1 medium head cabbage (3 pounds)
1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided
1 small onion, chopped
1/2 cup uncooked long grain rice
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon snipped fresh dill or dill weed
1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

1 (28-ounce) can crushed tomatoes, not drained
3 tablespoons light brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  • In a large saucepan, bring 1 inch of water to a boil over high heat. Place cabbage in water, cored-side down; cover pan, and reduce heat to low. Steam 20 minutes, or until cabbage leaves pull apart easily. Drain and set aside.
  • In a medium bowl, combine tomatoes and their juice, brown sugar, Worcestershire sauce and lemon juice; mix well and set aside. In a large bowl, combine ground beef, rice, onion, egg, salt, pepper, and 2 tablespoons tomato mixture; mix well.
  • Place 1 cup tomato mixture in bottom of prepared baking dish. Peel a cabbage leaf off the head and cut off thick stem. Place 1/4 cup meat mixture in center of leaf. Starting at core end, make a roll, folding over sides and rolling loosely. Place seam-side down in baking dish; repeat with remaining cabbage leaves and meat mixture. Spoon remaining tomato mixture evenly over top of cabbage rolls and cover.
  • Bake 1-1/4 hours. Uncover and cook 10 additional minutes, or until beef is no longer pink.

1 medium head cabbage
water to cover
1 pound ground beef
1 cup cooked rice
garlic powder to taste
1 egg
1 (12 fluid ounce) can tomato juice
1 tablespoon vinegar
1 tablespoon white sugar

Steps:

  • Place the head of cabbage in a large pot over high heat and add water to cover. Boil cabbage for 15 minutes, or until it is pliable and soft. Drain and allow to cool completely. Remove the hard outer vein from the leaves.
  • In a separate large bowl, combine the beef, rice, garlic powder and the egg, mixing well. Place a small amount, about the size of your palm, into the center of a cabbage leaf and fold leaf over, tucking in the sides of the leaf to keep meat mixture inside.
  • Pile up the filled leaves in a large pot, putting the larger leaves on the bottom. Add the tomato juice, vinegar and sugar and enough water to cover. Simmer over medium low heat for about 60 minutes. (Note: Keep an eye on them, making sure the bottom of leaves do not burn.)

1 large green cabbage
1 pound lean ground beef
½ pound ground pork
½ small yellow onion (grated)
4 large garlic cloves (grated)
1 teaspoon grated lemon peel (from 1 lemon)
1 large egg (beaten)
2 cups cooked rice
1 Tablespoon extra virgin olive oil
½ small yellow onion (grated)
3 large garlic cloves (grated)
28 ounces crushed tomatoes
½ cup water
1 teaspoon salt
¼ teaspoon black pepper
Chopped fresh dill (optional)

Steps:

  • Remove the stalk from the bottom of the cabbage head.
  • Place the cabbage in a large pot filled with 12 cups of water. Cover and place over high heat.
  • Bring to a boil and then reduce the heat to medium. Continue to cook until the cabbage leaves become bright green and pliable, about 3-5 minutes. The leaves should not be limp, they should hold their shape.
  • Remove cabbage from water and place on a cutting board until it's cool enough to handle.
  • In a large bowl combine ground beef, pork, onion, garlic, grated lemon peel, egg, and rice. Place in refrigerator until ready to use.
  • In a medium pot over medium heat add oil. Once simmering, stir in grated onion and cook, stirring frequently, for 2 minutes. Then, add garlic and cook until fragrant, about 30-60 seconds. Pour in crushed tomatoes, water, salt, and pepper and increase heat to high. Once bubbling, reduce heat to low and simmer tomatoes for 15 minutes.
  • Once the cabbage has cooled, remove the leaves from the cabbage head.
  • Using a paring knife, cut the thick stem or membrane from the back of each leaf. Be careful not to cut through the leaf.
  • Move oven racks to upper-middle and lower-middle positions. Preheat oven to 350 degrees F.
  • You will need a 9x13-inch baking dish and a smaller, 2-quart baking dish for this recipe. Spread ¾ cup of sauce in the bottom of a 9x13-inch dish and ½ cup sauce in the bottom of the 2-quart baking dish.
  • Place 2 tablespoons of filling on the bottom half of a cabbage leaf.
  • Fold up the bottom part of the cabbage leaf.
  • Then, fold in the sides.
  • Next, roll forward until the cabbage leaf completely covers the filling. Repeat with remaining cabbage leaves and filling.
  • Place the stuffed cabbage leaves into prepared pans in neat rows. Pour the remaining sauce evenly over the cabbage rolls.
  • Bake for 50-60 minutes, rotating pans halfway through baking.
  • Place pans on a wire rack and cool for 10 minutes. Sprinkle with chopped fresh dill (optional) and serve.

1 large head of cabbage
2 cups white rice, cooked
1 1/2 lbs raw ground sirloin or 1 1/2 lbs ground round
1 onion, diced
2 garlic cloves, minced
2 raw eggs
1 (15 ounce) can tomato sauce
oregano
kosher salt
4 (15 ounce) cans tomato sauce
tomatoes, diced
2 tablespoons brown sugar
tomato juice (optional)

Steps:

  • Core head of cabbage by cutting around the core and removing as much as possible. Boil large pot of water (fill pot only 1/4 or 1/2 full -- when boiling put cabbage into water and cover with top. Leave cabbage in water and every so often as leaves loosen up remove leaves and place in collander in sink to cool -- when all leaves are removed turn off water and throw away -- (if you have any little pieces of cabbage left at end of core, you can save them to place on top of leaves if you would like.
  • In a large bowl mix cooked rice, ground meat, onion, garlic, raw eggs 1/2 can tomato sauce and oregano and a little pinch of kosher salt. Mix well with your hands --.
  • Spray 9 X 13 inch pans with Pam. Take cabbage leaves and fill with 1/4 to 1/2 cup meat mixture (depending on how big hour leaves are). Place with seam side down in pans -- Turn oven on 350 degrees. Make up sauce (depending on how many rolls you get from your cabbage and how much sauce you want,you can use between 4 to 6 cans of diced or stewed tomatoes for your sauce), if you like cabbage rolls to have more sauce, you can add a little tomato juice to your sauce. Pour sauce over top of rolls. Sprinkle with kosher salt over top of rolls.
  • Bake uncovered to 2 1/2 hours or until browned on top, you may need to add a tomato juice to them once in a while so they do not dry out --.
  • Freezes well.

Cabbage head
1 lb Ground Chuck
1 lb Ground Italian Sausage
1/2 lb cooked and crumbled bacon
A med to large white onion chopped
An egg
1 cup cooked rice
1/2 cup Italian bread crumbs
1 Family size can Tomato Soup (I prefer Campbells)
3 oz tomato paste
pinch of sugar
1 tsp salt (adjust to taste)
1 tbs pepper (adjust to taste)
3 cups White Vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • Put cabbage head in a large stock pot, add water to cover and then add white vinegar to the water.
  • Place on stove on high heat and cover, bringing to a boil.
  • Gently boil cabbage until leaves of cabbage soften and become pliable.
  • Remove from stove and drain water from the pot. Set aside and allow cabbage head to cool.
  • Once cabbage is cooled, remove the leafs from the cabbage head. Take a paring knife and cut the lower portion of the "vein" from the leaf. This vein is very tough and needs to be removed. It will make it much easier to roll the meat mixture in the cabbage leaf. Continue to do this until you remove as many leaves from the cabbage as you can.
  • In a large mixing bowl combine ground chuck, sausage, crumbled bacon, chopped onion, egg, rice, bread crumbs and finally add the salt and pepper. Make certain to thoroughly combine the ingredients together. The "meat" mixture will be a similar consistency to meatloaf. It should be nice and moist. If it seems dry, add an additional egg.
  • Lay a cabbage leaf down on a flat surface thus allowing you to roll it easier. Take some of the meat mixture and form into a large meatball. You may make these as large or as small as you prefer therefore choose the size of your preference. Place the meatball in the center of the cabbage leaf. Wrap the cabbage leaf around the meat mixture (see video above).
  • Place the stuffed cabbage in a roaster with the wrapped edges down in the roaster. Repeat this process placing the Golumpki next to each other, until all of the meat mixture is used up.
  • Mix tomato soup, tomato paste and also a pinch of sugar.
  • Pour tomato soup mixture over the top of the stuffed cabbage and reserve a small amount to be used in the next step.
  • If you have cabbage leaves remaining, cover the entire top of the stuffed cabbage in the roaster.
  • Pour remaining tomato soup mixture on top of the cabbage that you lined the tops of the stuffed cabbage. This step will help steam the Golumpki that lies below and therefore will keep them nice and moist.
  • Put a lid on top of the roaster and bake for approximately 1 1/2 hours.

1 medium Vidalia onion, (chopped)
8 tablespoons butter
salt and pepper
1 (10-ounce) can condensed cream of chicken or cream of mushroom soup
1/3 cup mayonnaise
3 tablespoons melted butter
1 cup shredded sharp cheddar cheese
1 sleeve Ritz crackers (about 30), (coarsely crushed)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 2-quart casserole dish.
  • Coarsely chop the cabbage. Melt butter in a large nonstick pan. Add cabbage and onion and cook 8 to 10 minutes, stirring frequently, or until it is partially cooked down. Season to taste with salt and pepper.
  • Transfer cabbage mixture to prepared baking dish.
  • In a small bowl, stir together soup and mayonnaise. Spread mixture over cabbage.
  • In a bowl, stir together melted butter, cheese, and cracker crumbs. Sprinkle over casserole.
  • Bake for 30 minutes or until topping is browned.

1 1/4 lbs lean hamburger (90% lean)
3/4 cup uncooked white rice (not instant I recommend Uncle Ben's)
1 egg
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
4 tablespoons sugar
1 small sweet onion
salt & pepper

Steps:

  • Chop cabbage into pieces, par-boil until almost tender.
  • Remove, rinse with cold water.
  • Drain well.
  • Mix all of ingredients EXCEPT tomato sauce.
  • Grease casserole dish.
  • Place 1/2 can of tomato sauce on bottom of dish.
  • Spread half of cooked cabbage over sauce, then layer all of meat mixture over cabbage, cover meat with the rest of cabbage, pour rest of tomato sauce over cabbage.
  • Bake 325°F in covered dish for 1 hour 15 minutes.
  • Let stand for 15 minutes before serving.
  • This is the basic recipe--you can add more of whatever you like.
  • My mother says she used ground turkey instead of hamburger and she liked it just fine.

1 onion (chopped)
2 cloves garlic (minced)
1 cup cooked brown rice
1 tablespoon mustard
1 egg
1/2 teaspoon salt
1/8 teaspoon pepper
1 head green cabbage
1 tablespoon olive oil
2 cloves garlic (minced)
1 (16-ounce) can tomato puree
1 (14-ounce) can diced tomatoes (undrained)
2 bay leaves
1/2 teaspoon salt

Steps:

  • Gather the ingredients.
  • In a large saucepan, combine the ground beef with the onion and 2 cloves of the garlic; cook and stir to break up the meat until the beef is browned and the onion and garlic are tender; drain well and set aside.
  • In a large bowl, mix together the beef mixture, the cooked rice, mustard, egg, and salt and pepper until combined.
  • Cut out the core end of the cabbage and remove and discard some of the exterior leaves. Then carefully remove 8 whole perfect leaves . Soak the leaves in hot water in a large bowl until they are limp and pliable.
  • Chop half of the remaining cabbage and add this to the beef and rice mixture. Roll up about 1/4 cup of the meat mixture in each cabbage leaf. Reserve any remaining meat mixture. At this point, preheat the oven to 350 F.
  • Then, in the same large skillet, sauté 2 cloves of garlic in the olive oil until tender, about 2 to 3 minutes.
  • Add the tomato puree, diced tomatoes, bay leaves, salt, and pepper. Simmer this sauce for 15 minutes, stirring frequently. Then remove and discard the bay leaves.
  • Place the stuffed cabbage rolls in a Dutch oven or large casserole. Top the rolls with any remaining meat mixture. Pour the tomato sauce mixture over all.
  • Cover the casserole and bake for 80 to 90 minutes or until the cabbage rolls are tender.
  • Serve the stuffed cabbage with the sauce. Enjoy.

  • Cook rice per package instructions and set aside. Preheat oven to 350 degrees Fahrenheit at this point too.
  • In a large bowl, combine ground beef with Worcestershire sauce, egg, cooked rice, onion, parsley, garlic, salt, black pepper, dill, onion powder, red chili flakes (if using) and 1/2 cup of tomato sauce. Mix until well combined.
  • To a large pot of boiling water, add head of cabbage and boil for 8 to 10 minutes (carefully turn over partway through). Carefully remove. Don't discard water because you will need to re-boil the cabbage as you start to peel off the leaves and you will need some of the water for your sauce.Note: Don't fill the pot all the way up because the cabbage will displace some of the water. Before boiling water, test how much the water will displace by placing the head of cabbage in the pot.
  • Once cabbage is cool enough to handle, carefully remove leaves and cut out core from each leaf. Once you start taking leaves off, you'll likely need to add the cabbage back to the boiling water (to soften more leaves). Just boil for another bit, let cool enough to handle and continue removing leaves.
