Did you love creamsicles as a child? Try this grownup version of an old-fashioned favorite! Orange Creamsicle Poke Cake is an easy cake recipe with Jello and Pudding.

1 box white cake mix ((prepared to package instructions))
3 ounces orange gelatin ((1 small box))
1 cup boiling water
3.4 ounces French vanilla instant pudding ((1 small box))
1 ½ cup milk
30 ounces mandarin oranges ((drained))
8 ounces whipped topping ((thawed))

Steps:

  • Mix and bake cake in 13x9 pan according to package instructions. Allow the cake to cool.
  • Using a fork, poke holes in the top of the cake.
  • In a small bowl, mix together gelatin with 1 cup of boiling water until dissolved. Pour the gelatin over the cake, making sure to pour over and into the holes.
  • In a small bowl, mix together the French vanilla pudding mix and 1 ½ cups of milk. Allow the pudding to set for 3 minutes, then spread it overtop the cake.
  • Add a layer of half of the Mandarin oranges over the pudding.
  • Top with whipped topping and the remaining Mandarin oranges.
  • Cover and chill for 4 hours before serving. Keep refrigerated.

Candy Orange Slices
Orange Zest
One box (4-serving) vanilla pudding
1 cup milk
8 oz. tub of Cool Whip
1 teaspoon vanilla, optional
1 cup boiling water
One box (4-serving size) orange JELL-O
1 cup cold water
Vanilla Cake Mix
3 eggs
1 cup orange juice
1/2 cup extra virgin olive oil

Steps:

  • Heat oven to 350ºF (325ºF for dark or nonstick pans).
  • Spray 13x9-inch pan with baking spray with flour.
  • In a large bowl, beat cake mix, eggs, orange juice, and oil with electric mixer on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping the bowl occasionally. Pour batter into pan.
  • Bake 28 to 33 minutes or until toothpick inserted near center comes out clean. Cool completely in pan on a cooling rack for about 1 hour.
  • Use a skewer to poke holes all over cake.
  • In a medium bowl, pour boiling water over orange JELL-O; stir until gelatin is completely dissolved. Stir in cold water. Pour gelatin mixture carefully and slowly over the cake. Refrigerate for 2-3 hours.
  • Beat together pudding mix, milk and vanilla in a large bowl until blended. Fold in container of whipped topping. Spread over cooled cake.
  • Refrigerate for at least 30 minutes before serving.

3 eggs
1 cup water
1/2 cup canola oil
1 cup boiling water
1 box (4-serving size) orange-flavored gelatin
1 cup cold water
1 box (4-serving size) vanilla instant pudding and pie filling mix
1 box (4-serving size) Jell-O™ orange-flavored gelatin
1 cup milk
2 tablespoons orange juice
1 container (8 oz) frozen whipped topping, thawed
Additional whipped topping
Grated orange peel

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
  • In large bowl, beat cake mix, eggs, 1 cup water and the oil with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter into pan.
  • Bake 28 to 33 minutes or until toothpick inserted near center comes out clean. Cool completely in pan on cooling rack, about 1 hour.

1/4 cup butter, softened
1/2 tsp. pumpkin pie spice
2 cups powdered sugar

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package; stir in carrots and raisins. Pour into 13x9-inch pan sprayed with cooking spray.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean. About 5 min. before cake is done, bring water to boil.

1 vanilla cake mix (usually 15.25 ounces*)
1 cup whole milk*
6 tablespoons unsalted butter (softened*)
2 large eggs*
3 ounces orange Jello mix
1 cup boiling water
1/2 cup cold water
3 ounces instant vanilla pudding mix
1/2 cup milk
1/2 cup orange juice*
8 ounces Cool Whip

Steps:

  • Mix together the cake mix, milk, butter, and eggs according to the package directions for the cake mix you're using.
  • Bake the cake according to the package directions, and allow it to cool for 10-15 minutes.
  • Meanwhile, while your cake is cooling, mix the Jello mix with boiling water, mixing 'til the Jello powder is fully dissolved.
  • Then stir the cold water into the Jello mixture.
  • Poke holes all over the top of the cake with a fork. Don't poke too many holes, or your cake will be completely orange, and we're going for orange stripes in the cake instead.
  • Slowly pour the Jello mixture over the entire cake, and allow the cake to finish cooling.
  • Once your cake has cooled, whisk together the pudding mix, milk, and orange juice 'til the pudding thickens.
  • Fold the whipped cream into the pudding mixture with a spatula. (By fold, I mean gently mix by hand.)
  • Spread the frosting onto your completely cooled cake, and chill for at least 2 hours before serving.
  • Garnish each slice with mandarin oranges before serving.
