ORANGE-MARINATED CHICKEN SATAY WITH PEANUT SAUCE

Orange-Marinated Chicken Satay with Peanut Sauce image

After a recent trip to Southeast Asia, I came back bursting with inspiration and ideas. This super-easy chicken satay incorporates some of the tricks I learned abroad, including a peanut sauce that requires only a handful of ingredients but is nonetheless chock-full of flavor. You can use any cut of boneless chicken you prefer--strips of boneless skinless breasts or thighs work as well as the tenders.

Provided by Chris Santos

Categories     main-dish

Time 1h40m

Yield 4 to 6 servings

Number Of Ingredients 13

Finely grated zest of 1 large navel orange
1/2 cup fresh orange juice
1/4 cup extra-virgin olive oil
2 tablespoons Japanese soy sauce
2 garlic cloves, shredded on a Microplane zester
2 pounds chicken tenders, trimmed of tendons and cut in half crosswise to make 24 pieces
Kosher salt, for seasoning
Nonstick cooking spray, if using a grill pan and oven
1/2 cup reduced-sodium chicken broth
1/4 cup hoisin sauce
1/4 cup smooth peanut butter
1/2 teaspoon sambal oelek or other Asian chili paste
1 garlic clove, shredded on a Microplane zester

Steps:

  • To marinate the chicken: Whisk all of the marinade ingredients together in a medium bowl. Put the chicken in a 1-gallon self-sealing plastic bag. Pour in the marinade, seal the bag, and refrigerate for at least 1 hour or up to 8 hours.
  • To make the peanut sauce: Combine all the ingredients in a small saucepan. Cook over medium heat, whisking almost constantly, until simmering, smooth, and thickened. Remove from the heat and cover to keep warm.
  • Prepare an outdoor grill for direct cooking over medium heat (350 degrees F to 450 degrees F). Alternatively, preheat the oven to 375 degrees F and heat a grill pan over high heat.
  • Remove the chicken from the marinade. Thread each chicken strip on a skewer. Place the meaty parts of the skewers over direct medium heat with the skewer handles facing the cooler part of the grill; slip a folded strip of aluminum foil under the handles (see Cook's Note). Sprinkle with salt. Grill, with the lid closed, turning once, until browned and the chicken shows no sign of pink when pierced with the tip of a small knife, about 6 minutes. Alternatively, spray the grill pan with nonstick cooking spray. Add the skewers and cook until grill marks appear on the chicken, about 1 minute per side. Transfer the skewers to a foil-lined rimmed baking sheet and bake until the chicken is cooked through, 4 to 5 minutes. Transfer the satays to a platter.
  • Pour the peanut sauce into a serving bowl. Serve the satays with the peanut sauce for dipping.

Provided by Chris Morocco

Categories     Bon Appétit     Chicken     Dinner     Citrus     Ginger     Garlic     Soy Sauce     Lemongrass     Lime Juice     Cilantro     Winter

Yield 4 servings

Number Of Ingredients 21

Chicken:
4 garlic cloves, crushed
1 (2-inch) piece fresh ginger, crushed
1 cup mixed fresh citrus juice (such as sour orange, grapefruit, and/or lime)
1/2 cup soy sauce
1/3 cup distilled white vinegar
1/4 cup sugar
1 (3 1/2-4-pound) chicken, halved, backbone removed
Kosher salt
Dipping sauce and assembly:
1 lemongrass stalk, top third removed
2 shallots, halved
2 scallions, dark green tops removed
1 red chile (such as Fresno)
4 garlic cloves, unpeeled
1 (1-inch) piece ginger, peeled, very finely chopped
2 tablespoons fish sauce
2 tablespoons fresh lime juice
1 teaspoon sugar
1 pomelo
Cilantro sprigs (for serving)

Steps:

  • Chicken:
  • Combine garlic, ginger, citrus juice, soy sauce, vinegar, and sugar in a medium bowl. Place chicken halves in a large resealable plastic bag and pour in marinade. Seal bag, pressing out any air. Chill at least 12 hours and up to 2 days.
  • Place rack in top third of oven; preheat to 425°F. Remove chicken from bag; discard marinade. Pat chicken dry with paper towels; season lightly with salt.
  • Roast chicken on a foil-lined rimmed baking sheet until deep brown and cooked through, 30-40 minutes.
  • Dipping sauce and assembly:
  • Bruise lemongrass stalk by lightly crushing with a rolling pin. Bring lemongrass and 1/2 cup water to a boil in a small saucepan. Remove from heat and let sit until very fragrant, 8-10 minutes; strain lemongrass infusion into a large measuring glass.
  • Meanwhile, heat a large skillet, preferably cast iron, over medium-high. Toast shallots, scallions, chile, and garlic, tossing occasionally, until dark brown in spots, 8-10 minutes. Let cool. Remove skins from garlic and coarsely chop garlic with shallots, scallions, and chile.
  • Add garlic, shallots, scallions, chile, and ginger to lemongrass infusion. Stir in fish sauce, lime juice, and sugar.
  • Using a sharp knife, remove peel and white pith from pomelo; discard. Working over a medium bowl, cut along sides of membranes to release segments. Squeeze juice from membranes into bowl; discard. Tear segments into large pieces. Mix into dipping sauce.
  • Transfer chicken to a platter, spoon some dipping sauce over, and top with cilantro. Serve with remaining dipping sauce alongside.

ASIAN ORANGE CHICKEN

Asian Orange Chicken image

I got this recipe from another online site. This is what was posted:"A delicious citrus chicken recipe with flavors reminiscent of the orange chicken from a popular restaurant in the mall."

Provided by mamadelogan

Categories     Asian

Time 1h20m

Yield 1/2 cup, 4 serving(s)

Number Of Ingredients 18

1 1/2 cups water
2 tablespoons orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
1/2 teaspoon minced fresh gingerroot
1/2 teaspoon minced garlic
2 tablespoons chopped green onions
1/4 teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water
2 lbs boneless skinless chicken breasts, cut into 1/2 inch pieces
1 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil

Steps:

  • Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes.
  • Place the chicken pieces into a reseal able plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours.
  • In another reseal able plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil.
  • Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low; add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.
  • Serve with steamed jasmine rice.
  • * I usually skip the marinating part and just make the sauce. I dip the chicken pieces in a batter of 4 egg whites, Whip egg whites in a medium bowl until foamy. Stir in 2/3cup of mochiko until it has a pasty consistency. Dip the pieces in the batter and deep fry. This batter gives it a light fluffy texture, the way you get them in the restaurants. You can find Mochiko in the Asian aisle of most grocery stores. Flour will not produce the same kind of texture; it really is worth finding the mochiko if you plan on making it this way.
