Pammy's Slow Cooker Beans image

Delicious pinto bean recipe that does not include pork but still has an awesome flavor. My family loves it! Serve over hot cooked rice.

2 pounds dried pinto beans
8 cups water, or more if needed
1 small onion, chopped
2 teaspoons garlic powder
½ teaspoon onion powder
1 teaspoon ground black pepper
2 bay leaves
1 smoked turkey leg
⅓ cup olive oil

Steps:

  • Wash and pick over the beans, then place them in a large bowl. Fill the bowl with cold water, and soak the beans for 6 to 8 hours.
  • Drain and rinse the beans, then place into a slow cooker. Pour in 8 cups of water. Stir in onion, garlic powder, onion powder, black pepper, and bay leaves. Place the turkey leg into the cooker, cover, and cook on Low setting for 6 hours. Stir in olive oil, and add more water if the beans are beginning to dry out; cook until the beans are very tender, an additional 2 hours.

This is my version but my ex-mother-in-law used to make Green Beans and Eggs. I thought it looked awful and was afraid to taste it...finally did and was surprised. My hubby (High School Sweetheart, current hubby, 2nd and last hubby! lol!) is very, very, very fussy and HE actually likes this for a veggie. He gave it 4 stars! (Surprise! He doesn't like veggies!) I like onions, hubby doesn't so I only use this small amount. If you like onion, maybe use more and bigger. It's nice for something different. I am only cooking for 2 now...thus the small amount.

1 (8 ounce) can French style green beans
1/2 slice thick bacon
1 tablespoon onion, cut very fine
1 egg, beaten
salt and pepper

Steps:

  • Spray a fry pan with cooking spray.
  • Using kitchen scissors, cut bacon into 1/8 inch slices and place in pan.
  • Add onion to pan.
  • Cook over medium heat until bacon is done, not crisp.
  • Drain Green Beans.
  • Add Green Beans and beaten egg.
  • Cook until egg is done, kinda scrambled looking.
  • Salt and Pepper to taste.

I received this recipe from one of my great friends. I love to take these beans to a potluck. You can also use Sweet Baby Ray's BBQ sauce instead of ketchup for a different taste.

1/2 lb ground pork sausage
1/2 lb bacon, chopped into bit sized pieces
1 onion, chopped
2 (15 ounce) cans pork & beans
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can great northern beans, drained
1 (15 ounce) can butter beans, drained
1 (15 ounce) can red beans, drained
1 cup brown sugar
1/4 cup ketchup
2 tablespoons Worcestershire sauce
2 garlic cloves, crushed and finely chopped
1/2 teaspoon chili powder
salt
pepper

Steps:

  • Cook ground pork sausage on medium heat until done in a deep sauce pan.
  • Once fully cooked add raw bacon pieces and onion into pork.
  • Saute together over medium heat until bacon is cooked and onion is soft (about 15-20 minutes).
  • Add to crock pot.
  • Add the rest of the ingredients to the crock pot and mix well.
  • Simmer on high for 2 hours and then low for 2 hours or you can cook on low 6 hours.
  • Corn starch may need to be added for thickening. Just take a few tablespoons of corn starch and mix with a little cold water (1/4 cup or so) until smooth. Gradually stir into bean mixture until blended.

1 pound dried pinto beans
1/4 cup sliced onions
8 cups water
1 garlic clove, minced
1 tablespoon chicken bouillon granules
1 tablespoon kosher salt
1 teaspoon pepper
1 teaspoon ground cumin
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
1/4 teaspoon ground coriander
Fresh thyme sprigs , optional

Steps:

  • Sort beans and rinse in cold water. Add beans to a greased 3-qt. slow cooker. Add the next 10 ingredients; stir., Cook, covered, on high 2 hours. Reduce heat to low; cook until beans are tender, 6-7 hours. Serve with slotted spoon. If desired, top with fresh thyme sprigs. , Freeze option: Freeze cooled beans in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add water if necessary.
