3 lbs red potatoes or 3 lbs potatoes
5 tablespoons butter
6 tablespoons flour
4 cups milk
2 garlic cloves, crushed
2 teaspoons salt
1 dash cayenne pepper
2 cups cheddar cheese
1/3 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Boil potatoes until just tender, 20-25 minutes; drain.
  • When cool enough to handle, peel and dice into 1/2 inch pieces.
  • Put potatoes in 3 qt round casserole or rectangular baking dish.
  • In a large saucepan, melt butter over medium heat.
  • Add flour; stir while cooking, 1-2 minutes.
  • Whisk in milk and add garlic.
  • Season with salt and cayenne pepper.
  • Stir in cheddar cheese and all but 2 tbs parmesan cheese.
  • Add potatoes to sauce and stir to mix evenly.
  • Pour into casserole dish.
  • Sprinkle remaining parmesan cheese over top.
  • Bake casserole 45 minutes or until potatoes are tender and dish is bubbling and lightly brown on top.
  • Let stand 5 minutes before serving.

1/2 cup all-purpose flour
2 cups milk
1/2 cup grated yellow Cheddar
1/4 cup grated American cheese
1/4 cup grated white cheddar
1 teaspoon chicken bouillon powder
1/2 teaspoons ground nutmeg
1 teaspoon black pepper
3 pounds russet potatoes, washed and scrubbed, peeled and sliced thin
1 stick butter, melted
2 cups panko bread crumbs
2 teaspoons smoky paprika

Steps:

  • Preheat oven to 350 degrees F.
  • In a large sauce pot over medium-high heat, add butter. Stir in the flour until pasty. Add milk; stir to remove lumps and let cook for 6 minutes until it gets thick. Lower heat and add the cheese, bouillon, nutmeg and black pepper. Whisk until well combined and sauce thickens, approximately 4 minutes. Remove from heat.
  • In a bowl, combine butter, panko and smoky paprika. Stir well.
  • Place potatoes into a casserole dish. Pour cheese over potatoes and sprinkle au gratin on top. Wrap with foil and bake in oven for 35 to 45 minutes. Remove foil and cook for 10 minutes uncovered. Allow to sit for 10 minutes.

Steps:

  • Preheat the oven to 400 degrees F. Butter a 9-by-13-inch baking dish with the butter.
  • Dice the potatoes and place in the prepared baking dish.
  • Combine the cream and milk in a bowl. Add the flour, salt and pepper. Whisk together until the flour is incorporated. Pour the cream mixture over the top of the potatoes.
  • Cover with foil and bake for 20 minutes. Uncover and top with the cheeses. Bake for an additional 30 minutes. Remove from the oven and allow to sit for 5 minutes. Sprinkle over the chives and serve.

1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

2 cups mild cheddar cheese, divided (shredded)
1 pint heavy whipping cream
3 garlic cloves, whole, peeled
1 teaspoon chicken flavor instant bouillon (optional)

Steps:

  • Start by preheating your oven to 350 degrees Fahrenheit.
  • Llightly butter a 13x9 inch pan so the potatoes won't stick.
  • Cut your potatoes into very thin slices (width wise).
  • Organize half of the potatoes in the pan.
  • Sprinkle salt and pepper on potatoes to taste (I use about 3/4 teaspoon of pepper and 1/2 teaspoon salt).
  • Add a layer of cheese (1 cup ).
  • Peel 3 cloves of garlic (but leave them whole).
  • In a small sauté pan add 1 pint of heavy whipping cream, the 3 whole garlic cloves, and 1 teaspoon of chicken flavor bouillon (the bouillon is optional but I always add it.).
  • Evenly add the second layer of potatoes.
  • Add salt and pepper (same amount).
  • Add the rest of the cheese (1 cup).
  • Once the heavy whipping cream mixture comes to a boil REMOVE the 3 garlic cloves; pour mixture evenly over the potatoes.
  • Bake for approximately 1 hour and 20 minutes.

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

  • Melt butter in medium saucepan on medium heat; whisk in flour until blended. Gradually stir in milk; bring to boil, stirring constantly. Cook and stir on medium-low heat 2 to 3 min. or until thickened. Remove from heat. Add cheese and mustard; stir until cheese is completely melted and mixture is well blended.
  • Place half the potatoes in shallow 2-qt. casserole sprayed with cooking spray; top with layers of half each of the peppers, onions and cheese sauce. Repeat layers; cover.
  • Bake 50 min. Uncover. Increase oven temperature to 400°F. Bake additional 20 min. or until potatoes are tender, and sauce is hot and bubbly.

2 tablespoons butter or margarine
1 small onion, chopped (1/4 cup)
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
2 cups shredded sharp Cheddar cheese (8 oz)
6 medium potatoes, peeled and thinly sliced (6 cups)
1/4 cup dry bread crumbs
Paprika, if desired

Steps:

  • Heat oven to 375°F. Grease 1 1/2-quart casserole with shortening or spray with cooking spray.
  • In 2-quart saucepan, melt butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
  • Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 1/2 cups of the cheese until melted.
  • Spread potatoes in casserole. Pour cheese sauce over potatoes. Bake uncovered 1 hour.
  • In small bowl, mix remaining 1/2 cup cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes or until top is brown and bubbly and potatoes are tender.

8 cups cubed peeled potatoes
1/4 cup butter, cubed
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups milk
1 pound American cheese, cubed
Minced fresh parsley

Steps:

  • In a large saucepan, cook potatoes in boiling water until done. Drain and place in a greased 2-1/2-qt. baking dish. In a saucepan, melt butter. Add the flour, salt and pepper; stir to form a smooth paste. Gradually add milk, stirring constantly. Bring to a boil; boil and stir for 1 minute. Add cheese; stir just until melted. Pour over potatoes. Cover and bake at 350° for 45-50 minutes or until bubbly. Sprinkle with parsley.

3 pounds Yukon Gold potatoes, peeled and very thinly sliced
3 cloves garlic, minced
¾ teaspoon salt
1 cup heavy cream, divided
freshly ground black pepper to taste
freshly grated nutmeg to taste
2 cups freshly shredded Gruyere cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes, garlic, and salt into a large pot, fill with enough water to cover, and bring to a boil. Reduce heat to medium, and simmer the potatoes until tender but not mushy, 8 to 10 minutes. With a slotted spoon, transfer about half the potatoes to a 9x13-inch baking dish.
  • Pour half of the cream over the potatoes, season with black pepper and nutmeg, and sprinkle half of the Gruyere cheese onto the mixture. Top with the remaining potatoes; sprinkle again with black pepper and nutmeg. Pour on the remaining cream, and sprinkle with remaining Gruyere cheese.
  • Bake in the preheated oven until the cheese topping is crisp and brown on top, about 1 hour.

  • Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion., Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.
  • Arrange potato slices in prepared dish, fanning out a handful at a time and placing in dish at an angle (this ensures every scoop will have tender potatoes from the bottom and crisp edges from the top). Shingle as you work until bottom of dish is covered. Tuck smaller slices into any gaps to fill. Pour cream mixture over potatoes and cover dish tightly with foil. Bake potatoes until tender and creamy, 60–75 minutes. Let cool.
  • Place rack in highest position; heat broiler. Remove foil and top potatoes with Gruyère and Parmesan. Broil until cheese is bubbling and top of gratin is golden brown, 5–10 minutes. Serve topped with more thyme leaves.
  • Do Ahead: Gratin can be baked 1 day ahead. Cover and chill. Bring to room temperature before broiling.
