatoes (peeled (or not) and sliced about 1/4-inch thick)
1 sweet onion (optional)
1 clove garlic (optional)
1 bell pepper (optional - green, red, poblano, jalapeno, all of them - you decide)
salt to taste (I prefer kosher salt)
black pepper to taste (I prefer coarse ground pepper)
1/4 cup peanut oil (light vegetable oil will work if there are allergy issues)
2 tablespoons butter

Steps:

  • Peel and slice (or cube) potatoes.
  • Let soak for 5-10 minutes in ice water in a large mixing bowl. You may skip this step if you like.
  • Drain well and pat dry - make sure they are VERY dry!
  • Heat 1/4 cup peanut oil in a large skillet on medium high heat until it's shimmering and almost smoking.
  • Add potatoes and let fry for about 2 minutes or until they start to get golden on the bottom.
  • Cover the pan and reduce heat to medium. Allow to steam for about 2 to 3 minutes.
  • Remove cover and turn the heat back up to medium high. Flip the potatoes. Fry for a minute or two, or until the bottom layer begins to get golden.
  • Dump the pan of potatoes into a colander over the sink to remove excess oil and moisture. Blot with a paper towel and return them to the pan on medium heat.
  • Add the onion and peppers plus any seasonings you'd like on your potatoes.
  • Saute, stirring occasionally, until potatoes are tender and done. Do not cover at this stage of frying because they will get soggy!
  • Add the butter at the very end of cooking.
  • Taste for seasoning and serve hot with plenty of cracked pepper.

HOW TO REHEAT POTATO WEDGES IN 5 EFFECTIVE WAYS - FOODS FACT

From foodsfact.org
  • Reheating potato wedges using an oven. Reheating potato wedges in an oven gives your wedges a crispy exterior and a fresh look. Steps: Preheat your oven to 350-400 degrees Fahrenheit.
  • Reheating potato wedges on a stovetop. This method is simple. All you need to do is add some oil in a pot, place it on your stovetop, add your wedges, and warm them up while flipping in between the process.
  • Reheat potato wedges using a microwave. A microwave is an efficient appliance for reheating your potato wedges, especially when you are in a rush. It’s, however, not the best method as the wedges get soggy quickly.
  • Reheat potato wedges using an air-fryer. An air fryer is a healthy way to reheat your potato wedges, not to mention how convenient it is. Air frying is also less messy as no oil pools form on your counter surfaces.
  • Reheat potato wedges using a toaster oven. Do you love your wedges really crunchy? Then reheating your leftover potato wedges in a toaster oven will restore that crunchiness.
