This is the juiciest, best chicken we've ever had. It was originally my mother-in-law's recipe. I never make bone-in chicken, but I wouldn't change a thing about this perfect recipe! Your family will love it!

6 skinless chicken breasts, bone in
1/2 cup butter
13 1/2 ounces Ritz crackers, 3 packages (each pkg has 37 crackers)

Steps:

  • Preheat oven to 350°.
  • Rinse chicken and pat dry.
  • Place Ritz crackers in the blender and blend until finer than breadcrumbs.
  • Melt butter completely (I microwave it).
  • Dip chicken in melted butter.
  • Coat chicken in Ritz crumbs and place on baking sheet.
  • Bake for 45 minutes.

1 (3 lb) chicken, cut into pieces (or any chicken parts)
3/4 lb saltine crackers
1 teaspoon seasoning salt
1 teaspoon dried parsley
1 teaspoon dried onion
1 teaspoon celery salt
1/2 teaspoon paprika
salt and pepper, to taste

Steps:

  • Grind the crackers in food processor until fine.
  • Add the rest of the ingredients and grind a few more seconds.
  • Empty the crumbs into a gallon Ziploc bag.
  • Salt and pepper the meat.
  • Coat the meat by shaking a few pieces at a time in the bag of crumbs.
  • Place the meat pieces on a cookie sheet (pieces can be drizzled with melted butter or left as is).
  • Bake in a 400°F oven for 30 to 35 minutes.

My husband and I came up with this super-easy chicken dish one night when we didn't have much time. The chicken comes out juicy and tender with very few ingredients and almost no prep time. We like to serve it with broccoli and baked potatoes or rice but it would go with almost anything. This makes enough for 2-3 but recipe could be easily doubled.

1 lb approx. boneless skinless chicken breast
15 -20 Ritz crackers (1/2 sleeve)
3 -4 tablespoons butter, melted
1 -2 tablespoon parmesan cheese

Steps:

  • Preheat oven to 375.
  • Cut chicken into pieces of desired size. I like to make them small (2" chunks) so I can use more crackers.
  • Crumble crackers into a bowl (crumbs should not be too small) and mix in cheese.
  • Coat chicken with melted butter and then roll in cracker crumb mix. Place on baking sheet or pan and sprinkle more crumbs on top.
  • After all pieces are coated, drizzle remaining butter over chicken and top with remaining crackers.
  • Bake at 375 for 18-22 minutes (longer if pieces are large) or until center of chicken is no longer pink.

34 Ritz crackers, broken into pieces (4 1/2 ounces or 1 sleeve)
1 cup parmesan cheese, grated
1/2 teaspoon fresh ground black pepper
1/2 cup all-purpose flour
2 large eggs
1/2 cup milk
4 six-ounce chicken breasts, boneless skinless and pounded to 1/2 inch thick
2 tablespoons unsalted butter
2 tablespoons vegetable oil
3 1/2 cups marinara sauce, bottled
1 cup mozzarella cheese, shredded

Steps:

  • Preheat the oven to 350°F and butter a 9x13-inch baking dish.
  • Combine the Ritz crackers, Parmesan and pepper in the bowl of a food processor. Process until the mixture forms fines crumbs, about 20 seconds.
  • Place the flour in a large bowl for dipping. Beat the eggs with the milk in separate large bowl until frothy. Place half of the Ritz cracker and Parmesan mixture in a third bowl for dipping.
  • Working with one breast at a time, roll in the flour making sure it is thoroughly coated. Dip in the egg and turn until coated. Transfer to the Ritz cracker crumb bowl and turn until the chicken is completely coated. Transfer to a plate or platter. (Can be done several hours in advance at this point. Keep refrigerated until ready to proceed).
  • Melt the butter with the oil in a large skillet over medium-high heat. Add the Ritz cracker-coated chicken and cook until lightly browned, 3 to 4 minutes per side.
  • Spread enough of the marinara sauce to thickly coat the bottom of the baking dish. Arrange the chicken on top of the sauce. Spoon the rest of the sauce over each breast and top with the mozzarella cheese and the remaining Ritz cracker and Parmesan mixture. Bake until bubbly and browned, 15 to 20 minutes.

1 whole chicken (2-1/2 lb.), cut up
25 round buttery crackers, finely crushed (about 1 cup)
2/3 cup flour
1/2 tsp. ground red pepper (cayenne)

  • Pour buttermilk over chicken in shallow dish; cover and refrigerate 1 hour to marinate. Remove chicken from marinade; discard marinade.
  • Add chicken to combined cracker crumbs, flour and red pepper in shallow dish, turning to evenly coat all sides.
  • Heat oil in large saucepan to 350°F. Add half the chicken; cook 15 min. or until chicken is done (165°F). Remove from oil; drain on paper towels. Repeat with remaining chicken.

I am a retired caterer. I have used this recipe for many years. Everyone I have served it too seems to just love it and always come back for seconds. Its one of the simplest and easiest fried chicken recipes you will ever prepare. The Ritz cracker crumbs were used many years ago as a last minute substitute for saltines. I think this was a one of my best substitutes ever. Needless to say I never used saltines again. I hope you enjoy!

1 whole broiler-fryer chicken (cut into pieces)
1 cup butter (melted) or 1 cup margarine (melted)
2 cups Ritz crackers (crushed)
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon sage
1/4 teaspoon cumin

Steps:

  • Spray a sheet cake style pan with non stick canola spray.
  • Preheat oven to 400°F
  • Wash chicken thoroughly and lay on paper towels and pat dry.
  • Melt butter in a medium sized dish.
  • Place Ritz cracker crumbs in a large bowl.
  • Mix all seasonings together in a small bowl.
  • Dip chicken pieces in the butter then immediately into the cracker crumbs.
  • Place chicken in the sprayed pan.
  • When all chicken is in the pan, sprinkle chicken evenly with seasoning mix.
  • Bake in a 400°F oven for approx 35 to 45 minute or until chicken is completely cooked. You may be tempted to turn 1/2 way through baking. You can if you want, but it's really not necessary.

I wanted a coating for skinless chicken so I tried several off-the-shelf products, and a few recipes, and decided to make one of my own. The chicken can be coated then frozen before cooking.

1/2 cup plain breadcrumbs (I made my own)
2 tablespoons yellow cornmeal
2 tablespoons parmesan cheese, grated
1 teaspoon tony chachere creole seasoning
2 tablespoons unsalted butter, cold and diced
1/4 cup nonfat plain yogurt
2 lbs boneless skinless chicken breasts (I trimmed 6 to uniform size, using the rest of the chicken in another recipe)

Steps:

  • In the bowl of a food processor, mix bread crumbs, cornmeal, Parmesan cheese and Creole seasoning together. Pulse several times to blend thoroughly.
  • Add diced butter to crumb mixture and pulse 6-8 times, or until crumb mixture is moistened. Place mixture in a shallow dish.
  • Pat chicken pieces dry with paper towel. Smear yogurt on all sides (may substitute mayonnaise or creme fraiche).
  • Dredge chicken in crumb mixture, turning to coat evenly.
  • IF FREEZING: Place on a cookie sheet, with pieces not touching each other. Freeze. May be individually wrapped after frozen. To cook: unwrap frozen chicken, place in baking dish and bake (from frozen) according to directions that follow. An additional 10 minutes of cooking time may be necessary.
  • TO COOK: Preheat oven to 375°F Lightly spray baking dish with cooking spray. Place coated pieces in baking dish. Cook 15 minutes then turn and continue cooking until done (approximately 10 more minutes).
