Time 26m

Number Of Ingredients 14

2 1/4 cup all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1 tbsp garlic powder
1 tsp salt
1/2 cup salted butter ( melted)
1 tbsp fresh chives (minced)
1 cup milk (2%)
1 3/4 cup medium cheddar cheese ( shredded)
10 slices cooked bacon (chopped)
1/4 cup unsalted butter (melted)
1/2 tbsp fresh chives (minced)
1 tsp dried parsley flakes
1 tsp garlic powder

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a baking sheet with parchment paper.
  • In a large bowl whisk together flour, sugar, baking powder, garlic powder, and salt.
  • Add in melted butter, chives, and milk. Stir well to mix.TIP: When melting stick butter in the microwave, remove from butter wrapper, place in a small microwave bowl, and place the butter wrapper over the top of the bowl. This helps contain any butter splatter
  • Stir in shredded cheese and bacon pieces just until mixed.
  • Using a large cookie scoop, 1/4 cup size, scoop out the dough onto the parchment paper making 12 biscuits about 1 inch apart.
  • Bake 15 to 17 minutes until the tops are lightly browned.
  • Using a small bowl mix all topping ingredients together and spoon evenly over the tops of each warm biscuit.
  • Let biscuits cool for about 10 minutes on the baking sheet before removing them as they'll continue to bake a bit on the warm tray after you remove them from the oven.
  • Serve warm.

  • In large bowl, whisk together the all purpose flour, cornmeal, baking powder, sugar, salt and cayenne pepper. Add the cubed, cold butter. Using pastry blender, cut in butter until crumbly, with about pea-sized pieces of butter. Add the green onion and shredded cheese and stir to coat with flour. Pour about half of the milk into the bowl and stir in. Begin adding the remaining milk, adding it a bit at a time and stirring between additions, adding only as much milk as is needed until the dough comes together in a moist, but not sticky dough. There should be any dry flour visible in the bowl, especially on the bottom. You may not need all the milk (or you may need a splash more). Just use what you need.
  • Turn the dough out onto floured surface and with lightly floured hands, knead gently a couple of time, then pat into a round about 1-inch thick.
  • Line a baking sheet with parchment paper and sprinkle with a little cornmeal. Transfer the round of dough onto the parchment. Using a sharp knife, cut the round into 8 equal-sized wedges, then use a spatula to move the wedges apart, so there is some space between each wedge. Brush the top of the biscuits with buttermilk or milk and sprinkle with a bit of coarse salt, if using. Bake for 18 to 20 minutes or until golden.

  • In a large bowl, whisk together the all-purpose flour, cake flour, baking powder, sugar, and se salt. Add in the cold butter (shortening, lard, or duck fat) and toss the butter in the flour. Using your finger tips or a pastry cutter, quickly cut and rub the butter into the flour mixture until the mixture resembles pea-size pieces (or oats); it’s okay if the pieces are not uniform, that is what you want.
  • Pour in the buttermilk. Using a fork, mix everything until it just comes together (it’ll look like a shaggy mess). Lightly dust a work surface with cake flour or White Lily flour. Turn the dough out, lightly dust the top with flour, and gently knead the mass until it comes together.
  • Using a rolling pin or your hands, quickly flatten the dough out into a rectangle. Fold the short ends over the middle (like a letter) to make three layers. This is the first turn. Give the dough a quarter turn and flatten into a rectangle once again repeating the folding process. Repeat the flattening and folding once more.

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or lightly grease a 12-inch cast iron skillet.
  • Stir together all dry ingredients (flour, baking powder, salt, garlic powder, white sugar) in a medium mixing bowl.
  • Use a wooden spoon to form a well in the center of the dry ingredients. Pour in the melted butter and milk. Stir until the batter is mostly holding together. It will still be wet and a little sticky. Fold in the shredded cheddar.
  • Use a cookie or ice cream scoop to scoop 8-9 biscuits out onto the baking sheet or cast iron. You can also use a spoon to make 10-12 smaller biscuits. Keep about 1/2 inch between biscuits for standalone biscuits. Don't leave a space for pull-apart biscuits. Bake at 425F on the middle oven rack for 14-16 minutes, or until golden.
