ROASTED ORANGE CHICKEN

3-4 pound whole chicken
4 oranges, sliced in 8ths
1 white or yellow onion, cut into 4ths
3/4 cup orange juice (fresh, or no sugar added)
4 tablespoons honey
2 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoons chili powder
2 teaspoons dried thyme
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, stir together honey, orange juice, chili powder and paprika
  • Stuff the onion and minced garlic into the empty cavity of the chicken
  • Lay the orange slices on the bottom of the baking dish and around the sides
  • Place the chicken on top and rub with olive oil
  • Rub the thyme, salt and pepper into the skin of the chicken
  • Pour the orange juice and honey mixture over the chicken in the baking dish
  • Bake for 15 minutes, and use a baster or a large spoon to collect the orange juice mixture and pour it back over the top of the chicken and between the chicken legs
  • Do this 3 more times, every 15 minutes until it's been in the oven for 60 minutes
  • Bake for an additional 30 minutes, OR until internal temperature of the chicken reaches 160 degrees, as oven times may vary
  • Wait 15 minutes prior to cutting into it to let the roasted chicken rest and seal in the juices
  • Serve and enjoy!

1 cup chicken broth
1 (4 pound) whole chicken, rinsed and patted dry
½ cup butter, cut into 1 tablespoon sized pieces
2 navel oranges, halved
salt and pepper to taste
2 cloves garlic, minced
½ cup butter, melted
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pour the chicken broth into a small roasting pan, and set aside.
  • Loosen the skin from the breasts and thighs of the chicken. Stuff the butter pieces evenly underneath the skin of the chicken, and place into the roasting pan. Squeeze the orange halves over the chicken, and stuff the orange halves into the chicken cavity. Tie the legs together with kitchen twine. Sprinkle the chicken with salt and pepper to taste, then rub in the minced garlic. Drizzle the melted butter all over the chicken, then lay the herb sprigs onto the breast and around the legs.
  • Cover the dish with aluminum foil, and bake in the preheated oven for 20 minutes. Uncover and baste the chicken with the pan juices. Continue cooking until the chicken is no longer pink, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C), 1 to 2 hours. Baste the chicken every 10 to 15 minutes after you uncover it. Once cooked, allow the chicken to rest out of the oven for 10 minutes before slicing.

4 boneless skin-on chicken breasts
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 large navel orange, zested and juiced (1/2 cup)

Steps:

  • For the orange citrus glaze: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the chicken: Preheat the oven to 400 degrees F. Line a baking sheet with foil and set a rack over the sheet.
  • Pat the chicken dry with a paper towel. Coat the chicken with the canola oil and generously sprinkle with salt and pepper. Place on the rack set over the baking sheet and roast in the oven until cooked through and the internal temperature is 165 degrees F, 40 to 50 minutes depending on the size of the chicken. In the last 10 minutes of cooking, brush the chicken with 2/3 cup of the orange citrus glaze in 5 minutes intervals. Let rest 5 to 10 minutes before serving. Reserve the remaining glaze for Roasted Asparagus with Orange Glaze.
  • For the asparagus: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the asparagus: Place a rimmed baking sheet in the oven and preheat the oven to 400 degrees F.
  • Toss the asparagus with the olive oil in a large bowl and sprinkle with salt and pepper. Add the asparagus to the hot baking sheet and cook until tender, about 10 minutes.
  • Transfer the asparagus to a serving platter. Drizzle with 1/3 cup of the orange citrus glaze and sprinkle with some orange zest.

5 tablespoons olive oil
6 tablespoons rosemary leaves
1 tablespoon kosher salt
2 teaspoons red pepper flakes
3/4 teaspoon freshly ground black pepper
4 pounds chicken thighs and drumsticks (6 thighs and 6 drumsticks)
1/2 medium orange, cut into 6 very thin slices and slices cut into half moons
1 tablespoon unsalted butter

Steps:

  • Heat oven to 450 degrees F and arrange rack in middle.
  • In a large bowl, mix together 1/4 cup of the oil, rosemary, salt, red pepper flakes, and freshly ground black pepper. Add chicken pieces and turn to coat well. Slip 1 piece of orange under skin of each piece.
  • Heat remaining 1 tablespoon olive oil and butter in a cast iron skillet or large frying pan over medium-high heat until butter foams. Working in batches, add 3 or 4 chicken pieces (don't overcrowd the pan) and brown on both sides until skin is crisp and golden, about 2 to 3 minutes per batch. As chicken is finished, place in a 13 by 9-inch baking dish.
  • Once all chicken has browned, place in oven to roast until juices run clear when pricked with a knife and meat registers 160 to 165 degrees F on an instant-read thermometer, about 20 to 25 minutes. Let rest 5 minutes before serving.

1 broiler/fryer chicken (3 to 4 pounds)
1/3 cup orange juice
1/2 teaspoon salt
2 medium onions, quartered
1 medium apple, quartered
1 large carrot, chopped
1 celery rib, chopped
4 fresh thyme sprigs
4 sprigs fresh parsley
2 bay leaves
1 fresh rosemary sprig
2 cups white wine or chicken broth
GRAVY:
Chicken broth
3 tablespoons butter
2 tablespoons all-purpose flour
1/8 teaspoon ground nutmeg, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine butter, minced rosemary, orange zest and 1/8 teaspoon pepper. With fingers, carefully loosen skin from the chicken; rub butter mixture under the skin. Brush chicken with orange juice. Sprinkle salt and remaining pepper over chicken and inside cavity., Place one onion and half of the apple inside the cavity. Tuck wings under chicken; tie drumsticks together. Place breast side up on a rack in a roasting pan. Arrange carrot, celery, thyme, parsley, bay leaves, rosemary sprig and remaining onion and apple around chicken. Pour wine into pan., Roast 1-1/4 to 1-1/2 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°, basting occasionally with drippings. Cover loosely with foil if chicken browns too quickly. Cover and let stand 15 minutes before carving., For gravy, pour drippings and loosened browned bits into a measuring cup. Skim fat. Add enough broth to the drippings to measure 1 cup. In a small saucepan, melt butter. Stir in flour until smooth; gradually add broth mixture and nutmeg if desired. Bring to a boil; cook and stir 2 minutes or until thickened. Serve with chicken.

You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

1 tablespoon salt
1 cup honey
1 cup orange juice with pulp
½ cup unsalted butter, at room temperature

  • Sprinkle chicken with salt and place in a large glass or plastic bowl.

I served this creation for dinner with our house guests and everyone raved over the recipe. It is one of those dishes where every bite led to another compliment. Moist, and flavorful - Slightly sweet and citrusy! The kids loved it as much as the adults. If you have a large family you may want to make two chickens, especially if you are planning to have leftovers! There is an extra contest ingredient in case you want to leave out the orange liqueur (but I wouldn't!). Serve with rice and veggies. This recipe was created for RSC #9.------

1 (3 1/2-4 lb) roasting chickens
1 white onion, quartered
1 bunch fresh basil
1 bunch fresh rosemary (dried rosemary may be subbed if necessary, I used fresh)
1/8 cup butter, sliced (plus extra to rub on skin)
1 orange, quartered
3 garlic cloves, sliced lengthwise into long ovals
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1 cup orange juice, freshly squeezed preferred
4 tablespoons Grand Marnier (see description) or 4 tablespoons Cointreau liqueur (see description)
8 dried apricots, finely chopped, processed
1 tablespoon brown sugar (optional)
1 tablespoon flour (optional)

Steps:

  • Clean chicken and pat dry. Sprinkle Salt and Pepper into the chicken cavity.
  • Pierce skin of chicken with knife in 5-7 places and insert half of the garlic slices under the skin.
  • Stuff (in small batches to make even throughout cavity) onion, fresh herbs, butter, orange quarters, and remaining garlic. Rub chicken skin with a little butter. Sprinkle with salt and pepper.
  • To close opening, make two slices in the chicken skin, one on either side of opening, and place the leg bone from the opposite side into the sliced skin on both sides.
  • Roast chicken at 400 degrees for 15 minutes to get skin crisp and then lower heat to 350 and continue to roast for 65 minutes, or when internal thermometer reaches 180 degrees, or when juices run clear. Occasionally baste chicken with pan juices.
  • Remove chicken from pan and place on a platter.
  • Pour pan juices into a sauce pan and add 3/4 cups of the orange juice, Grand Marnier, chopped apricots and brown sugar (if using, remember this will make it a bit sweeter.) Whisk on high until it comes to a boil, lower temp and whisk occasionally until sauce thickens (about 7 minutes) add flour if necessary. You can add the remaining 1/4 cup of OJ if you need to reheat the sauce.
  • Pour sauce over the chicken slices when served.

1 (14 ounce) package extra firm tofu, drained, pressed, and cut into 1/2-inch cubes
1 cup orange juice
peel from 1/4 orange, cut into 1/4-inch strips (no white pith)
2 tablespoons Agave
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 garlic clove, minced
1/2 teaspoon ground coriander
canola oil (for frying)
1/4 cup cornstarch or 1/4 cup arrowroot
1 1/2 teaspoons sea salt
2 tablespoons chopped fresh cilantro
2 cups cooked rice, for serving

Steps:

  • In a small bowl, mix orange juice through coriander. Set aside.
  • Fill a large, heavy-bottomed skillet with 1/2 inch of oil, heat over medium-high heat. While oil is heating, whisk together the cornstarch and salt in a small bowl. Dredge the tofu in the cornstarch mixture by tossing a few cubes at a time in the bowl and removing them onto a plate. Be sure to shake off extra cornstarch before frying.
  • The oil is hot enough when bubbles form around the handle of a wooden spoon inserted in the oil.Carefully place tofu in the oil and let fry until the bottom is golden and crisp *(don't fiddle with it too much). Flip tofu using a spatula or tongs and fry until the other side is golden and crisp. Remove and drain on paper towels.
  • Heat a large skillet over medium-high heat (you could carefully pour out the used oil and wipe out the one used to fry the tofu) and add fried tofu and orange mixture. Let cook until the sauce bubbles down to a thick syrupy sauce. Turn off heat and mix in cilantro. Serve over rice.
