OKRA PILAF
This is my very favorite rice recipe. I've served it many times and it's always received rave reviews. I hope you will enjoy it as much as I do.

Steps:
- In a large skillet, cook the bacon until crisp; remove with a slotted spoon to paper towel to drain. Saute onion and green pepper in drippings for 6-8 minutes or until tender. , Stir in the okra, tomatoes, salt if desired and pepper; cook over medium heat for 5 minutes. Add rice; cook for 10-15 minutes or until okra is tender and liquid is absorbed. Crumble bacon; stir into rice mixture.

Steps:
- Fry bacon in a large non-stick skillet until it is crisp; transfer bacon to a paper-towel lined plate to drain; discard all but 2 tablespoons bacon drippings from skillet.
- Cook okra, onion, and bell pepper in hot bacon drippings over medium-high heat for 5 minutes or until tender, stir frequently.
- Add in rice and remaining ingredients; bring to a boil.
- Cover, lower heat, and simmer 20 minutes or until water is absorbed and rice is tender.
- Take skillet off burner; add in bacon, stir to combine.
- Let sit 5 minutes.
MAXANNE'S JAPANESE OKRA

- Wash then boil the okra in a saucepan of boiling water until almost tender but still firm. Drain and put in refrigerator to cool. When ready to eat, slice okra into 1/4-inch rings, put in small mixing bowl and then add bonita flakes. Stir and add shoyu to moisten and to taste and add a touch of toogarashi, depending on how spicy you like it. Best eaten with Japanese rice.
OKRA PILAU
Pilaus are a staple of the low country SC kitchen. The only problem with preparing them is that is essential that you have a rice steamer. A rice steamer works like a double boiler except that it allows steam to enter the top part of the device. If you Google "Charleston Rice Steamer" several sites will appear where you can purchase one of these. Target has one for $29.95 by mail order. This recipe is from St. Michael's Church in Charleston, SC.

Steps:
- Fry the bacon until it is half cooked. Add the okra and cook for a further 5 minutes. Stir in the rice, water, salt, and pepper. Pour mixture into the top part of a rice steamer. In the bottom part of the rice steamer place several cups of hot water. Insert the top part and cook, covered, for 1 to 1 1/2 hours or until the rice just starts to dry.
