30-Minute Oyster Stew Recipe image

This super easy oyster stew recipe makes thick, creamy and rich soup! While most recipes don't call for potatoes, we find ours even better with it.

1 pint 473ml oysters (Note 1)
3 tablespoons bacon fat or butter
1 cup diced potato* (Note 2)
1 cup diced celery (2-3 celery stalks)
1 small shallot (minced)
3 tablespoons all purpose flour
1 teaspoon old bay seasoning
½ teaspoon salt
2 cups whole milk (slightly warmed (Note 3))
Fresh parsley
Hot sauce (such as Tabasco)
Soda crackers

Steps:

  • Drain the oysters over a bowl with a sieve and rinse under cold water to remove any sand or shell bits. Reserve the oyster juice. Roughly chop the oysters.
  • Place a paper towel over a mesh sieve to catch any sand and impurities and run the reserved oyster juice through the sieve into a clean bowl.
  • Heat a large pot over medium high heat.
  • Add bacon fat or butter.
  • Once the fat is melted and hot, add potatoes, celery and shallot. Cook for 2-3 minutes, stirring frequently.
  • Reduce heat to medium and add flour, old bay seasoning and salt. Cook, stirring constantly, until flour is nicely toasted, about 1 minute.
  • Slowly add reserved oyster juice, continuously stirring everything and scraping the fond (brown bits), built on the bottom of the pan. The mixture will get super thick, which is normal. If needed, add a little bit (1-2 tablespoons) of water to get all the brown bits scrapped off.
  • Then slowly pour in milk, while stirring everything constantly, to gradually incorporate everything.
  • Reduce heat to low/simmer, and slowly heat the soup up, about 10 minutes. (TIP:Don't rush this step, because if you bring the soup to a boil, it'll curdle, which won't affect the flavor, but it'll look unappetizing.)
  • Add oysters and cook for another 2-3 minutes.
  • Serve immediately with fresh parsley, hot sauce and soda crackers.
  • Store leftover oyster stew in an airtight container in the fridge for up 3 days, or freeze for up to 1 month. Thaw frozen oyster stew in the fridge overnight, and then reheat it slowly over low heat.

1/2 cup finely chopped heart of celery
1/2 cup finely chopped onion
4 cups milk
4 cups heavy cream
2 teaspoons Worcestershire sauce
1/2 teaspoon Tabasco sauce
1/4 teaspoon paprika
Salt to taste if desired
Freshly ground pepper to taste
2 quarts shucked oysters with their natural liquor
1/4 cup finely chopped parsley

Steps:

  • Heat butter in saucepan and add celery and onion. Cook, stirring, without browning, about 5 minutes.
  • Add milk and cream and bring to the simmer. Add Worcestershire and Tabasco sauce, paprika, salt and pepper.
  • Add oysters with their liquor and let simmer about three minutes or until oysters start to curl. Do not overcook or oysters will toughen. Serve in heated soup bowls with equal portions of parsley sprinkled on top.

2 tablespoons butter
1 clove garlic, crushed
2 shallots, minced
½ cup dry sherry or dry white wine
24 freshly shucked oysters, oyster liquor reserved
1 ½ cups whole milk
1 ½ cups heavy cream
2 tablespoons chopped fresh flat-leaf parsley
sea salt to taste
1 pinch sweet paprika
1 cup oyster crackers

Steps:

  • Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
  • Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
  • Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
  • Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
  • Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.

1 pint fresh raw oysters, with their juice
1/4 cup unsalted butter
1 large garlic clove, finely minced
2 tablespoons all-purpose flour
1 teaspoon kosher salt
1 teaspoon Worcestershire sauce
a few dashes hot pepper sauce (We like Frank's Redhot)
1 quart whole milk
freshly ground black pepper, optional
minced fresh parsley, optional

Steps:

  • Drain oysters and reserve their liquid. If the reserved liquid is particularly gritty, strain it through a double layer of cheese cloth.
  • In a large saucepan over medium to medium-low heat, melt the butter. Stir in garlic and cook for 1 minute. Sprinkle flour over the top and whisk to incorporate. (I like to use this flat whisk.) Then whisk in salt, Worcestershire sauce, and hot pepper sauce. Cook for 1 minute, whisking gently all the while.
  • Whisk in reserved oyster juice. And then slowly add milk, whisking constantly to incorporate. Cook over low to medium-low heat, stirring regularly, until mixture is steaming and bubbles just start to appear around the edge of the saucepan. Do not let mixture come to a boil. Turn heat down just a bit to low, and let cook for 10 minutes.
  • Add oysters and cook for 2 more minutes, or until oysters start to curl. Taste test and add a bit more salt if you like. Black pepper and fresh chopped parsley are optional.

½ cup half-and-half or heavy cream, at room temperature
½ teaspoon salt

1 teaspoon Worcestershire sauce
For garnish: chopped fresh chives, sliced green onions, or a dash of paprika

Steps:

  • Place milk, cream, salt, pepper and nutmeg in a medium saucepan or soup pot. Warm over medium-low heat, stirring regularly, just until hot (about 10 minutes). Do not boil.

4 sprigs fresh thyme
1 lemon, peel only (with peeler, not zested)
2 fresh bay leaves

1 1/2 cups yukon gold potatoes, finely diced
1 1/2 cups celery root, finely diced
1 cup scallion, thinly sliced
4 quarts stock or 4 quarts clam juice
100 oysters, shucked
2 cups flour
8 ounces butter
2 quarts milk
1 cup heavy cream
salt
white pepper

Steps:

  • In large skillet, fry bacon until crisp. Remove bacon from skillet w/ slotted spoon. Reserve bacon fat.
  • In large 10QT pot, sweat onions, celery and leeks in bacon fat. Add fresh thyme and lemon peel. Continue to cook for another 2 to 3 minutes. Season with S & P.
  • In a separate pot, bring fish fumet to a boil. Reduce heat to medium and poach the oysters in small batches for 2 to 3 minutes per batch. Cool oysters on a sheet pan and set aside.
  • Strain the poaching liquid into the large pot with the veggies. Add the milk and bay leaves.
  • In the large skillet melt the butter and whisk in the flour. Slowly whisk in ladles of stock to make a smooth loose mixture. Add this mix to large pot. Stir well. Add nutmeg.
  • Allow soup to simmer until thickened. Check seasonings.
  • Garnish: Saute potatoes and celery root in bacon fat until tender. Just before serving, toss potatoes and celery with bacon and scallions.
  • Finish soup: Just before serving, stir cream into soup. Add poached oysters. Serve soup in bowls and top with potato-bacon mix.

When we have that awful bone-chilling weather down here, I crave this hearty oyster stew. The plump oysters are bursting with flavor and the andouille gives it a good tweak.

1 1/2 pounds Idaho potatoes, peeled and cubed
1/2 teaspoon salt
1/2 cup heavy cream
1/8 teaspoon freshly ground black pepper
For the stew:
1 tablespoon unsalted butter
1/2 cup finely chopped yellow onion
1/4 teaspoon freshly ground black pepper
2 teaspoons chopped garlic
1 cup heavy cream
24 freshly shucked oysters, with their liquor
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
For the potatoes:
6 ounces andouille or other smoked sausage, chopped

Steps:

  • Make the potatoes:
  • In a large skillet over medium-high heat, brown the sausage, stirring, about 6 minutes, then drain on paper towels. Set aside.
  • Put the potatoes in a large saucepan, add enough water to cover and 1/4 teaspoon of the salt, and bring to a boil. Reduce the heat to medium and simmer until fork-tender, about 12 minutes. Drain and return the potatoes to the saucepan over medium heat to dry for about 2 minutes. Mash the potatoes with a fork, add the andouille and cream, and stir to mix. Stir in the remaining 1/4 teaspoon salt and the black pepper. Keep hot over very low heat.
  • Make the stew: In a large skillet over medium heat, melt the butter. Add the onion, salt, and black pepper and cook, stirring for 3 minutes. Add the garlic and cream and simmer for 3 minutes. Add the oysters, and their liquor, the parsley, Worcestershire, and hot sauce and cook until the edges of the oysters curl, about 4 minutes.
  • To serve, spoon equal amounts of the mashed potatoes into small serving bowls and top each with a generous ladleful of the oyster stew. Pass on a tray.

  • Prepare the oysters by straining through a fine wire mesh strainer to separate any grit from the juices. Reserve the strained juices and set aside. Rinse the oysters under cool water, taking care to remove all the grit. Coarsely chop one third of the oysters.
  • In a medium pot melt 5 Tbsp of butter over medium heat. Before the melted butter begins to brown, add the celery and shallots to the pot and sauté for 3 minutes. Add the minced garlic, dried thyme, salt, and pepper to the pot and cook for 1 more minute.
