Chef John's Boston Baked Beans image

This is a great side dish with anything!

1 pound dry navy beans
6 cups water
1 pinch baking soda
1 bay leaf
6 slices bacon, cut into 1/2-inch pieces
1 yellow onion, diced
⅓ cup molasses
¼ cup packed dark brown sugar
1 teaspoon dry mustard powder
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

1 (15 ounce) can pinto beans
1 (15 ounce) can kidney beans
3/4 cup bacon, cooked and crumbled
2 teaspoons flour
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup dark brown sugar
1/4 cup shallot, diced
1 teaspoon dark mustard
1/2 teaspoon chili powder
1/2 teaspoon cayenne
1/2 teaspoon ground black pepper
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350.
  • Mix a little warm water with flour for a roux.
  • Pour both cans of beans into a casserole dish.
  • Mix roux into beans.
  • Add all remaining ingredients to casserole dish and mix together.
  • Cover, place in oven and bake for approximately 90 minutes, stirring every half hour until sauce has thickened.
  • Remove from oven and let stand 10 minutes covered.

I bring this to every cookout and it never fails that I'm asked for the recipe. I never have any to bring home.

4 cups pork and beans
1/3 cup ketchup
1/2 cup onion, chpd
1 teaspoon dry mustard
2 tablespoons Worcestershire sauce
1/4 teaspoon cayenne
1/2 cup brown sugar
Tabasco sauce
1 dash black pepper
salt

Steps:

  • Pour beans into casserole dish and stir in ketchup, onions, Worcestershire, brown sugar, cayenne, Tabasco, salt and pepper.
  • Cover top of beans with strips of bacon if desired.
  • Sprinkle additional brown sugar on top.
  • Bake at 350°F for 2 hours.
  • Serves 4-6.

1 (450 g) package small white beans (450g = 2 1/2 cups)
1 (40 g) package dry onion soup mix (ie Lipton's)
1/3 cup molasses
2 tablespoons prepared mustard
2 tablespoons ketchup
1/4 cup brown sugar
1/2 teaspoon salt
1/4 lb salt pork, chopped into 1-inch pieces
boiling water

Steps:

  • Wash beans, place in medium bowl, cover with cold water and refigerate overnight.
  • Drain beans, place in saucepan and cover with 6 cups hot water, bring to boil.
  • Reduce heat, simmer covered 40 minutes or till tender.
  • Preheat oven to 300°F.
  • Drain beans, reserve 2 cups liquid.
  • Place beans in 2 quart bean pot or casserole with tight fitting lid.
  • Mix together all other ingredients (except pork), add bean liquid and stir to combine.
  • Add pork to beans, mix in well.
  • Pour liquid ingredients over beans and stir well, be sure liquid covers beans.
  • Cover and bake 5 hours.
  • Stir every hour, if bean dry out add small amounts of boiling water as needed.
  • Note: preparation time doesn't include overnight refrigeration.

1 lb navy beans, sorted and rinsed
1/2 lb side pork, diced
1 onion, chopped
1/2 cup brown sugar
1/2 teaspoon dry mustard
1/4 cup catsup
1/2 cup molasses
1 tablespoon salt

Steps:

  • Place beans in a medium-size kettle, cover with water, and soak for 2 hours.
  • Drain beans. Add enough fresh water to cover.
  • Cover the kettle, bring to a boil; and then simmer until the beans are tender, about 45 minutes. Do not drain!
  • Mix in the remaining ingredients.
  • Place the entire contents of the kettle in oven-proof pot with a lid.
  • Bake in a bean pot for 3 hours at 350°F oven, stir occasionally. If they look a little dry, add some water as needed.

1 lb ground beef
1 onion, chopped
1/2 lb bacon
1/3 cup brown sugar
1/3 cup white sugar
1/4 cup ketchup
1/4 cup barbecue sauce
2 tablespoons molasses or 2 tablespoons Karo syrup
2 tablespoons mustard
1/2 teaspoon chili powder
1/2 teaspoon pepper
1 teaspoon salt
1 (15 ounce) can red kidney beans
1 (15 ounce) can pork and beans
1 (15 ounce) can baby butter beans

Steps:

  • Brown ground beef and onion. Drain.
  • I cook bacon in microwave until crisp.
  • Add, and mix brown and white sugar, ketchup, barbecue sauce, molasses or Karo syrup, mustard, chili powder, pepper and salt.
  • Add kidney beans, pork and beans, and butter beans; mix.
  • Put in large casserole.
  • Bake for 1 hour at 350 degrees Fahrenheit.

1/2 cup onion, chopped
1 (16 ounce) can pork and beans, drained
1 (16 ounce) can lima beans, drained
1 (15 ounce) can kidney beans, drained
10 ounces sharp cheddar cheese, cubed
1 cup ketchup
3/4 cup dark brown sugar, firmly packed
1 tablespoon Worcestershire sauce

Steps:

  • Heat oven to 325 degrees. Butter a 1 1/2 quart casserole. In a small skillet, saute the bacon and onions until the bacon is crisp and onions are lightly browned; drain well. In a large bowl, combine the remaining ingredients. Add bacon-onion mixture and mix well. Pour bean mixture into prepared casserole. Bake uncovered at 325 degrees for 1 1/2 hours. Enjoy!

454 g white beans
5 cups cold water
2 small sliced onions
2 teaspoons cider vinegar
1 cup Splenda brown sugar blend
1/2 teaspoon prepared mustard
1/4 cup molasses
1/2 cup tomato ketchup
1 dash black pepper
1/4 lb low salt bacon or 1/4 lb pork belly

Steps:

  • Soak beans over night.
  • Drain beans.
  • Add 5 cups of cold water, cover,heat till boiling,then simmer about 30 minutes till beans are tender.
  • Drain beans again.
  • Place the sliced onions into bottom of roasting pan or casserole dish.
  • Add the remaining ingredients with the beans,mix to blend together,then pour that mixture to the roasting pan or casserole dish.
  • Place the slices of Bacon on top of the beans .
  • Add enough water to cover the beans.
  • Cover with lid and bake slow for 6-7 hours (depending when beans are cooked)at 250 degrees.
  • When beans are cooked remove 1 cup of the beans and mash and return to the beans.
  • Mix together and serve --.
  • (Salt could be added if need be But i do not use salt).
