2 cups penne pasta
1 tablespoon butter
1 clove garlic, minced
1 ½ tablespoons all-purpose flour
½ cup 1% milk
½ cup heavy cream
1 cup freshly grated Parmigiano-Reggiano cheese
1 pinch ground nutmeg
1 cup cubed rotisserie chicken

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Meanwhile, melt butter in a saucepan over medium heat and cook garlic for 1 minute. Whisk in flour until a paste forms. Pour in milk and cream, whisking continuously until smooth. Stir in 3/4 of the Parmigiano-Reggiano cheese and nutmeg. Add drained penne pasta and cooked chicken; stir to combine. Pour mixture into a casserole dish. Sprinkle with remaining cheese.
  • Bake in the preheated oven until cheese is melted, 10 to 12 minutes.

Oven Baked Alfredo Chicken is a delicious weeknight dinner option, especially if you enjoy alfredo sauce! Easy to prepare, this dish will not disappoint!

4 chicken breasts, boneless, skinless
cooking spray
3/4 cup alfredo pasta sauce
2 cups breadcrumbs, panko or crushed cornflakes
1 tablespoon garlic powder
1 tablespoon paprika
1 tsp pepper

Steps:

  • Preheat your oven to 350 degrees. Prepare a rimmed backing sheet, covered in tinfoil, and a rack lightly coated in cooking spray. Set aside.
  • Pour your Alfredo sauce into a shallow bowl.
  • Combine crumbs, garlic powder, paprika, and pepper into a measuring cup, stir and then dump onto a plate.
  • Dip chicken breasts in alfredo sauce until coated.
  • Next, press into crumb mixture and lay on your prepared rack.
  • Bake the chicken for 40-45 minutes, or until the chicken is cooked through. Enjoy!
  • The extra alfredo sauce can be drizzled on the chicken when serving if desired.

  • Spread broccoli over chicken.
  • Pour remaining alfredo over chicken and broccoli.

1 (16 ounce) package penne pasta
½ cup butter
2 teaspoons minced garlic
1 (8 ounce) package cream cheese, softened
2 cups milk
6 ounces grated Parmesan cheese, divided
2 teaspoons dried parsley
1 teaspoon Italian seasoning
1 teaspoon salt, divided
½ teaspoon ground black pepper
1 teaspoon olive oil
2 chicken breasts, patted dry
½ teaspoon garlic powder

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Melt butter in a large saucepan over medium-high heat. Add minced garlic; saute until golden, about 30 seconds. Stir in cream cheese until smooth. Add milk; stir until there are no lumps. Lower heat to medium. Add 3/4 of the Parmesan cheese, parsley, Italian seasoning, 1/2 teaspoon salt, and black pepper. Simmer, stirring occasionally, until sauce is smooth, about 5 minutes. Remove from heat.
  • Heat olive oil in a large skillet over low heat. Season chicken with 1/2 teaspoon salt and garlic powder on both sides. Cook chicken breasts until no longer pink in the center and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 6 minutes per side. Cut chicken into 1/2-inch cubes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Butter bottom and sides of a 9x13-inch casserole dish. Cover bottom with a layer of pasta. Place half of the chicken cubes on top. Pour 1/2 of the sauce over the chicken. Repeat layering pasta, chicken, and sauce. Sprinkle top with remaining Parmesan cheese. Cover with aluminum foil.
  • Bake in the preheated oven until sauce is bubbly, about 15 minutes. Remove aluminum foil and bake until cheese is golden, about 5 minutes more.

This is one of my husbands favorite chicken dishes! I make my Alfredo sauce in batches, I refrigerate some and freeze the rest, when we have left over that needs to be used up, I make this!

4 -5 boneless skinless chicken breasts
1 cup alfredo sauce
1/2 cup milk
2 eggs
2 cups Italian seasoned breadcrumbs
1/2 cup flour
2 teaspoons paprika
1 teaspoon cayenne pepper
1/2 cup margarine (less if you prefer)

Steps:

  • Preheat oven to 350°F; place margarine in a 9x13-inch pan and then place pan in oven while preheating to melt the margarine.
  • Rinse chicken and cut off excess fat. Combine Alfredo sauce, milk and eggs in one bowl, and bread crumbs, flour, paprika, and cayenne in another.
  • Dip chicken breasts in Alfredo mixture, then bread crumb mixture. Double bread if you would like (we always do!)
  • When you have breaded all of the chicken, place it in the hot pan with the melted butter, coating both sides of the chicken. If you don't like wasting the Alfredo mixture, you can add it to the pan with the chicken at this point.
  • Bake the chicken for 30-40 minutes, or until the chicken is cooked through.
  • Save the bread crumb mixture for next time--put it in a freezer bag and tuck it away in your freezer.
  • Leave the margarine out and use Pam instead for a healthier version!
  • Freeze after baking for a quick meal!

1/2 cup flour
3 large eggs, beaten
3 tablespoons water
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
1 cup breadcrumbs
3 tablespoons butter
2 tablespoons oil
6 slices mozzarella cheese
1 cup heavy cream
1/4 cup water
1/4 cup butter
1/2 cup grated parmesan cheese
2 tablespoons snipped parsley

Steps:

  • Lightly salt and pepper chicken breasts.
  • Coat in flour.
  • Mix eggs, water, cheese and parsley together.
  • Dip chicken in egg mixture, then in bread crumbs.
  • Heat oil and butter in large skillet and cook chicken over medium heat until brown- about, 15 minutes.
  • Transfer chicken to 11 x 7 baking dish.
  • Preheat oven to 425 degrees.
  • Make cheese sauce by heating cream, water and butter in pan until butter melts, then add cheese.
  • Stir over medium heat for 5 minutes.
  • Stir in parsley.
  • Spoon sauce over chicken.
  • Top each piece with a slice of mozzarella cheese.
  • Bake until cheese melts and chicken is tender, about 8 minutes.
