BAKED OATMEAL CASSEROLE

This recipe would be great for a brunch, or for house guest. If available you can use fresh berries. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.

2 cups rolled oats
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnuts or 1 cup pecan pieces
1 cup mixed berry (frozen)
1/2 cup milk chocolate chips
2 cups milk
1 large egg
3 tablespoons butter, melted
1 tablespoon vanilla extract
1 banana, peeled cut into 1/2-inch slices

Steps:

  • Preheat oven to 375.
  • Spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
  • In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts/pecans, half the berries and half the chocolate chips. (Save the other half of berries, walnuts/pecans and chocolate chips for the top of the oatmeal).
  • In another bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish.
  • Arrange the remaining berries, walnuts/pecans and chocolate on top.
  • Add the banana slices to the top then pour the milk mixture over everything.
  • Gently shake the baking dish to help the milk mixture go throughout the oats.
  • Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.

1/2 cup sliced almonds ((flaked almonds))
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1/2 cup almond butter
1/4 cup maple syrup
2 cups milk
1 teaspoon quality vanilla extract
1/4 cup dark chocolate chips

Steps:

  • Preheat the oven to 375°F / 190° C. Grease an 8x8 pan with oil.
  • In a medium bowl, mix together the oats, almonds, baking powder, and salt. Set aside.
  • In a large bowl, beat the egg. Whisk in the almond butter and maple syrup. Stir in the milk and vanilla extract. Stir in the oat mixture.
  • Pour the mixture into the prepared pan. Sprinkle the dark chocolate chips on top. Stir it very slightly, just enough so some of the dark chocolate chips mix into the batter.
  • Place in the oven and bake for 45 minutes, until the oatmeal is set in the middle. Allow to cool for about 10 minutes, then dust with powdered sugar (if desired) and serve. Top with additional maple syrup if desired.

1 3/4 cups vanilla-flavored rice milk or 1 3/4 cups milk
1 tablespoon soy margarine or 1 tablespoon butter
1 cup old fashioned oats (NOT quick cooking)
1 apples (I used a combination of both) or 1 pear, peeled, seeded, cored and chopped small (I used a combination of both)
1/3 cup dried cranberries or 1/3 cup raisins
1/4 cup walnut pieces, toasted
2 tablespoons brown sugar or 2 tablespoons unbleached cane sugar, plus
1 tablespoon brown sugar or 1 tablespoon unbleached cane sugar
1/2 teaspoon real vanilla extract (omit if using vanilla-flavored soy milk or rice milk)
1/4 teaspoon ground cinnamon (my addition)
1/4 teaspoon salt

Steps:

  • Lightly toast walnuts and set aside.
  • Preheat oven to 350 degrees.
  • Coat a 1 1/2 quart casserole dish with butter or margarine substitute.
  • In a medium saucepan, bring the soy milk (or substitute) and butter to the boil. Slowly stir in the oats with a fork.
  • Stir in the apple and/or pears, dried fruit of choice, toasted walnuts, 2 tablespoons brown sugar, vanilla extract if using, cinnamon, and the salt.
  • Cook mixture, stirring constantly for 1 minute. Be careful not to burn! Pour the oatmeal mixture into the prepared casserole dish.
  • Bake, uncovered for 15 minutes. The last 5 minutes of cooking, sprinkle the remaining 1 tablespoon of brown sugar on top and bake until the top is bubbly.
  • Serve warm with additional warmed soymilk or milk served on the side if you wish.
  • For vegan use soy milk, rice milk and soy margarine options.

1 cup soymilk or 1 cup rice milk
1 cup water
2 tablespoons maple syrup or 2 tablespoons agave syrup
1/4 cup chopped walnuts (optional)
1/4 cup currants or 1/4 cup chopped dried apricot
8 ounces crushed whole grain cereal, see note
3 ripe bananas
1 cup crushed pineapple
1 teaspoon cinnamon
1/2 cup orange juice or 1/2 cup apple juice
1/2 cup blueberries

Steps:

  • Preheat oven to 350°F.
  • Combine all the oatmeal ingredients then simmer on low until done, about 6 minutes then pour into a casserole dish and top with cereal. Cover and refrigerate until morning.
  • Bake at 350F until the cereal is just starting to turn brown, approx 15 minutes.
  • Make the sauce. Combine all sauce ingredients in a blender until smooth. Serve heated or unheated over the hot oatmeal casserole.
  • Note: 8 ounces whole grain cereal in the original recipe read: 1/2 box of your favorite oil-free, healthy, whole-grain cereal, crushed.

1 1/3 cups water
1/4 teaspoon salt (optional)
2/3 cup old-fashioned oatmeal
1/2 banana, peeled and sliced
2 tablespoons raisins or 2 tablespoons dried cranberries
1 tablespoon brown sugar
milk (soymilk, half and half, rice milk)

Steps:

  • In small pot bring the water and salt to boil.
  • Slowly stir in the *oatmeal, using a fork to break up any lumps. Once boiling has subsided, cover pan and cook on medium-low for 10-12 minutes.
  • Remove pan from heating element and let sit, covered, for an additional 2-3 minutes.
  • Transfer oatmeal to serving bowl and top with the sliced bananas, raisins and brown sugar. Serve with milk or milk substitute on the side if you wish.
  • *NOTE: for creamier consistency, add the oatmeal {{before}} bringing water to the boil.
  • Yield: 1 large serving or 2 small servings.
