One-Bowl Pumpkin Gingerbread image

This easy and delicious gluten-free and low in carbs Pumpkin Gingerbread takes only minutes to make.

Number Of Ingredients 12

1 1/4 cup almond flour
1/4 cup coconut flour
1 tbsp baking powder
2 tsp ginger powder
2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
7.5 oz canned pumpkin
1/4 cup olive oil
1/4 cup molasses (see post for substitutions)
3 eggs
1/4 cup brown sugar (I use Lakanto Golden)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 x 5 loaf pan and set aside.
  • In a medium size mixing bowl, combine the first 7 ingredients (up to and including the salt) and whisk to combine. Set aside.
  • In a separate bowl, whisk all the remaining 5 ingredients.
  • Once fully incorporated, add wet ingredients to dry ingredients and stir everything together.
  • Pour mixture into baking loaf and bake for 40-50 minutes or until a toothpick comes out clean.
  • Let cool completely before slicing

This is my favorite pumpkin recipe of the season... Adapted from a pumpkin bread recipe i found on Allrecipes.com, my version is more like spicy gingerbread with the added richness of pumpkin!! It is wonderful with a cup of tea and keeps well in the fridge for up to two weeks. Also makes a nice gift! For muffins, reduce cooking time by 30 minutes (i like to add pecans and raisins to the batter for chewy-crunchy muffins, yum!)--. Enjoy!

1 1/2 cups packed brown sugar
1 1/2 cups white sugar
1 cup canola oil
4 eggs
2/3 cup water
1 (15 ounce) can pumpkin puree
5 teaspoons ground ginger
3 teaspoons ground cinnamon
2 teaspoons ground allspice
2 teaspoons ground nutmeg
2 teaspoons ground cloves
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In medium bowl, combine flour, baking soda, baking powder and salt; set aside.
  • In a large mixing bowl, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, cinnamon, allspice, nutmeg and cloves.
  • Add flour mixture to pumpkin mixture, stir until blended. Pour into prepared pans.
  • Bake in preheated oven for about 1 hour, or until a toothpick comes out clean.

This good bread can be made entirely in one bowl, except for the eggs, which should be cracked into a bowl, separately, just in case there could be any shells. The recipe makes two 9x5 inch loaf pans, or one could be done, and several miniatures. Enjoy.

4 cups all-purpose flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon ginger
pumpkin pie spice (optional)
1 1/2 teaspoons salt
4 large eggs
1 cup plain oil
15 ounces solid-pack pumpkin
2/3 cup water
1 cup chopped walnuts (or more) or 1 cup pecans (or more)
1 cup dark raisin
1 teaspoon vanilla (optional)

Steps:

  • Mix together the dry ingredients and spices.
  • Add the eggs, oil and water.
  • Stir in the walnuts (or pecans) and raisins. Add vanilla, if using.
  • Put into two greased and floured 9x5 inch loaf pans and bake in a preheated 350 degree oven for 1 hour, checking after 50 or 55 minutes.

I found this recipe on Allrecipes & tried it last night. It is wonderful!!! This has become my new pumpkin recipe for fall!! I put the batter into mini loaf pans to sell at a bake sale. Someone else suggested putting it in a bundt pan with a glaze drizzled over the top. Whatever you choose to do, it is yummy!

2/3 cup water
1 (15 ounce) can solid pumpkin puree
