9 thin slices whole-grain bread
3 tablespoons ricotta
1 teaspoon extra-virgin olive oil
1/2 teaspoon lemon zest (1/2 lemon)
Pinch kosher salt
3 thin slices prosciutto San Daniele, halved lengthwise
12 leaves baby arugula
1/2 avocado, thinly sliced
2 teaspoons toasted quinoa (see Cook's Note)
1/4 teaspoon flaky sea salt
1/8 teaspoon chile flakes
1 tablespoon extra-virgin olive oil
2 tablespoon creme fraiche
2 teaspoons capers, chopped
3 slices smoked wild salmon, halved
Twelve 1-inch pieces fresh chives

Steps:

  • Toast the bread. Trim the crusts. Halve the slices into 1 1/2-by-3-inch pieces.
  • For the prosciutto and ricotta: In a small bowl, mix together the ricotta, olive oil, lemon zest and salt. Spread the mixture on 6 pieces of bread. Ribbon a piece of prosciutto on top and garnish with 2 arugula leaves.
  • For the avocado: Place 2 slices of avocado on 6 pieces of bread. Sprinkle evenly with the quinoa, sea salt and chile flakes.
  • For the smoked salmon: In a small bowl, mix together the creme fraiche and capers. Spread evenly over the remaining 6 pieces of bread. Ribbon a piece of salmon over the top and garnish with 1 or 2 batons of chive.

1/4 cup MIRACLE WHIP Dressing
3 small tomatoes, each cut into 4 slices
4 KRAFT Slim Cut Mozzarella Cheese Slices
1 Tbsp. CLASSICO Traditional Basil Pesto Sauce and Spread

Steps:

  • Heat broiler.
  • Place bread halves, cut sides up, on baking sheet; spread with dressing. Top with tomatoes and cheese.
  • Broil, 4 inches from heat, 2 min. or until tomatoes are heated through and cheese is melted.
  • Top with pesto. Cut each sandwich in half to serve.

8 medium tomatoes
3 (16-ounce) balls fresh mozzarella
4 loaves ciabatta, sliced in 1/2 lengthwise
1 cup prepared pesto
Kosher salt and freshly ground black pepper
32 basil leaves

Steps:

  • Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
  • Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.
  • Slice each half loaf crosswise into 4 serving portions, making sure that each piece has a slice of tomato, mozzarella and a basil leaf.

1/2 lb lean ground turkey
olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cumin
1 cup arugula
1/2 cup cherry tomatoes, sliced
1/2 cup thinly sliced red onion
6 slices sourdough bread
2 cups fresh basil
1/2 cup parmesan cheese
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup walnuts

Steps:

  • For the turkey mince, sauté ground turkey in a pan with olive oil, salt, cumin, and pepper for about 5-8 minutes until completely cooked through. Set aside.
  • Create pesto: lightly toast walnuts in a dry skillet for 3 minutes or until just starting to become fragrant. Blitz together all ingredients for pesto except olive oil in a food processor, then slowly stream in the olive oil until a coarse paste is created.
  • Toast sourdough over a lightly oiled skillet or in the oven. Assemble sandwiches with onion, tomato, arugula, turkey mince, and a drizzle of pesto.

3 roma tomatoes
1/2 teaspoon curry powder
1/2 cup mayonnaise
butter, soft enough to spread on bread
1 -3 ounce cream cheese, in a pastry bag
parsley

Steps:

  • Cut bread in small round or daisy shapes, about 3 per slice of bread, wrap in plastic and set aside.
  • Slice tomatoes thinly, discarding ends. Stir curry powder into mayonnaise.
  • Spread a thin layer of butter on each round and then spread with curry mayonnaise mixture.
  • Top with one thin slice of tomato. Before serving, pipe a small rosette of cream cheese in center of tomato and garnish with small piece of parsley.

  • Combine all of the pesto ingredients (except the olive oil) in a food processor. Pulse a couple of times until combined, scraping down the sides as needed. Slowly add the olive oil until your desired consistency is reached - I used 1/4 cup because I wanted a chunkier pesto. Taste and adjust seasonings as needed.
  • Heat 1 tbsp of olive oil in a pan over medium heat. Add the tomatoes and a sprinkle of salt, pepper & red pepper flakes. Cook until tomatoes start to burst (approx. 5-7 minutes). Remove the pan from the heat and set aside.
  • Cut baguette down the center and into 4 equal pieces. Spray or brush with olive oil. Heat a griddle over medium-high heat. Place the olive oil side down on the pan and cook until toasted. Remove from the heat.
  • To assemble, spread an equal amount of pesto on each slice of bread, followed by the tomatoes, a handful of arugula, basil, balsamic vinegar and more black pepper.
