1 medium onion, finely chopped
1/2 cup butter, cubed
1 package (9 ounces) fresh spinach, torn
1 cup grated Romano cheese
1 tablespoon lemon juice
1/8 teaspoon pepper
2 pounds kosher salt
3 dozen fresh oysters in the shell, washed

Steps:

  • In a large skillet, saute onion in butter until tender. Add spinach; cook and stir until wilted. Remove from the heat; stir in cheese, lemon juice and pepper. Spread kosher salt into 2 ungreased 15x10x1-in. baking pans. Shuck oysters, reserving oyster and its liquid in bottom shell. Lightly press oyster shells down into the salt, using salt to keep oysters level. Top each with 2-1/2 tsp. spinach mixture. Bake, uncovered, at 450° until oysters are plump, 6-8 minutes. Serve immediately.,

1 pound butter
1 rib celery (finely chopped)
2 bunches green onions (finely chopped, about 2 cups)
1 bunch parsley (finely chopped)
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce (or more to taste)
1 1/4 cups seasoned breadcrumbs
1/2 teaspoon Pernod (or Anisette or Herbsaint)
4 dozen oysters (in their shells, small or medium)
Rock salt (for baking)

Steps:

  • Gather the ingredients.
  • Melt the butter in a large skillet or sauté pan over medium heat. Add the celery, scallions, and parsley. Sauté for 5 minutes, then add the Worcestershire and Tabasco. Reduce the heat to medium and cook for 10 minutes.
  • Add the breadcrumbs and Pernod and cook for 5 minutes more. Remove the pan from the heat and transfer the mixture to a bowl.
  • Chill in the refrigerator for 1 hour, until cold but not firmly set.
  • Preheat the oven to 375 F. Shuck the oysters into a bowl. Discard the top shells and scrub and dry the bottom shells. Drain any excess liquid from the oysters.
  • Arrange several oyster shells in baking pans lined with about 1/2 inch to 1 inch of rock salt. Place 1 oyster in each shell.
  • Remove the chilled buttery crumb topping from the refrigerator and beat it with an electric mixer to evenly blend the butter and fluff it a bit.
  • Transfer the mixture to a pastry bag fitted with a large plain tip. Alternatively, use a small spoon. Pipe a tablespoon of the mixture onto each oyster.
  • Bake for 5 to 8 minutes, or until the mixture is browned and the oysters are just cooked through. Allow about 6 oysters for each guest.

2 tablespoons olive oil
2 cloves garlic, minced
1 shallot, minced
3 cups thawed and drained frozen chopped spinach
1/2 cup grated Parmesan
1/2 cup anise-flavored liqueur
1/2 cup panko breadcrumbs
1 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 dozen oysters, on the half shell
Lemon wedges, for serving

Steps:

  • Preheat the oven to 450 degrees F. Prepare a baking dish with a generous layer of rock salt.
  • Set a large skillet over medium heat, add the butter and let it melt. Add the olive oil, garlic and shallots and saute until fragrant, about 2 minutes. Add the chopped spinach and toss with the garlic and shallots. Add the Parmesan, anise-flavored liqueur, breadcrumbs and cayenne pepper. Season with salt and pepper and cook for another 3 minutes.
  • Spoon about a tablespoon of the spinach mixture onto each oyster and nestle the oysters into the rock salt. Bake until the topping is crisp and brown, about 10 minutes. Serve with lemon wedges.

48 fresh, unopened oysters
1 ½ cups beer
2 cloves garlic
seasoned salt to taste
7 black peppercorns
½ cup butter
1 onion, chopped
1 clove garlic, crushed
1 (10 ounce) package frozen chopped spinach, thawed and drained
8 ounces Monterey Jack cheese, shredded
8 ounces fontina cheese, shredded
8 ounces mozzarella cheese, shredded
½ cup milk
2 teaspoons salt, or to taste
1 teaspoon ground black pepper
2 tablespoons fine bread crumbs

Steps:

  • Clean oysters, and place in a large stockpot. Pour in beer and enough water to cover oysters; add 2 cloves garlic, seasoned salt, and peppercorns. Bring to a boil. Remove from heat, drain, and cool.
  • Once oysters are cooled, break off and discard the top shell. Arrange the oysters on a baking sheet. Preheat oven to 425 degrees F (220 degrees C.)
  • Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach, Monterey Jack, fontina, and mozzarella. Cook until cheese melts, stirring frequently. Stir in the milk, and season with salt and pepper. Spoon sauce over each oyster, just filling the shell. Sprinkle with bread crumbs.
  • Bake until golden and bubbly, approximately 8 to 10 minutes.

2 slices bacon
24 unopened, fresh, live medium oysters
1 ½ cups cooked spinach
⅓ cup bread crumbs
¼ cup chopped green onions
1 tablespoon chopped fresh parsley
½ teaspoon salt
1 dash hot pepper sauce
3 tablespoons extra virgin olive oil
1 teaspoon anise flavored liqueur
4 cups kosher salt

Steps:

  • Preheat oven to 450 degrees F (220 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Clean oysters and place in a large stockpot. Pour in enough water to cover oysters; bring the water and oysters to a boil. Remove from heat and drain and cool oysters. When cooled break the top shell off of each oyster.
  • Using a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley. Add the salt, hot sauce, olive oil and anise-flavored liqueur and process until finely chopped but not pureed, about 10 seconds.
  • Arrange the oysters in their half shells on a pan with kosher salt. Spoon some of the spinach mixture on each oyster. Bake 10 minutes until cooked through, then change the oven's setting to broil and broil until browned on top. Serve hot.

4 tablespoons unsalted butter
2 garlic cloves, minced
1/3 cup bread crumbs, Panko preferred
2 shallots, chopped
2 cups chopped fresh spinach
1/4 cup Pernod
Salt and pepper, to taste
Dash red pepper sauce
2 tablespoons olive oil
1/4 cup grated Parmesan
1 tablespoon chopped chervil or parsley
2 dozen oysters, on the half shell
Rock salt
Lemon wedges, for garnish
3/4 cup champagne vinegar
2 shallots, minced
2 tablespoons cracked black peppercorns
1 tablespoon chopped chervil
1/2 lemon, juiced

Steps:

  • For the oysters: Melt butter in a skillet. Saute the garlic for 2 minutes to infuse the butter. Place the bread crumbs in a mixing bowl and add half the garlic butter, set aside. To the remaining garlic butter in the skillet, add shallots and spinach, cook for 3 minutes until the spinach wilts. Deglaze the pan with Pernod. Season with salt and pepper, add a dash of red pepper sauce. Allow the mixture to cook down for a few minutes. Finish off the bread crumbs by mixing in olive oil, Parmesan and chervil, season with salt and pepper. Spoon 1 heaping teaspoon of the spinach mixture on each oyster followed by a spoonful of the bread crumb mixture. Sprinkle a baking pan amply with rock salt. Arrange the oysters in the salt to steady them. Bake in a preheated 450 degree F oven for 10 to 15 minutes until golden. Serve with lemon wedges and red pepper sauce.
  • For the sauce: In a small bowl whisk together all ingredients. Cover and chill 1 hour before serving with oysters. Yield: 3/4 cup

We're adding a twist to traditional oysters Rockefeller. Sweet peaches balance the tangy mignonette and hearty collard greens and crunchy, savory bread crumbs make oysters that will rock a fella. These make the perfect summer dish!

24 fresh oysters
½ stick unsalted butter, (4 tablespoons)
2 cloves garlic, minced
¼ cup panko breadcrumbs
1 jalapeño, seeded and minced
1 medium shallot, minced
1 small fennel bulb, finely chopped
1 tablespoon fresh parsley, chopped
2 cups collard green, thinly sliced
3 tablespoons olive oil
¼ cup grated parmesan cheese
4 slices bacon, cooked, crumbled
¼ cup dry sherry
1 teaspoon kosher salt
1 teaspoon black pepper
rock salt, for serving
1 large peach, pitted and finely chopped
1 teaspoon honey
¾ cup champagne vinegar
1 medium shallot, minced
1 teaspoon fresh chives, finely chopped
¼ teaspoon cracked black peppercorn

Steps:

  • Preheat the oven to 450°F (230°C).
  • Shuck the oysters. Discard the empty shells and arrange the oysters on the half shell on a rimmed baking sheet.
  • Melt the butter in a medium skillet over medium heat. Add the garlic and sauté until fragrant, 2-3 minutes. Remove the pan from the heat.
  • In a medium bowl, stir together the bread crumbs and half of the garlic butter. Let sit until ready to use so the panko absorbs the butter.
  • Return the skillet with the remaining garlic butter to medium heat. Add the jalapeño, shallot, fennel, parsley, and collard greens. Cook, stirring often, for 5-7 minutes, or until the collard greens are wilted. Add the salt, pepper, and sherry. Cook for 5 minutes more to meld the flavors. Remove the pan from the heat.
  • Meanwhile, to the bowl with the bread crumbs, add the olive oil, Parmesan, and bacon. Toss to incorporate.
  • Spread a generous layer of rock salt on a large ovenproof baking dish or platter. Top the oysters with a spoonful each of the collard green mixture and bread crumb mixture. Arrange the oysters on the platter, nestling the shells into the salt. Transfer to the oven and bake for 12-15 minutes, or until the cheesy bread crumbs have browned.
  • While the oysters bake, make the mignonette: In a medium bowl, whisk together the peach, honey, vinegar, shallot, chives, and pepper.
  • To serve, top each oyster with a bit of mignonette.
  • Enjoy!

2 dozen oysters
1 cup/ 250ml 35-percent cream
1 teaspoon/ 5ml Dijon mustard
1 cup/ 250ml grated parmigiano-reggiano cheese
4 cups fresh spinach, stemmed (1 liter)
1 cup/ 250ml breadcrumbs

Steps:

  • Shuck the oysters, reserving the liquid. Place the oysters and liquid in a saucepan. Reserve the deeper half of each oyster shell. Cook the oysters over medium heat for about 30 seconds, just to give them some firmness.
  • With a slotted spoon, remove the oysters to a bowl and set aside. Add the cream to the oyster liquid in the pan and cook for 10 minutes to reduce. Add the mustard and half the cheese. Set aside.
  • In another saucepan over low heat, cook the spinach with 1 tablespoon (15 ml) water until wilted. Strain the excess spinach water into the cream mixture and set the spinach aside.
  • Mix the remaining 1/2 cup cheese and the breadcrumbs in a bowl and season with salt and pepper.
  • Heat the broiler.
  • Arrange the oyster half-shells in a casserole dish filled with seaweed or large rock salt. Place each oyster in a shell and add a bit of the cream mixture and some spinach. Top with the breadcrumb mixture. Broil until the cheese melts and the tops are lightly browned, about 1 minute.

I love love love oysters rockefeller and my favorite way is slightly creamy and cheesy with a hint of anise flavor. I used Ouzo cause it was on hand, but Pernod, Herbsaint or Sambuca would work. Or if you don't want to use liquor you could mince some fennel and saute with the spinach mixture. The addition of optional breadcrumbs makes for a denser topping, but omit it for a creamier version. So tasty I was eating this without the oysters. I think I have found a new decadent vegetable side dish! When I was making up this recipe I meant to add a dash of hot sauce but forgot, and I didn't miss it, but may try next time.

4 dozen oysters, shucked on the half shell
8 slices turkey bacon
2 tablespoons butter
3 garlic cloves, minced
4 shallots, minced (about a 1/4 cup)
8 cups baby spinach leaves (2 bags)
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/2 cup ouzo, Pernod, etc
1 cup heavy cream
1 dash hot sauce (optional)
1 cup fresh parmesan cheese, grated
1/2 cup panko breadcrumbs (optional)
1 ounce ouzo, Pernod
1/2 cup fresh parmesan cheese, shredded (shredded italian blend works too)

Steps:

  • Cook bacon in large skillet until crisp and set aside. Reserve 1 tbl. of drippings and melt butter in same pan over medium heat.
  • Add shallots and garlic, saute 2 minutes being careful not to burn the garlic or it will make dish bitter.
  • Add as much spinach as can fit in pan and finely crumbled bacon, along with nutmeg and a pinch of salt and pepper. Add more spinach as it wilts, folding or stirring as you go.
  • When all the spinach has wilted, make a well in bottom of pan and turn heat to medium high. When most of the juice has evaporated from the well and heat has risen, add Ouzo to deglaze pan.
  • Stir mixture until Ouzo has reduced by over half, then add cream. Bring mixture to a boil, then reduce to a simmer and add grated Parmesan cheese.
  • Simmer for 3-5 minutes, stirring as cheese melts and mix thickens. Season to taste with salt, pepper, hot sauce.
  • Stir in remaining 1 oz. of Ouzo and take off heat to cool. If you are opting to use breadcrumbs, stir in at this time.
  • Arrange oysters on baking sheet, using a bed of rock salt to stabilize if necessary, crumpled foil works as well. Top with spoonfuls of spinach mixture, then sprinkle with a little shredded cheese.
  • Bake at 450 degrees for 10-12 minutes, until cheese is melted and top is slightly browned. Serve with lemon wedges if desired. Enjoy!
