POMMES MATIERE (OLD FASHIONED HASH BROWNS)

Pommes Matiere (Old Fashioned Hash Browns) image

I saw something like this on an episode of "Jacques (Pepin) and Julia (Child) Cooking at Home." You can either bake or boil your potatoes for this recipe.

Provided by threeovens

Categories     Potato

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

2 lbs potatoes, cooked and peeled
1 pinch fresh nutmeg
kosher salt & freshly ground black pepper
1/4 cup sour cream or 1/4 cup creme fraiche
1/4 cup gruyere cheese or 1/4 cup swiss cheese, grated
fresh chives, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Coarsely chop/smash potatoes so that they are in small chunks (these are hash browns, after all); season with nutmeg, salt and pepper.
  • In an omelet pan or cast iron skillet, heat oil over medium heat.
  • Press potatoes into pan in an even layer; cook until underside is browned (potatoes will be fragrant and edges will start to look golden), about 4 to 5 minutes.
  • Place potatoes in oven and cook until the top starts to brown, about 10 minutes (you want it to be stiff enough to flip without breaking).
  • Carefully flip onto serving dish (or back into pan).
  • Spread sour cream over the top, then sprinkle with cheese.
  • Set to broil and return to oven to brown the top, 2 minutes.
  • Garnish with chives (Jacques stuck them in a bunch, on end, in the center of the dish); serve in wedges.

CORNED BEEF HASH

Corned beef hash image

A traditional storecupboard supper of fried potatoes with thrifty corned beef. Serve with baked beans for a simple lunch or supper.

Provided by Katy Greenwood

Categories     Main course

Time 35m

Number Of Ingredients 6

500g potato, peeled and chopped
2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

OLD-FASHIONED BEEF HASH - DEE DEE'S

Old-Fashioned Beef Hash - Dee Dee's image

I just adopted this recipe. I have made some changes to make it mine. I love Old Fashioned Beef Hash and this recipe brought back some memories. I think the best hash is made using a meat grinder and grinding equal amounts of leftover roast or steak with equal amounts of raw potatoes and yellow onions. I have my mothers...

Provided by Diane Atherton

Categories     Beef

Number Of Ingredients 7

olive oil
onion, quartered
potatoes, peeled and quartered
leftover beef, cooked and diced
salt and pepper to taste
ketchup, optional
corn kernel, optional

Steps:

  • 1. Take approximately equal proportions of beef, potatoes, and onions and put them through a meat grinder using a medium grinder attachment so that they are well mixed and ground. NOTE: If you don't have a meat grinder, you can hand chop the ingredients.
  • 2. Heat a large frying pan, preferably a cast iron pan, on medium high to high heat. Add the hash to the frying pan so that a half an inch of hash covers the bottom of the pan. If you have more hash to cook, do so in separate batches. Add several tablespoons of Olive Oil. Brown the hash, stirring only infrequently at first to make sure that the hash has an opportunity to brown well. As you cook the hash, add pinches of salt and fresh ground pepper. Do this a couple of times with each batch of hash. Cook for at least 10 minutes and until the hash is well browned.
  • 3. Served topped with ketsup, if desired. Or, serve over homemade biscuits as Donna mentioned. Or toss in some corn as Shelley suggested with her beautiful photo....Yum!
