FRIED RED SNAPPER BITES

Even though I call this fried snapper bites, it can be done with any firm. white fish. You do want the chunks you fry to be at least the width of a finger, and even twice that, so use that as a guideline. I like the New Orleans remoulade with this, but you can use any sauce you like.

1/2 cup Dijon or Creole mustard
1/3 cup mayonnaise
3 tablespoons chopped parsley
3 tablespoons minced shallot
3 tablespoons minced celery
1/4 cup minced dill pickles
1 tablespoon minced garlic
1 tablespoon prepared horseradish
1 tablespoon cider vinegar
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon Creole or Cajun seasoning
1 teaspoon Worcestershire sauce
2 pounds skinless snapper fillets
Salt
2 eggs, lightly beaten
1/4 cup yellow mustard (Dijon is fine)
1 tablespoon Creole or Cajun seasoning
3 tablespoons heavy cream or half and half
1 sleeve Saltines crackers
Peanut oil for frying

Steps:

  • Mix all the ingredients for the remoulade together and set aside. The remoulade can be made up to a week in advance, and making it the night before lets the flavors mellow.
  • Cut the fish into chunks of about two bites each. Salt lightly. Mix together in a bowl the eggs, mustard, Creole seasoning and heavy cream.
  • Pour enough peanut oil hot into a frying pan to come about a half-inch up the sides. Heat this to about 350F.
  • While the oil is heating, dunk as many snapper bites in the egg wash as will fit. When the oil is hot, dredge the fish in the mashed Saltines. You can do this in a bowl or in a plastic bag. Really press in the Saltines, and it's OK to have a few bits that aren't pulverized.
  • Fry the fish until golden brown on both sides, about 3 minutes per side. Drain on paper towels and serve with the remoulade, and some lemon wedges if you have them.

This is a recipe that I came up with one night after finding some red snapper in the freezer. It can also be done with catfish, flounder, perch, or pretty much any white fish. Remember that the thinner the fillet, the shorter the cook time.

1 tablespoon sweet paprika
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon onion powder
2 teaspoons garlic powder
2 teaspoons lemon pepper
1 pinch cayenne pepper, or more to taste
¼ cup olive oil
2 tablespoons butter
4 (4 ounce) fillets red snapper, patted dry

Steps:

  • Mix paprika, salt, black pepper, onion powder, garlic powder, lemon pepper, and cayenne pepper together in a small bowl.
  • Combine olive oil and butter in a small, microwave-safe bowl; heat in microwave until butter is melted, about 1 minute. Stir to blend butter into the oil.
  • Brush some of the olive oil and butter mixture over both sides of each red snapper fillet. Sprinkle paprika mixture over both sides of each fillet.
  • Heat leftover oil and butter mixture in a skillet over medium-high heat. Fry red snapper until flesh flakes easily with a fork, 4 to 5 minutes per side.

1/2 c all purpose flour
1 tsp salt, divided
1 tsp garlic pepper seasoning, divided
1 tsp creole seasoning
3 c vegetable oil
1 large red snapper, head cut off, split down the middle

Steps:

  • 1. Rinse the fish in cold water, drain but do not dry.
  • 2. In a bowl, put the flour in the bowl.
  • 3. Season one side of the fish with 1/2 of the teaspoon salt, 1/2 teaspoon of garlic pepper and 1/2 teaspoon of creole seasoning.
  • 4. Lift the fish up and dry the plate off and flip to the other side.
  • 5. On the other side, inside the cavity of the fish, sprinkle 1/2 teaspoon of salt, 1/2 teaspoon of garlic pepper,and 1/2 teaspoon of creole seasoning.
  • 6. Completely coat the fish in the flour on both sides.
  • 7. Put stove on medium high heat, when oil is hot, add the fish.
  • 8. Cook the fish on both sides for minutes or until the coating is crispy and the fish flakes easily with a fork. Serve immediately.

One 1-pound red snapper, cleaned
3 cloves garlic, minced
1 jalapeno, minced
Kosher salt and freshly ground black pepper
All-purpose seasoning, for seasoning the fish
5 tablespoons butter, plus more for greasing foil
1/4 pound okra, chopped
1 red bell pepper, diced
2 tablespoons chopped fresh parsley leaves
2 tablespoons white wine

Steps:

  • Preheat oven to 450 degrees F.
  • Wash the fish thoroughly and dry on paper towels. Score both sides of fish 3 times. Combine the minced garlic and jalapeno and stuff mixture into each of the 6 slits. Rub the fish with salt, pepper and all-purpose seasoning. Let fish marinate for 30 minutes (or overnight in the refrigerator for more intense flavor.)
  • In a medium skillet over medium heat, melt 1 tablespoon butter. Add the okra and bell pepper and cook until just tender, about 5 minutes. Make a slit down the center of the fish's belly. Stuff the belly of the fish with the okra and peppers and the chopped parsley. Place the fish on a rectangular piece of buttered foil. Place the remaining butter on top of the fish and drizzle with with the white wine.
  • Seal the fish in the foil, but leave a slight opening to allow the steam to escape. Place the fish on a baking sheet and bake until cooked through, about 10 to 15 minutes.
  • Remove from the oven, and transfer from foil to a serving dish, along with the juices collected in the foil.

The other day, my husband was asking for fish and chips but with my high cholesterol, I have to avoid things like that. I found in a magazine at the doctor's office this recipe for oven fried fish, which is nice and crispy like the deep fried kind but without all the fat. This is excellent served with evelyn/athens' Spicy Oven Fries and your favourite cole slaw recipe.

4 (6 ounce) tilapia fillets
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1/2 cup dried breadcrumbs
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 tablespoon vegetable oil

Steps:

  • Position rack on top shelf in oven.
  • Preheat oven to 500 degrees F.
  • Line a rimmed baking sheet with foil and set a wire rack on top.
  • Lightly spray or brush rack with vegetable oil.
  • Pat fish dry with paper towels.
  • Slice fillets in half lengthwise to form long pieces.
  • In a pie plate or wide shallow dish, whisk egg white with buttermilk.
  • In another dish, stir flour with bread crumbs, paprika, cayenne and salt.
  • Working with 1 piece of fish at a time, lightly coat with flour mixture.
  • Shake off excess flour, then dip into buttermilk mixture.
  • Turn to evenly coat.
  • Shake off excess liquid.
  • Coat fish in flour mixture again.
  • Shake off excess coating, then place on rack.
  • Repeat with remaining fish, 1 piece at a time.
  • Discard any remaining buttermilk or flour mixtures.
  • Lightly spray fish with oil or, using a brush, lightly dab about 1 tbsp oil as evenly as possible over coating.
  • Do not skip this step -- it is essential for crispy fish.
  • Bake on top rack of preheated oven until coating is crisp and golden, 12 to 15 minutes.

Red Snapper Fish is a thing of beauty with its beautiful crispy golden crust and juicy flesh inside. Excellent choice for a speedy supper recipe that will be on the table in minutes, making it a perfect addition to your midweek dinner.

2 red snappers fillets (cut and cleaned at store)
1 tbsp fish seasoning
1/3 cup epis ((check blog post))
1 tsp salt (course)
3 stem rosemary
6 stem thyme
1 lime juice
Peanut Oil
4 scotch bonnet pepper (optional)
2 stem scallion (optional)
2 stem rosemary (optional)
2 cups flour
1 1/2 tbsp fish seasoning
1 tsp salt
1 cup onions
1 cup red bell pepper
1 cup green bell pepper
1 1/2 cup cherry tomatoes
1 cup white wine
1 cup water
2 rosemary
3 thyme
1/2 butter
1 lime juice (whole)
1 tbsp fish seasoning
black pepper (to tatse )

Steps:

  • Rinse to clean snapper with lime and water.
  • On a cutting board, cut snappers to your liking. I would usually create 3 deep slits on both sides of the snappers but for this recipe I had two large ones so I cut mines in pieces. Buy ones that can fit in your pan!
  • Pat fish dry. When done, season with fish seasoning, epis, salt, rosemary, thyme and lime juice. Marinate in the fridge for 30 minutes to an hour. This ensures that flavors get deep into the fish, yummy !
  • When ready to make, use the largest non-stick frying pan you have. Add enough peanut oil to cover at least 1-1/2 inches of depth.
  • Heat the skillet for a few minutes over medium heat. In the meantime, lets coat the snapper in flour batter. Dredge in flour and make sure to get flour into those crevices so they are also nice and crispy. While also, shacking off the excess flour afterwards and set aside.
  • At medium heat, slowly fry for a few minutes on the first side but do not turn until it is ready. If you want to flavor the oil as I did it is optional. Add in scotch bonnet pepper, thyme and rosemary.
  • When cooking, the fish will naturally release and float on top of the pan but you can also check by lifting it a little to make sure the snapper is golden. That is a sign, especially at medium heat that it is ready to be turned over.
  • Total time should be no longer than 15 minutes for frying. But of course, not all stoves or pots are the same so keep an eye on it the entire time. My total time for frying was about 12 minutes using a dutch oven pot.
  • Set on a cookie rack over an allimum pan to drain access oil. To reheat to keep skin crispy, bake at 350F for 5 minutes.

PANKO CRUSTED ROCKFISH FILLETS

1/2 cup panko bread crumbs**
3 tablespoons grated parmesan cheese
1 teaspoon of Old Bay Seasoning
1 egg
2 tablespoons milk
1/3 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 rockfish fillets*, 3/4 - 1 pound
2 tablespoons of olive or vegetable oil for frying

Steps:

  • Place a large oven safe skillet into the oven and preheat to 425 degrees.
  • In a large bowl combine together the the flour, salt and pepper. Stir then pour onto a large plate.
  • In the same bowl combine together the panko, seasoning blend, and parmesan cheese. Stir then pour onto a large plate.
  • Wipe out the bowl, then use it again to whisk together the egg and milk.
  • Check the fish fillets for any bones and remove as necessary. Slice fish in half if necessary.***
  • Dredge fish first in the flour, shaking off any excess.
  • Dip fish into the egg mixture, allowing any excess to drip off.
  • Coat fish in the panko mixture, shaking off any excess. Place on a clean plate and allow to rest 1 - 2 minutes so the panko can adhere.
  • When the oven and frying pan are preheated, add the 2 tablespoons of oil to the hot pan. Allow to heat 1 minute. Carefully add fish fillets to the hot oil.
  • Cook in the oven for 3 - 4 minutes, then carefully flip over.
  • Cook an additional 3 - 4 minutes, then check with a meat thermometer for an internal temperature of at least 140 degrees.
  • While fish cook, set up a cooling rack over a couple layers of paper towels.
  • Remove fish from the pan and place on the cooling rack. Allow to drain 3 - 5 minutes prior to serving.

4 (4 to 6-ounce) skin-on red snapper fillets
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Combine the tomatoes, basil, onions, and olives in a bowl. Season with salt and pepper, to taste. Season both sides of the fillets with 1 teaspoon salt, 1/2 teaspoon pepper, and Essence. Arrange the fish on the baking sheet, followed by the tomato mixture and then the lemon slices. Drizzle 1 tablespoon of olive oil over each fillet.
  • Bake for 15 to 20 minutes, or until the snapper is cooked through. To serve, place a portion of Rice Pilaf on an entree plate. Use a spatula to remove the fish, along with the tomatoes, onions and lemons from the baking sheet and place over the Rice Pilaf. Drizzle with tomato water, if desired, and garnish each fillet with a chiffonade of fresh basil.
  • Combine all ingredients thoroughly.

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large ovenproof saucepan or Dutch oven over medium-high heat. Add the onions and cook, stirring, until soft, 3 to 4 minutes. Add the rice and cook, stirring, until opaque and nutty in aroma, 2 to 3 minutes. Add the chicken broth and salt, stir well, and bring to a boil. Cover with a tight-fitting lid and transfer to the oven. Bake until the rice is tender and the liquid is absorbed, 25 to 30 minutes.
  • Remove the rice from the oven and let stand, undisturbed, for 5 to 10 minutes. Fluff the rice with a fork and stir in the green onions, if desired. Serve hot.
  • Combine all ingredients in a blender or food processor. Add just enough olive oil for flavor and season with salt and pepper, to taste.

4 teaspoon dried breadcrumbs
2 teaspoon fresh parsley (, minced)
1 teaspoon fresh chives optional (, snipped (optional))
2 teaspoon Parmesan Cheese (, freshly grated (optional))

Steps:

  • Preheat the oven to 400° F.
  • In a small saucepan over medium-high heat, melt the butter until bubbly. Combine garlic, Worcestershire sauce, Creole seasoning, pepper, and parsley with the butter sauce. Cook the sauce low heat for 2 minutes to blend flavors.
  • Place the red snapper fillets in a baking dish that has been sprayed with cooking spray.
  • Brush both sides of fish fillets with the butter and herb mixture.

  • Preheat oven to 400°. Oil bottom of baking dish very lightly. Wet fillets. Roll in combined dry ingredients. Place in baking dish. Squeeze on fresh lemon. Bake 20-30 minutes without turning. Fish is done when flaky. Serve with whipped potatoes and broccoli. (Don't forget the tartar sauce.) Even Easier: Foil is my friend where baked or broiled fish is concerned. I spray it with Pam so that the fish lifts off easily. And of course, the clean-up is throw-away quick.

Take your Cameron’s red snapper fillet and score it on the skin side about halfway through the fish and 2 inches apart; this will allow the herb mixture to permeate the meat of the fish and keep the fish from curling up.
  • Put your olive oil, garlic, parsley, thyme, lemon juice, and salt and pepper into a food processor and blend until the garlic and herbs are in tiny pieces. Line a baking dish that is large enough to fit your fillet with foil and place your lemon slices on the foil. Rub your herb mixture all over your red snapper fillet and inside the scores you made on the fish.
  • Place the red snapper on top of the lemon slices and bake for about 15 minutes. You are going to want to check your snapper starting at around 12 minutes. You want it to be fork flakey but not overdone. If it is too rubbery and not flakey, it needs some more time in the oven.
  • We found that these red snapper fillets are great served with roasted potatoes and a salad, but there are so many options you could choose as your side. A simple brown butter sauced pasta or rice pilaf would be lovely too.
