One Pot Lamb and Lentils Stew image

1 tbsp olive oil
1 medium carrot, diced
1 medium celery stalk, diced
1 large onion, chopped
2 large garlic cloves, minced
1 pound lean ground lamb (you can also use small cubes)
3 tbsp sherry vinegar
1/4 cup red wine
1 pound black lentils, rinsed
1 can chickpeas, drained
1 tsp cumin powder
1/2 tsp smoked paprika
3 tbsp tomato paste
1 cup canned tomatoes, chopped
1 tsp fresh thyme, chopped
1 cup peeled and cubed potatoes
3 cups chicken stock
2 bay leaves
1 salt and pepper
3 tbsp chopped parsley

Steps:

  • Heat the olive oil in a large heavy-bottomed pan and add the carrot, celery and onion. Cover and cook for until softened, which should take just a couple minutes. Then add the garlic and lamb and cook, stirring and crumbling the ground lamb or turning the lamb chunks as needed, until browned on the outside but still pink on the inside, about 5 minutes. Add the vinegar and wine and cook for 5 minutes or until the liquid evaporates.
  • Add the lentils, chickpeas, cumin and paprika and cook, stirring occasionally, for a few minutes.
  • Stir in the tomato paste, tomatoes, thyme, potatoes, chicken stock and bay leaves. Season with salt and pepper and cook on medium heat for 45 minutes, or until the lentils are soft but not mushy, sorta like cooking pasta until it's al dente. Stir with a wooden spoon from time to time.
  • Remove and discard the bay leaves, season with salt and pepper and serve sprinkled with the parsley.

1/2 pound lean lamb cubes
6 cups reduced-sodium vegetable or chicken broth
1 (28-ounce) can diced tomatoes
3 tablespoons tomato paste
1 tablespoon balsamic vinegar
1 chopped onion
2 celery stalks, chopped
2 carrots, chopped
3 cloves garlic, minced or 3 teaspoons pre-minced garlic
2 teaspoons dried rosemary
1 teaspoon dried thyme
2 bay leaves
1/4 cup chopped fresh parsley leaves
Salt and ground black pepper

Steps:

  • In a slow cooker, combine all ingredients but the parsley, salt and black pepper.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • Just before serving, remove bay leaves, stir in parsley and season, to taste, with salt and black pepper.

1 tablespoon olive oil
1 ½ pounds lamb shoulder arm chops, cubed, round bones reserved
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped
4 cloves garlic, minced
1 cup lentils, picked over and rinsed
2 cups chicken broth, or more as needed
1 (14 ounce) can diced tomatoes
3 carrots, peeled and sliced
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon dried basil
2 cups coarsely chopped fresh spinach
1 lemon, juiced and zested
½ cup ricotta salata cheese, crumbled

Steps:

  • Heat oil in a heavy pot over medium-high heat. Add the lamb cubes and bones and brown on all sides, about 3 minutes. Sprinkle with salt and pepper. Add onion and garlic and continue cooking about 2 minutes, stirring frequently.
  • Stir in the lentils, 2 cups of the chicken broth, tomatoes, carrots and the thyme, sage and basil. Bring to a boil, reduce the heat to low and simmer, covered, until the lentils are tender but not quite done, stirring occasionally. Depending on the type and freshness of the lentils, this will take from 15 to 30 minutes. If the stew seems dry, add more broth (up to one cup additional). Discard the lamb bones.
  • Add the spinach and cook 5 minutes more. Stir in the lemon zest and juice. Garnish individual servings with some of the crumbled cheese.

1 lb trimmed boneless lamb, cut into 1 inch pieces
1 1/2 cups chopped onions
3 -4 cloves garlic, minced
1 1/2 teaspoons minced peeled ginger
2 tablespoons curry powder
2 cups vegetable broth
1 1/2 cups diced tomatoes with juice
1 cup dried brown lentils
3 carrots, peeled and sliced thick
2 zucchini, cut into chunks
1 cup frozen peas
salt and pepper

Steps:

  • Sprinkle lamb with salt and pepper.
  • In a big pot, over medium-high heat, saute lamb in oil for about 5 minutes or until lamb is browned.
  • Add onion, garlic, and ginger; saute 5 more minutes.
  • Add curry powder and stir for 30 seconds.
  • Add vegetable broth, tomatoes with juice, lentils, carrots, and zucchini; bring to a boil.
  • Reduce heat; cover and simmer for 1 hour or until lamb and lentils are tender, stirring occasionally.
  • Add peas and simmer about 5 minutes or until heated well.
  • Season wtih salt and pepper to taste.
  • Serve in soup bowls.

LEEK 'N LAMB STEW (MEAL IN ONE POT)



Leek 'n Lamb Stew (meal in One Pot) image

This is a little different than the stews I could find on Zaar. It is by Philomena Corradeno's Chopping Block with a few small changes by me. Serve with a green salad and some crusty bread to sop up the sauce. If you wish you may thicken the sauce by adding 2 tsp cornstarch mixed with 1/4 cup cold water for the final 15 minutes of cooking. I like mine with out the thickening.

2 lbs lean lamb stew meat, cut in to 1 1/2 inch cubes
1 tablespoon olive oil
4 cloves garlic, minced
2 large leeks, cleaned & chopped
4 large carrots, cut into 1 inch pieces
3 cups celery, chopped
16 small new potatoes, cut in half
1 cup mushroom, sliced
1 bay leaf
1 teaspoon dried thyme
salt and pepper
4 cups broth (vegetable, Chicken or beef, you may use two cups red or white wine and 2 cups broth , total liquid 4)
1 cup grated parmesan cheese

Steps:

  • Add oil to a large pot and brown the lamb cubes, apprx 10 minutes add garlic do not let the garlic get too brown.
  • Add all the veggies and continue to brown for another 5 minutes.
  • Add 1/2 the broth, stirring to get all the little bits off the bottom of the pot and incorporated into the stew.
  • Add spices and 1/2 the cheese.
  • Bring to a boil.
  • Add remaining broth, cover and simmer for 1 hour or until the meat and veggies are tender.
  • Let the stew rest 15 minutes before serving.
  • Pass the remaining cheese to sprinkle over each serving.

1 onion
1 pound cubed lamb stew meat
2 large tomatoes, diced
1 ½ cups diced potatoes
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon paprika
1 teaspoon chili flakes
2 tablespoons tomato paste
2 cups chicken broth
1 cup dry lentils
⅓ cup raisins, or more to taste
2 tablespoons honey
1 pinch salt and ground black pepper to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ghee. Add onions and cubed lamb to the melted ghee; cook and stir until lamb is browned and onion is soft and translucent, 5 to 7 minutes. Stir in tomatoes, potatoes, and garlic. Cook for 2 more minutes.
  • Mix in salt, pepper, cumin, coriander, turmeric, cinnamon, ginger, paprika, and chili flakes. Stir in tomato paste. Add chicken broth, lentils, raisins, and honey; stir until all ingredients are well combined.
  • Turn Saute mode off. Close and lock the lid. Set vent to 'Sealing' and select Meat/Stew mode according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 10 minutes. Turn vent and release remaining pressure carefully using the quick-release method according to manufacturer's instructions. Season with salt and pepper, if needed.

This simple hearty stew needs a 5 -quart slow cooker/crock pot. One change I made when I made this recipe was to add a lamb bone (leftover from Easter dinner) and some leftover lamb (I think if you have enough leftover lamb this will work very well, but I also added 1 1/2 pounds or so of uncooked lamb - following the directions below) in the crock pot; then when I came home from work I took out the lamb bone (the meat from the bone already fell off the bone into the soup) and added the swiss chard, went out and dinner was done! The other change I made was instead of a whole can of tomatoes (which I didn't have) I used one can of broth, 1/2 can of tomatoes and 2 small cans of tomato juice. 2 tablespoons olive oil, divided
2 lbs lamb, cut into 1-inch cubes
2 onions, chopped
8 carrots, peeled and sliced
4 stalks celery, sliced

1/2 teaspoon peppercorn, cracked
2 bay leaves
1 cup vegetable broth

8 cups swiss chard, stemmed and chopped

Steps:

  • In a skillet over medium high heat heat 1 tablespoon oil for about 30 seconds or so.
  • Add lamb to skillet, cook until browned (3-5 minutes) in batches if necessary. Transfer lamb to slow cooker as it is cooked.
  • Reduce heat to medium and drain all but 1 tablespoon of the fat from the skillet.
  • Add onions, carrots and celery to skillet and cook stirring until vegetables are soft (5-10 minutes).
  • Stir in garlic, herbes de Provence, salt and peppercorns and cook another minute or so.
  • Stir in bay leaves, broth and tomatoes (with the juice) and bring mixture to a boil and then transfer mixture to slow cooker. (see my note in description - I also added a lamb bone chopped into two pieces so it would fit in my crock pot).
  • Stir in lentils.
  • Cover and cook on low for 8 hours or on High for 4 hours or until mixture is bubbly and lamb and lentils are tender.
  • (Remove bone from crock pot - see note in description) Stir in chard in batches, stirring into the stew. Cover and cook on High for 20-30 minutes or until chard is tender. Discard bay leaves.
