This updated version of the classic Philadelphia float is flavored with mandarin oranges and a dash of vanilla for a simple, fuss-free dessert.

2 Mandarin oranges
1/4 teaspoon vanilla extract
2 scoops best-quality vanilla ice cream
Club soda

Steps:

  • Remove the rind from the oranges. Supreme the oranges into a small bowl and squeeze the juice from the membrane over them. Stir in the vanilla.
  • Transfer oranges and juice to a tall glass. Add the ice cream to the glass. Top off with the club soda. Stir once and serve immediately with a tall spoon.

1 pint Vanilla ice cream
12 ounces orange soda (like Fanta or Faygo)
Whipped cream
Sprinkles
Orange candy slices

Steps:

  • Add 2 scoops of ice cream to glasses.
  • Slowly pour orange soda over ice cream. Add more soda after the fizz recedes, if desired.
  • Garnish with optional toppings if desired.
  • Serve immediately with a spoon or straw.

1 orange wedge
2 tablespoons yellow sanding sugar
1 pint coconut sorbet
Two 12-ounce bottles orange soda, chilled
1 canister sweetened whipped cream

Steps:

  • Rub the orange wedge along the rims of 2 pint-size glasses. Pour the sugar onto a shallow dish and dip the rims of the glasses into the sugar.
  • Put 2 to 3 scoops of coconut sorbet into each glass. Fill each glass with orange soda (you may not need to use it all). If you pour the soda over the back of a spoon into the glasses, it will keep the soda from breaking up the sorbet too much. Top each float with lots of whipped cream and sprinkle with yellow sanding sugar. Add a straw and enjoy!

  • In large bowl, mix ice cream, orange juice concentrate, water, vanilla and food color until almost smooth.

This citrusy dessert cocktail is a great way to use up any leftover Champagne or sparkling wine that may have gone flat.

Number Of Ingredients 7

15ml (3 teaspoons) Champagne or sparkling wine (this can be flat, left over from a party)
15g (about 3 1/4 teaspoons) caster or superfine sugar
25ml (5 teaspoons) Cocchi Vermouth di Torino
15ml (3 teaspoons) Campari
35ml (about 2 tablespoons plus 1 teaspoon) soda water
2 scoops of orange sorbet, preferably blood orange
A slice of orange (use blood orange, if in season)

Steps:

  • Put the Champagne or sparkling wine in a small pan and simmer until reduced by a third. Add the caster sugar and stir until dissolved, then leave to cool. (It's worth making a much larger quantity of this syrup and storing it in the fridge to make other drinks.)
  • Pour the vermouth, Campari, Champagne syrup, and soda water into a small shaker and shake for 10-15 seconds. Scoop the sorbet into a chilled float glass. Pour the liquid ingredients on top and garnish with the slice of orange.
